We identify and demonstrate the specific strategies for baking with fresh milled whole grain flour to produce a lovely high rise loaf of bread. The strategies can be used for most any recipe including when converting a white flour recipe to a whole grain recipe.

Recipe:
432g (3 cups) fresh milled whole grain flour
1 1/4 cup water
2 1/4 to 2 1/2 tsp instant yeast
1 tsp salt
2 tbsp sugar
2 tbsp fat

1. Mix flour and water to form a ragged dough. Add additional water if needed to pick up all the flour.
2. Autolyse for 30-60 minutes
3. Mix in remaining ingredients and adjust water or flour again if necessary.
4. Knead 6 minutes or use 3 or 4 stretch and folds separated by a 15 minute wait between
5. Bulk fermentation
6. Shape
7. Proof
8. Bake at 350°F until golden brown and center reaches 190°F
