This year’s turkey is subtle, flavorful, and plays nice with everything else at your Thanksgiving spread. Per usual, it’s roasted on a sheet pan alongside some fresh fennel and gorgeous leeks, both of which get nicely caramelized as the turkey roasts. And don’t let the word fennel scare you — the turkey doesn’t scream it so much as it whispers it (but if you love fennel, go forth and increase the amount.) There’s also garlic, sage and lots of black pepper. You can also use the same brine on two chickens instead of turkey if that’s the kind of Thanksgiving you’re having. As is the ethos of this year’s menu, both the turkey and the gravy can be prepped well in advance to make the day-of less hectic (a first for me). The turkey can be seasoned up to two days ahead, stored uncovered and refrigerated. The gravy can be made, sans turkey drippings, three days ahead, stored sealed and refrigerated. It’s a whole new world of make-ahead possibilities.
