It’s peanut season, late summer early fall and really hot out side.
In this video I restart a family tradition of boiling peanuts this time a year. I stopped five years ago after a family tragedy, but not it’s time to do it again.
The recipe:
Ingredients:
•2 26oz boxes of salt
• 1 32 lb. sack of fresh green peanuts
• plenty of water.
Technique:
1. Wash peanuts really well.
2. Add salt to water
3. add the basket of peanuts
4. bring to raging boil
5. Reduce to steady boil and boil for 2 hours. Stir then every half hour.
6. Turn off fire, allow peanuts to soak in hot water for 2 more hours. Stir every half hour.
7. Remove basket from water and enjoy.
Tip: peanuts can be frozen in freezer bags. Or canned in the brine in mason jars.
