Baby backs refined, tweaked, and smoked slower than before, over maple, at a lowered temp of 250°, and heavily coated with Larry Wolfe's "Original Wolfe Rub." They may be the best ribs I've ever had. Falling-off-the-bone tender, juicy, and Larry's rub caramelizes in the smoke giving them just the perfect crust / "bark," and incredible flavor. I played with a few sauces, and ultimately decided they didn't need any sauce at all. They were better eaten as is.
Served with deviled eggs and hush puppies, and a salad.
The hush puppy recipe is one I found online, and I "think" it was on a Cajun cooking site, but I was remiss and didn't jot down the source. I made HALF of the full recipe below.
Ingredients:
2 cups corn meal
2 TBS flour
2 tsp baking powder
1 TBS sugar (I use Turbinado sugar)
2 tsp salt
Pepper to taste
Slap Ya Mama to taste
1/4 cup onion, finely chopped
Boiling water as needed, in the range of 1 1/2 to 2 cups
1 egg, beaten
1/4 cup milk
Oil at 375°F
Mix all dry ingredients together except baking powder.
Add boiling water gradually to make a moderately thick "mush."
Let cool a little and add all remaining ingredients. Mix thoroughly.
Drop in "balls" into hot oil and fry until golden.
Season as desired.
