INGREDIENTS:
2 tbsp cardamom
1 tbsp all spice
2 tsp cloves
3 star anise
3 cinnamon sticks
2 tsp black peppercorns
3/4 cup cane sugar
20g ginger (grated)
1/2 tsp vanilla extract
1L water
3/4 cup assam tea leaves
DIRECTIONS:
1. Lightly crush the cardamom, all spice, cloves, star anise, cinnamon sticks, and black peppercorns. Toast them in a medium saucepan for 4-5mins
2. Add the cane sugar, grated ginger, vanilla extract, and water. Cover and bring to a boil (keep an eye on it so it doesn't boil over)
3. Simmer on medium low for 25mins uncovered. Then, turn the heat off, add the assam tea leaves, and steep for 5-6mins
4. Strain the chai concentrate through a sieve or milk bag. Refrigerate in a glass bottle and enjoy for up to 2 weeks
