Hi Guys, Chef JB here! Today I’m sharing a recipe for Almonds Lace Tuiles that look straight out of a fancy French pâtisserie! Beautifully thin and crispy and flavoured with almond and orange, these easy but elegant biscuits look just like edible lace. Enjoy them as they are or on a dessert plate, filled with whipped cream and fresh berries. Make them to impress your guests – or keep them all for yourself (they’re addictive!). Bon appétit! – JB.

Almond Lace Tuiles
Makes 14 to 16
2/3 cup caster sugar / superfine sugar (130g)
2 1/2 tbsp plain flour / all-purpose flour (40g)
50g / 3 1/2 tbsp unsalted butter, melted
3 tbsp orange juice
2/3 cup almond flakes, untoasted (60g)
1. Mix sugar and flour, then mix in butter and orange juice. Fold in almonds, refrigerate 2 hours to firm up.
2. Scoop out tablespoons of batter and make 4 mounds on a baking paper lined tray (do 2 trays). Bake 5 min at 170°C / 340°F (150°C fan), use a fork to press/spread melted batter into 10 cm / 4" circles (roughly). Bake 13 – 15 min until deep caramel brown (bottom tray may need extra 1 – 2 min).
3. Cool on tray 1 min then use offset spatula to lift onto rolling pins (or glasses, bottle etc), will harden and crisp as they cool (if they harden too much, pop back into oven for 1 – 2 min to soften again). Repeat with remaining batter.
