The Highroller Tiki Lounge has an interesting predicament with not being able to use actual rum in their cocktails. In this episode we explore using Soju 'rum' in two drinks designed specially for the NYE party at the High Roller.

To make the Breezeway Honey:
--------------------------------------
3 oz soju rum
1 oz lemon
3/4 oz honey syrup
1/4 oz passion fruit syrup
Dash Polynesian bitters

--------------------------------------
To make the unnamed drink:
3 oz soju rum
3/4 oz oj
1/2 oz grapefruit
3/4 oz lime
1 oz falernum
2 dashes bitters
3/4 oz dessert wine

Add pebble ice to both and shake vigorously. Pour the Breezeway Honey into a makati 'double bucket' and pour the 'unnamed cocktail' into a zombie-style cocktail glass or tiki mug.
