This corn bread is always highly requested amongst all of my friends! Anyone who's ever had this recipe, always asks for the recipe. It's so moist and not overly sweet, at all. :)
INGREDIENTS:
1 cup of Alber's yellow cornmeal
1 cup of all purpose flour
1/4 cup of granulated sugar
1 Tbsp of baking powder
1 tsp of salt
1 cup of milk
1/3 cup of vegetable oil
1 large egg, lightly beaten
honey
INSTRUCTIONS:
1. Preheat oven to 400 degrees F.
2. Grease a 9x9 inch baking pan (may use an 8x8)
3. Combine cornmeal, flour, sugar, baking powder, and salt into a large mixing bowl.
4. Pour your milk into your dry ingredients.
5. Combine your oil and lightly beaten egg into a small mixing bowl, and then pour it into your large mixing bowl.
6. Using a hand mixer, mix until just blended and pour into prepared pan. Do not over mix.
7. Bake for about 20-25 minutes or until toothpick inserted into the middle comes out clean. DO NOT OVER COOK.
8. Drizzle some honey all over the hot corn bread, allow it to soak for about 15 minutes, cut and enjoy warm! :)
