What is black cocoa? How is it different, and how do you use it? #sugarologie

I have baked with black cocoa for so many different recipes. And for every one of them, I have specifically formulated the recipe to use black cocoa, which requires special considerations regarding its pH and flavor profile. An easy one to get started with is my Black Cocoa Brownies, which taste like Fudgy Oreos but in brownie form.
