We demonstrate the USDA method for making delicious jerky. They offer 2 ways for ensuring safety of the meat and we try both ways to determine which one we prefer. There is a definite winner!

Recipe for Pam's Jerky Marinade
3 pound boneless beef roast sliced thin
1 cup Worcestershire sauce
1 cup soy sauce
4 tsp black pepper
2 tsp liquid smoke
1 tsp dried onion chips
Soak meat strips in marinade overnight. Check USDA recipe link above to determine which method you will use for bringing meat to 160°F. Proceed as instructed in USDA instructions.
