This BBQ Chicken Pizza with a healthy coleslaw will change your life, especially when you're making it with the leftover chicken from your whole roast chicken the night before.
Welcome back to part II of my βHow to Roast a Chickenβ series. In part I I show how to roast a whole chicken like a professional chef at home, now on night two I pick off the leftover meat from the bones and use it to make a delicious bbq chicken pizza night.
I use store bought crusts (I like thin crust but you do you) and bbq sauce, sometimes mixed with a tomato pizza base. Then add cheese, the chicken, cooked Bacon, red onion, red bell pepper, mushrooms, oregano and salt/ pepper.
Bake in a hot over 350F / 175C for 15-20 minutes, check at 10 and swap top tray pizzas with lower trays to ensure proper crispness. We usually make about 4 or 5 pizzas at a time so we have enough for dinner and leftover lunch on day 3.
Then make your slaw. I love this slaw recipe and make it all the time. It's so easy and delicious. Chop cabbage (I like to mix red and white) shred a carrot and an apple and add them all into a big mixing bowl. Then add pumpkin seeds and walnuts (or whatever seeds and nuts you have around). Then add olive oil and apple cider vinegar and mayo (crucial) don't be shy with it. Mix it all up and season with salt and pepper.
We make a homemade ranch with unsweetened probiotic yogurt, with dill, oregano, juice of a lemon, and pickle juice. It's so bomb.
Garnish the pizzas with chopped spring onion and serve immediately.
Follow along for part III where we turn the chicken carcass into nourishing and delicious Bone broth. 1 whole chicken turned into three incredible meals.
