For the next instalment of our At Home With video series – where our friends, partners and designers share activities, tips and tricks that you can try at home – we spend time with Danny Bowien, the chef behind New York’s Mission Chinese Food. Watch as he shows how you can easily prepare leafy green vegetables in less than three minutes with a handful of ingredients, using his favourite recipe. Ingredients
1 garlic clove
A chilli of your choice – see recipe
Few pinches of salt
3tbsp olive oil
Large bunch of Chinese broccoli, or a similar vegetable of your choice
Method
Chop the Chinese broccoli lengthways into 1-inch pieces. Rinse the broccoli under cold water, and whatever water sticks to it, leave it there – that’s what is going to steam the greens. After this, you won’t need to add any more water or anything else, it’s super simple.
Add three tablespoons of olive oil to a hot pan and add a clove of garlic – we want the garlic to toast. Add a chilli. I use oil-cured Calabrian chillis, they’re my favourite, but you can use dried chilli, fresh chilli, whatever you want.
When the pan is really hot, turn the heat off and add your greens. Then turn the heat back on and add a few pinches of salt. You really want it to be super hot. Stir the greens. As soon as the water is cooked out of the vegetables, it’s completely done. You don’t need to add any liquid, just leave the heat on really high the whole time. It should take about a minute – you want the greens to be really beautiful and shiny.
