Today we make the Dubonnet Frappé, a modern take on a frozen rum drink that goes back to at least the 1940s. The original was served at Café Plaza in Maracaibo, Venezuela, and was recorded by Charles H. Baker Jr. in The South American Gentleman’s Companion as the Frozen White Rum-Dubonnet, or Ron Habañero Dubonnet Helado. That drink used white rum, Dubonnet, citrus, grenadine, and maraschino. Julia McKinley created an updated version while at Lost Lake in Chicago, swapping the maraschino for banana liqueur and the Cuban rum for Jamaican overproof. Today we’re making McKinley’s version, and comparing it to the original to see what nearly 80 years did to this obscure frozen rum drink.

*Dubonnet Frappe*
¼ oz banana liqueur (7.5 ml)
½ oz grenadine (15 ml)
¾ oz lime juice (22.5 ml)
¾ oz of a Jamaican overproof rum (22.5 ml)
1 ½ oz of Dubonnet (45 ml)
And 1 tsp of sugar
1 ½ cups of crushed or nugget ice
¼ tsp of xanthan gum (optional)
Garnish with orange zest
