FOOD FOREST BERRIES
2024 sees work begin in establishing a small scale, permaculture designed family soft fruit enterprise that will rub shoulders with our other on-farm businesses. We aren't trying to compete with or replicate the large soft fruit commercial farms that are common place here in Scotland and around the world but showcase a small scale, ecologically diverse model that will work with our family farm's values and needs both economically and environmentally. Our sales will be direct to the consumer, working with our local community via a Community Supported Agriculture model (CSA), either through weekly fruit shares or by offering a pick your own/U pick. The berries grown in the market garden will add to the top fruit - apples and plums - that we have already been growing in food forest systems for nearly a decade.
About Tap o' Noth Farm:
Hi, we're James and Rosa! Welcome to Tap o' Noth Farm, an 8 acre permaculture designed food forest farm/homestead in Aberdeenshire, NE Scotland. We practice home scale to small farm scale agroforestry and regenerative agriculture methods to produce organic fruit and vegetables, raise dairy goats for all our raw milk needs, geese to graze our silvopasture and coppice systems and laying hens, moved around in a Chickshaw, for an abundance of eggs.
Our videos aren't 'how to's' - more videos to give a glimpse into our lifestyle and hopefully inspire you to bring aspects of what you see into your own life.
HEDGE + FURROW'S OFF-GRID SHEPHERDS HUT
Come and stay on the farm in our traditional shepherds hut, complete with pizza oven and wood fired outdoor bath, set amongst fields, trees and beside a beautiful pond.
You can book through AirBnB here - airbnb.com/h/hedgefurrow

He uses the BCS two wheeled tractor/walk behind tractor to cultivate the ground. Experimenting first with the tiller/rotavator before remembering why we try and avoid tillage, especially in wet conditions to avoid negatively impact ing the soil life. The BCS rotary plough is used instead of the tiller to make raised beds and the rows are marked out in readiness for planting the blackberries. James also discusses the reasons why blackberries may be the most challenging crop to grow on the farm.

2024 marks the beginning of an exciting new chapter on the farm as we embark on the establishment of a small yet robust berry enterprise.
This spring, our farm is teeming with excitement as we get ready to plant over ten different varieties of soft fruit. From timeless classics like red and blackcurrants, strawberries, and raspberries, to some more unique options including Saskatoon, Aronia, and Honey Berry, our market garden is soon to be bursting with diversity.
The quarter acre garden, previously dedicated to our CSA veg box scheme (2015-2021), is being transformed into a thriving collection of berry patches full of luscious fruits.
These perennial shrubs, along with already established hedgerows of top fruit and nuts, will yield a bountiful harvest from June all the way through to November, gracing us with their produce for years to come.
It will be a couple of years before the berry bushes settle in and start yielding reliable harvests that we feel we can sell. Until then we will be tending to these varied berries, farming them with the best agro-ecological practices that we can provide and taste testing our way to being fruit farmers, whilst planning the best way we can get these juicy sweet fruits to our valued customers within our local community.

Today we’re using a simple but decedent recipe from a wonderful book called Preserving Food without freezing or canning… an alcoholic tipple called Officers Jam or bachelors liqueur.
We’ve made fruit liqueurs before with brambles or sloes but never as opulent as using multiple types of fruit as we are here.
Using a large airtight container we’re placing alternate layers of our redcurrant, blackcurrant, gooseberry and some strawberries that we picked a few weeks ago to start the process, with a layer of sugar before submerging each layer of fruit and sugar with a liberal amount of brandy.
The recipe in the book suggests using a pound of sugar to every pound of fruit but we’ve decided to use less sugar feeling confident that the alcohol will preserve the berries well.
And that’s it, pretty simple.
While berry season is beginning to slow down we know that in not too long there will be plums, aronia berry, damson and apples that can all be added to this medley of food forest fruits. It’s a lovely way of charting the years fruit offerings, starting with the strawberries of midsummer and ending with the apples of late autumn.
And in the meantime, while we wait for the other fruits to ripen, we can leave this boozy concoction to rest in a dark corner of our pantry. We’ll wait at least six months before we try a tipple of this sweet, fruity and warming treat in the depth of winter when summers berry abundance is but a tempting memory.

We keep the goats on a deep litter system - where we build up layers of straw in their goat barn. Every so often we need to clean it out and it's even more important to do so today as our goats are expecting kids any day now so we need to keep the barn clean.
I the past we have used the goat bedding to make compost or bokashi but today we are going to use it to mulch our forest garden tree rows/syntropic food forest rows. These linear food forests have apples, plums, Aronia berry and Saskatoon and will benefit from a deep mulching. We use the BCS, our walk behind tractor, to move most of the bedding but also use wheel barrows with the whole family helping.
We also show you our new geese which are the Toulouse breed and talk about why and how we use geese on a permaculture farm.
#permaculture #syntropicfoodforest #goats
This small (15m) row was planted in spring 2021 and is the youngest of all our rows. It sits above a veg plot in our market garden and consists of plum, cherry and apple as the canopy species, blackcurrant, autumn olive, jostaberry occupy the shrub layer, rhubarb, comfrey, take their place in the herbaceous layer and strawberry grows as the ground cover layer.
There is a lot of growth at this time of year and we need to do some pruning to make use of the available biomass.
It's taken a couple of years for the comfrey and the autumn olive (planted for the fact it is a Nitrogen fixing shrub as well as having an edible berry) to really establish and now we can cut back their leafy growth to feed the soil, mulch out the grasses, retain moisture and reinvigorate the whole forest garden system through the pruning. Pruning allows in greater air flow to the soon fruiting trees, reducing the possibility of fungal problems and also allowing a greater solar gain to the fruit trees by reducing shade.

Today we're taking our dairy goats out to their grazing before checking on recently hatched chicks.
Then we're sharpening our scythes and mowing a small field in readiness of building a tree nursery.
We then spend the rest of the morning in our large polytunnel, talking about the changes that we are implementing and the transition from market garden into forest garden. We look at the perennials and fruit trees that we are planting in the tunnel, including grapes, figs, almond and peach trees. Rosa chats about the benefits of self seeding vegetables before we string up our tomatoes. Plus lots of playing, learning and laughing from our one year old farm kid!

We look at how we have already integrated perennials (trees, shrubs, herbs etc) into our small CSA (Community Supported Agriculture) market garden enterprise over the past six seasons with linear forest gardens hedgerows that frame and interject the vegetable plots.
Due to slowly shifting our focus from small scale commercial vegetable production and developing new on farm enterprises, we also discuss how the decommissioned vegetable plots are beginning to show signs of reverting back to their pre-cultivated plant communities. We intend to encourage this demonstration of forest ecosystem succession and also aid in the acceleration of this process by experimenting with seeding the plots with an understory of mixed grasses and herbs before planting more multi species, multi strata agroforestry systems, designing not only for home production but for generating a surplus for future perennial based enterprises.

The whole family is out picking berries and harvesting the first crops from our no dig/till market garden. We had a really successful onion crop and we’ve pulled them up, lay them in the sun for a day, before storing them somewhere dry and airy to dry for a few weeks before storing for winter.
We Lao take a look at our planting of oats before harvesting some to make our favourite herbal medicine - milky oats tincture. This wonderful tincture is fantastic at strengthening the nervous system helping the body deal with stress and anxiety. We also take a look at our brassica beds, seeing how the cabbages, kale and cauliflower have done over the months.

Our videos aren't 'how to's' - more videos to give a glimpse into our lifestyle and hopefully inspire you to bring aspects of what you see into your own life.

Then James starts planting a dedicated bed of the wonderfully calming herb, Lemon Balm, in an old vegetable bed in the market garden. The Lemon Balm joins many other herbs (yarrow, motherwort, mugwort, calendula) in an area of the market garden no longer used for our CSA (Community Supported Agriculture) veg box business. These medicinal herbs are being grown to allow us to harvest large amounts to make into herbal remedies and medicine, including tinctures, infused oils and herbal teas. We are also experimenting with growing herbs on a larger scale to see what would be involved in growing medicinal herbs small scale commercially. They also make a fantastic addition to the forest gardens.

We start off leading the goats up to the North Field to graze, catching up on all things goat and farm kid related - everyone is growing so quickly. We announce the launch of our new business - TAP:RETREAT - a beautiful shepherds hut and wood fired hot tub that we now have available to rent through airbnb (link below). Then James takes a wonder through areas of new forest garden plantings before heading to the goat shed via an area of silvopasture, explaining the change in design from wood fuel production to apple orchard silvopasture. We look at how long it takes the goats to rotationally graze through the system and the fencing we use. We Finish by looking at the improvements we have made to the goat shed area, mostly the paddock around the shed where we have made new more robust fencing using timber backs/slabs and how we protect trees from goat damage.

We have a general catch up on what has been happening on our permaculture designed small farm, including where the chickens and geese are now after the avian flu restrictions have been lifted. We look at the polytunnel and see that we lost ALL our tomatoes to a bad frost. We talk about the reasons we have decided not to run our CSA (Community Supported Agriculture ) veg box scheme this year, though hear how our community is still supporting us by buying any surplus or gluts from the garden. We put out some kale and cabbages into our home garden before taking the kids and mother goat out to explore their surroundings.

Love bringing the geese home in the evening, every time!
* Just to confirm this is footage from outside of the Avian Flu lock down measures. We are currently doing our best to comply with bird flu legislation, which as many other keepers of large fowl will agree, is very difficult!
We also look at why we are making changes to our fuel wood silvopasture system, swapping timber species for apples. We talk about why it is important and possible to make changes to your permaculture design, as we implement a new part of the overall agroforestry plantings of the farm.
We end the day getting the sheep ready to move off the farm as we have decided to sell our three shetland sheep. We create a laneway, stretching from the north to the south of the farm, to get the sheep easily into the trailer to take them to their new home.

How do we sow carrots using our top favourite market gardening tool, the jang seeder.
Here is a demonstration of how to sow carrots with the jang seeder.
The jang seeder (similar to the Earthway seeder) is a push powered seed sowing machine that accurately sows any seed to your desired spacing and depth. This tool has been so valuable to us as market gardeners, helping reduce sowing times and making life much easier! We look at how the jang works, which seed rollers we use for sowing carrots, how we prep a bed and how we use a rake to mark out the sowing rows to then follow with the jang.

Growing food in a polytunnel
cold climate tomatoes
growing organic vegetables for your family
Transplanting seedlings/veggie starts can often take a long time and because of weeding or interplanting you need to keep your lines straight and your distances between plants uniform. This rake hack helps speed things up no end. You can use just about any type of plastic pipe for this, just experiment and see what works best for your own rake.

While we were ripping the farmhouse kitchen apart, RG Bushel was continuing the work of building us a huge log store. This woodshed has been built from natural materials, roundwood logs, and today we lift the roof structure and get close to finishing the build. We also look at Rosa's evening chores, often completed in the dark, we wanted to show you a fantastic little lantern that Olight UK sent us.
* Note- the model Rosa was using is in fact the FULL SIZE lantern and NOT the mini model as she first thought.

A root washing station is an essential bit of kit for a market garden. We use ours for washing off soil from carrots, beetroot, potatoes, radishes....
We built the washing station from recycled material we had around the farm including a plastic barrel, some wire mesh and pallet wood. We took inspiration from a design in Curtis Stone's book 'The Urban Farmer'.

"A detritivore is an organism that eats dead or decaying plants or animals as food. Detritivores include microorganisms such as bacteria and larger organisms such as fungi, insects, worms, and some crustaceans."....and our goat, Pea!
We know goats love eating trees and branches and grass and, well, most things....but we never expected them to enjoy eating dried up old logs?!

We have a friend staying who we've asked to help make us an epic log store/woodshed using timber supplies that we had spare on the farm. We look at how to char the ends of the logs to help preserve the wood and start the build by getting these huge posts into the ground. We also have help from another friend who helps us get our compost toilet hoisted up into position getting us one step closer to opening our new business venture - Tap: Retreat.

We also let a wee secret slip out!
We then take a look at some of the massive beech hedges we have around our farmhouse that help protect us from the wind, but have grown so much that they now block out the light and desperately need cutting. We talk over just how influential hedges and fences can be on a permaculture design and show the changes we have made to this ancient hedge.
We finish the vlog with a look at the work that has begun at our new area of tree nursery which is in our market garden. We have been using an A frame level to mark out the natural contour lines of the plot as we are planning to create the tree beds on contour to help stop erosion and soil/nutrient loss and help retain water. Check out the Weedy Garden for an excellent A frame tutorial youtube.com/watch?v=6zM8wBbR4RQ

We have been drinking our own goats milk for over three years and we're going to miss having the fresh, raw milk and the opportunity to make cheese and kefir, but if we want to have goat kids next year (to grow our herd) we need to dry of the goats. We chat all about how we are drying off the goats, why we are and what we're going to miss, though at the same time we outline some of the responsibilities that home dairying brings to our lives and how drying off gives not only the goats a rest but the farmer too.

Next we're preparing the goat shed for the goat's evening meal - feeding the goats hybrid willow tree branches and looking at how we manage the waste by building dead hedges with the tree branches.
Then we hook up the trailer to our BCS two wheel tractor and start removing the finished pumpkin plants in the polytunnel, finding some butternut squash amongst other varieties of pumpkins that we can use in the kitchen. We take the old veggies to the chickens who are in the straw yard, an area where all the waste from the farm is left to compost or be turned into eggs!
