In continuation to my previous post, below are few more tips on cooking pulses so they don't cause bloating! If you follow these steps, it will increase the digestibility of pulses.
STEP 1
soak them for 4-12 hours (depends on the size) and add salt (I prefer sea salt or rock salt), grated ginger and hing/asafoetida in the soaking water.
STEP 2
cook the pulses in the same soaking water, remove the scum as required
STEP 3
optional - add any vegetables of your choice
STEP 4
Tempering - any spices of your choice but make sure to include:
- cumin or mustard seeds (or both)
- turmeric powder (can also add in the soaking water, but I prefer here for the taste)
STEP 5
add this to the pulses, cook for few more minutes and serve!
