Butter mochi can be made multiple ways with different types of toppings or just plain. My go-to is this delicious ube butter mochi. While you can make your own mochi using mochiko flour, I used Hawaii's Best Hawaiian Butter Mochi Mix.
UBE BUTTER MOCHI INGREDIENTS: • 1 bag (15 oz) Hawaii's Best Hawaiian Butter Mochi Mix bit.ly/2VE0Bf2 • 1 tbsp McCormick ube flavor amzn.to/3bzK0OO • 1/2 cup coconut flakes amzn.to/2Kz5Fuz (this is optional. If you don’t like coconut, skip this part) • 1 cup water • 2 eggs (beaten) • 4 tbsp salted butter (melted)
We bought all of our ingredients at Foodland (foodland.com/shop). If you do not have a Foodland near you, you can find most of the products on amazon.
HOW TO MAKE UBE BUTTER MOCHI: • Preheat your oven to 350°F • In a small bowl, melt 4 tablespoons of salted butter, set aside to cool. • In another small bowl, beat 2 eggs, set aside. • In a large bowl, whisk butter mochi mix (entire contents of bag) in 1 cup of water (room temperature water) for approximately 10-15 seconds or until mochi batter is smooth. • Next, add butter, eggs, and 1 tbsp ube flavor to mochi mix, whisk for an additional 10-15 seconds or until mochi batter is smooth. • Grease cupcake or baking pan then pour mochi batter into the pan. • Bake for 30 minutes in preheated oven then sprinkle coconut flakes and bake again for 30 minutes (60 minutes total). Bake until butter mochi begins to pull away from sides of pan. Be sure to place pan on middle rack in the oven. • Let it cool, serve, and enjoy!

It's sweet, salty, and filled with flavor! This is great served over rice for lunch or dinner. Sprinkle it with green onions, furikake, and you've got yourself a delectable Hawaiian meal!
Mochiko chicken can be made using mochiko flour, cornstarch, sugar, soy sauce, garlic, and ginger - we usually use these ingredients but we are trying a seasoning we found in store! For this recipe, we are using Hawaii's Best Hawaiian Mochiko Chicken Mix which we found at our local Foodland. It can also be ordered online here: bit.ly/mochiko-chicken-mix
MOCHIKO CHICKEN INGREDIENTS: • 1 bag (7 oz) Mochiko Chicken Mix bit.ly/mochiko-chicken-mix • 2 lbs of boneless chicken, cut into bite-size • 1/4 cup water • 2 large eggs, beaten • Oil for frying • Optional: Furikake and green onions
HOW TO MAKE MOCHIKO CHICKEN: • Using a large bowl, mix 2 large eggs with 1/4 cup water (same bowl). • Next, whisk Mochiko Chicken Mix (entire contents of bag) in the same bowl with the eggs and water mixture for approximately 10 seconds until batter is smooth. • Cut 2 lbs of boneless chicken into bite-size pieces (about 1 inch cubes). • Next, mix chicken with prepared Mochiko Chicken Batter (stir and coat thoroughly). • Marinate for 30 minutes in the fridge. • Fry in oil over medium to high heat (oil about 1 inch deep) until thoroughly cooked and golden brown. Fry chicken in batches and be sure not to over crowd the frying pan. (Tip: If frying oil is not hot enough, batter will absorb most of the oil and will fall off of the chicken. Recommended frying oil temperature should be between 350-365 degrees F.) • When done frying, place cooked chicken on a plate or wire rack covered with paper town to absorb excess oil. • Serve over rice with green onions and furikake. Refrigerate any leftover. Enjoy!

For this recipe, we are using powdered purple yam which is the easiest and fastest way to make ube halaya. Real purple yam can be used to make it as well! While this is the easiest way, making ube halaya needs a bit of patience and religious stirring to prevent from burning at the bottom. Ube halaya can be enjoyed warm or cold, eaten plain or use as a jam.
HOW TO MAKE UBE HALAYA: • In a heated pot (medium to high heat), combine powdered purple yam packets with water and stir. • Then add in condensed milk and evaporated milk - continue stirring to prevent from burning at the bottom. • Add the ube flavor extract and keep stirring until the consistency thickens. • After 30 minutes of stirring, add in the butter. • Within an hour, you should have a thick consistency (shown in video). You can stop there or if you want it thicker, keep mixing until thick enough to mold into shape. • Place in a pan/container (lightly coated with butter) and enjoy your delicious ube halaya while it is warm or place it the fridge for a few hours and serve when it is cold! It can be eaten plain, as a jam, or mix in halo-halo!
*Optional: ube halaya can be topped off with shredded cheese (eden cheese is the best), latik (fried coconut milk curd), or coconut flakes.

This is a traditional Hawaiian dish served with raw fish made with fresh ahi steaks, onions, green onions, limu, shoyu, and hawaiian salt. If you do not have the sauce and mix mentioned, substitute it using these ingredients: hawaiian salt, chili flakes, vegetable oil, sesame oil, and soy sauce.
• Serve immediately over rice (poke bowl) or lettuce (poke lettuce wraps). If eating later, refrigerate until ready to serve. Enjoy your homemade shoyu ahi poke!
Optional: add a tablespoon of chopped macadamia nuts for added texture and flavor.

Our favorite popcorn is the kettle popcorn which adds a slight sweetness flavor. • Transfer the popcorn into a large bowl. • If needed, mix a tbsp of melted butter with the popcorn. • Add 1-2 tbsp of nori furikake seasoning. We use the Maika'i organic nori furikake seasoning from Foodland. They have other furikake seasonings available such as yuzu furikake, and ume furikake. • Top it off with a bag of mochi crunch or arare. Our absolute favorite is the Maika'i kaki mochi original mix from Foodland. This is by far the best mochi crunch snack we have ever tasted! • Lastly, mix everything together and enjoy your delicious Hawaiian hurricane popcorn!

HOW TO MAKE PICKLED MANGO: • Peel then cut fresh mangoes into thin slices. • Place the sliced mangoes in a jar. • Put 2-3 li hing mui seeds in the jar with the mango slices. • Then make the pickle juice mixture - combine water, rice vinegar, brown sugar, and salt in a pan over high, and bring to a boil, stirring constantly until sugar dissolves. • Pour the pickle juice mixture over mangoes. Seal the jar and refrigerate (5 hours or more). • Serve when it's cold and enjoy!

With drivers, you can bargain for the price (just be fair) and choose where you want to go. Ask the concierge at your hotel if they can recommend a driver. - If you know someone who visited Bali, most likely that they have contacts for drivers on WhatsApp. Maybe they can recommend a driver to you. If you want our driver contact, feel free to message us! Most of the drivers we encountered were trustworthy (except two people which we didn't save their contacts). If that specific driver is not available to do a tour during your visit, it's best to ask them if they can recommend another trusted driver. - If a driver offers you a coffee tasting experience - do not book a tour with them! These are known scams and drivers get a percentage from those tasting tours.
