Recipe: (makes enough for 8 portions) Can be cut in half or doubled.

2 pounds of rotini pasta
2 pounds of boneless skinless chicken breast
5 oz unsalted Butter
1/2 cup of sifted all purpose Flour
2 cups of Milk
3 cups of Ck Stock
1 2/3 cups of heavy Cream
1 2/3 cups of Parmesan cheese
1.5 pounds of bacon
1 1/4 pounds of Mozzarella Cheese
1 1/4 pounds of cheddar cheese
Garnish w/ dried parsley

Brine Recipe:
1 quarts of water
1/4 cup of salt
2 Tablespoons of sugar
1 bay leaves
1 teaspoon black peppercorn

Modified Ranch seasoning for chicken: (This will make extra seasoning to use on other stuff)
1.5 Tablespoon Dried Parsley
2 teaspoons Dried Dill Weed
1 teaspoon Dried Chives
1 Tablespoon Garlic Powder
1 Tablespoon Onion Powder
1 Tablespoon dried onion flakes
1 teaspoon kosher Salt
1/2 teaspoon Ground Black Pepper

Instructions:
Brine the chicken for 30 minutes. Make sure Bring is at room temp or below. Remove chicken from brine and pat dry. Coat with olive oil and lightly season with "Ranch" seasoning mix on both sides. Bake at 375-400 f till internal temp is 165F. Remove and dice into small cubes.

Prepare the bacon by dicing then frying it on a medium heat till crispy. Remove from heat and let drain.

Prepare the sauce by melting the butter adding the flour and cooking the flour taste out (5-10 minutes). Add the liquids and mix so no clumps form. Once the sauce thickens a bit add the parmesan cheese. Cook till the consistency is like a gravy.

Prepare the pasta. Cook the pasta in boiling salted water 1 minute less than al dente. Rinse with cold water to cool and set to the side.

Assemble:

Combine all the sauce with the pasta. Portion in your freezer trays. Add diced chicken to each tray. Cover with a 50/50 blend of Mozzarella and cheddar cheese. Add crispy bacon to the top and garnish with dried parsley. Cover, Label and freeze..

To reheat just thaw, cover with foil, and bake in a 375F oven for 25-35 minutes till it's warmed throughout.
