If Thanksgiving just isn’t Thanksgiving for you without something cheesy on the table (I tried to make macaroni and cheese work, and I didn’t love it in the context of the meal – sorry!), I offer up this Peppered Squash Gratin. It’s the perfect make-ahead dish, especially if you’re tasked with bringing a side to someone’s house. It’s tender, sweet, savory, garlicky, creamy — hitting every essential Thanksgiving note. It’s also one of my favorite dishes on the table this year, surprising even myself.
