Gumbo and bingo. Or was it bumgo and ginbo. There was a haunted house too. I was was asked to make the gumbo about 12½-14 gallons worth of chicken and sausage gumbo. I snuck a bit of tasso for lagniappe too. We sold out! Only ten bucks would have gotten you a big bowl of gumbo served rice, potato salad, a desert and a soda (col’ drink). October 28, 2022.

25 lbs. of chicken meat
1 lb of homemade tasso
5 pints of roux
6 gallons of homemade chicken stock
4 gallons of water.
Plenty of various seasonings
