Today I’m taking you behind the counter in Japan at Sushi Yoshi (寿し芳), a family run sushi restaurant in the snowy town of Myoko, Niigata. Founded more than 50 years ago, this local Japanese restaurant has been serving the community for generations. Now, the founder’s granddaughter has returned home after training at the renowned Sushi Arai in Tokyo’s Ginza district, beginning the next chapter in her family’s story. This Japan food documentary follows Takahito san, the second generation master chef, and his daughter Shui as they work side by side preserving their family legacy. Before taking over the business, Takahito san spent ten years training at one of Nagano’s largest sushi restaurants, eventually earning a position at the counter. When his father’s health declined, he returned home to continue the family business. Niigata is famous throughout Japan for its food culture. Surrounded by mountains and located along the Sea of Japan, the region has access to exceptional seafood and produce. The rough winter waters produce rich, fatty fish that have helped shape the area's unique Japanese cuisine and sushi traditions. As Shui continues mastering the craft of sushi, she carries the responsibility of building upon the foundation created by the generations before her.
