BBQ steaks with potato mash, salad & mushroom sauce
Serves 4 Prep 15 mins (+ 5 mins resting time) Cooking 35 mins
6 washed white potatoes, peeled, chopped
⅓ cup (80ml) milk
1 cos lettuce, chopped
250g cherry tomatoes, quartered
1 Lebanese cucumber, chopped
½ red onion, thinly sliced
1 avocado, stoned, peeled, cut into wedges
2 x 300g pkts Coles No Added Hormones Australian Beef Eye Fillet Steaks
1 tbs Extra virgin olive oil, to serve
Balsamic vinegar, to serve
Mushroom sauce:
20g butter
200g pkt cup mushrooms, sliced
3 garlic cloves, finely chopped
½ cup (125ml) thickened cream
1 tbs Worcestershire sauce
½ tsp dried tarragon
1. Place potato in a saucepan and cover with cold water. Bring to the boil over high heat, then reduce heat to medium. Cook for 15 mins or until potato is very tender. Drain. Return to the pan and use a potato masher, fork or potato ricer to mash potato until smooth. Stir in the milk.
2. Meanwhile, combine the lettuce, tomato, cucumber, onion and avocado in a large serving bowl.
3. Melt the butter in a medium frying pan over medium heat. Add the mushroom and cook, stirring, for 2-3 mins or until golden. Add garlic and cook for 30 secs or until aromatic. Add the cream, Worcestershire sauce and tarragon and cook, stirring, for 5 mins or until sauce thickens
slightly. Season.
4. Heat a barbecue grill or chargrill on medium-high. Drizzle beef with the oil and turn to coat. Season. Cook on the grill for 3 mins each side for medium-rare or until cooked to your liking. Transfer steaks to a plate. Loosely cover with foil and set aside for 5 mins to rest.
5. Divide the steaks, mash and salad among serving plates. Drizzle the steaks with mushroom sauce. Top salad with a little oil and balsamic vinegar to serve.
