yoooo the next time I shoot a cooking video, I'll wear a lav to help w sound. Bear w me while a learn! In any case, I've had so many people asking me to record this bean video so here it is!! Hope you give this a go and if you do...don't forget to message me; send me pics! I want to see your preferences :-)
recipe:
Soak beans according to package instructions. I usually like to soak them overnight and make this recipe in the morning.
[six hours later]
Wilt alliums; garlic, onion, and/or (or not) shallots
Add beans, water, 2 bay leaves, red pepper flakes, bouillon base (stock if you have it), parmesan rind*, and enough olive oil to cover top (I used about a cup)
Soft simmer for 1 hour and 45 min.
[(almost) two hours later]
Add chopped carrot & celery and cook for another 15 min
Turn off heat, add pepper to taste & LOTS of lemon. As much as you can handle. Salt if needed.
Serve with (all optional): parsley, *parmesan, *créme fraîche (as you eat, it’ll infuse into the broth), charred lemon, preserved lemons, *jammy egg, *sausage, wilted greens (for beans and greens!), thick olive oil bread. TOP WITH MORE OLIVE OIL!
*leave out if you're vegan, obvi!!
