Doing my usual weekly shop, that I'd normally go to Aldi for, from Waitrose. We then compare product by product with prices how much prices are from Aldi and how much prices of groceries are from Waitrose! Mushroom Spinach Mascarpone Pasta
1 Medium punnet of button/chestnut mushrooms, stalks removed and sliced (keep stalks for stock!)
1 Pot of Mascarpone cheese
Tagliatelle/Fuesli enough for 4 people
3-4 large handfuls of washed baby spinach
1 medium white onion
1 TBSP Smoked Paprika
3 Garlic cloves, crushed

Black Bean Cheesy Burritos
2 Tins of Black Beans (Drained and rinsed)
2 Medium White onions
2 Peppers, washed and sliced (seeds removed)
Tomato Purée
1 TSP Cumin Powder
1 TBSP Smoked Paprika
1 TSP Chipotle chilli flakes (Or chilli in general)
Mature Cheddar, grated
1 TSP Marmite (Or beef stock)
Large Wraps
Hot Water (to consistency desired)
Olive oil, Salt and Pepper
Sour Cream and Chives, Guac to Serve

Cheese and Broccoli Bake
1 Broccoli Stalk and a Large Handful of broccoli florets
1 Large handful of grated Mature Cheddar
Small Handful of other cheeses (I used Red leister and Parm)
Pasta (to serve 4-6)
Palm sized knob of salted butter
1-2 TBSP Plain Flour
Skimmed milk
Salt and Pepper
Smoked paprika (optional)

Easy Chicken Fajitas
Chicken thighs, sliced
2 Peppers, washed and sliced
2 Handfuls of Mushrooms, washed and sliced
1 Large White onion, sliced
Smoked Paprika, Oregano, Cumin Powder, Chilli flakes (a little chicken seasoning if you have it, from Aldi!)
Olive oil, salt and pepper
Serve with Guac, Sour Cream and Grated Cheese

Sticky Orange Chicken and Rice
Chicken Thighs
2 Oranges, juiced
Sesame seed oil (if you have it, otherwise use olive oil)
1 TBSP Honey
4 Garlic cloves (3 are for the dressing)
Smoked Paprika
1 TBSP Apple Cider Vinegar
2 Tbsp Dark Soy Sauce
1 - 2 Peppers, washed and sliced
Salt and Pepper

Elo! The Eating only leftovers food series of 2023 has begun! I am taking stock of what I have stored in my freezer today (SO MUCH FOOD OMG!) and I am listing it out! No more weekly food shopping! Grocery shopping at Aldi is on hold until I use up and eat the food already in my house! I will still be going to Aldi each week to collect essentials (fruit, fresh veg, milk etc) but otherwise, no more huge weekly food shop hauls from Aldi for a while! This video is a general week of cosy, autumnal meals we have been eating this week. From veggie meals, to cosy warming pasta dishes. Autumnal meals are my absolute fave! I love showing you what we ate for dinner in a general week because it varies so much! Generally, all of our groceries come from Aldi and are on a budget! I also try out new recipes in this video.

Elo! Today's video is an Autumn reset day. I am making two of the BEST Autumn recipes I have ever made/tasted. Cheap, luxurious, delicious and Nutritious. All ingredients and groceries from Aldi, keeping meals on a budget doesn't mean we need to sacrifice taste 🥰🥰

Chicken Noodle Soup:
4 - 6 chicken thighs (boneless/no skin)
100 - 200g sliced mushrooms (chestnut best)
1 - 2 celery sticks washed and chopped
1 - 2 white onions peeled and chopped
1 carrot peeled and chopped
1 small tin of sweetcorn
Dried Egg noodles
1 tbsp mixed herbs
2 crushed garlic cloves
1L Chicken/veg stock (I use 1 chicken stock cube AND 1 veg stock cube)
pinch of salt
lots of pepper
1 TBSP Butter/Oil

Fry all the veggies in the butter/olive oil until soft (take care not to burn, do this slowly)
Add in a little more oil/butter and then stir in all herbs and garlic, cook for a further 2 mins.
Transfer to a crockpot/saucepan with lid if necessary and add in stock.
Add in all chicken (no need to brown)
Cook for 4 - 6 hours on low heat
30-45 minutes before serving, crush noodles in your hands and add to the soup, stir, shred the chicken and continue cooking until ready to serve.
