Recipes!
Cottage Cheese:
Heat 3 gallons of milk (whole or skim) to 72 degrees. Stir in 1/8 tsp cottage cheese culture and mix thoroughly. Cover with a lid and let sit at room temp for 16-24 hours. With a long knife, cut the curds into 1/4 inch cubes. Follow the lines and cut again, holding the knife at a 45 degree angle.
Heat slowly to 100 degree. Let rest for 10 mins, then increase heat to 112 degrees. Turn off heat and let rest for 30 mins. Pour the curds through a fine colander (save the whey if desired), and let curds drain for 30-45 mins.
Refrigerate.
Granola:
12 cups oats
2 cups nuts (any variety will work)
1/2 cup butter, softened
1 cup coconut oil, melted
1 cup maple syrup
1 cup honey
1 tsp salt
2 tsp cinnamon
2 tsp vanilla bean paste
Mix all ingredients. Pour into a parchment lined baking sheet and bake at 300 degrees for 45 mins (do not stir). Let cool, then break into chunks and store in an airtight container.
