**1. Trader Vic’s Mai Tai (1944 Original)**
Created by Victor Bergeron in Oakland, CA, this version is the most widely accepted “true” Mai Tai. Designed to highlight the character of aged rum, it’s a perfectly balanced drink — rich, nutty, and tart.

2025 (which is only year 2 for us) has brought big challenges. This small business does not have the buying power of a large multinational corporation, so we are very strategic in our packaging choices, ingredients, marketing- literally everything. Every customer matters, and every order is a little victory!
The ill advised and frankly insane tariff war that the current US administration has waged is killing small businesses like mine. That's because the resources we depend on are mostly imported from other countries at significantly lower costs. So even though every single item I buy that goes into the product I sell comes from an American company, and is being sold in America, the suppliers I buy from have the purchasing power to buy in massive quantities from other countries that can produce said goods for MUCH cheaper than we can here in the US. This means that I can source those things at a reasonable cost and is the only way a small self-funded business (like Savidge Kitchen) gets off the ground in the first place.
Enter: 2025. My glass cost rose 20% between January and February of this year, with another price hike imminent. My cap, label, and transportation costs are about to rise too. And that's before I even get to ingredients.
So what does this mean? For most companies it means that the cost gets passed on to you, the customer. For a small business like me, I don't have that option. My product is already "expensive" relative to the large commercial syrup producers. So I either eat that cost, or go out of business. We're not going out of business, so that means that we have to increase the volume of sales to mitigate the loss of capital.
Higher volume was always the goal, but it's a delicate balance of available resources (time and manpower being one of them) and not biting off more than we can chew. I pride myself on our excellent customer service and stellar reviews, and those are things that are negotiable to me as we move forward.
So, my friends. I hope you enjoy this look into what it's like to own a specialty food business in 2025. If you're into it, I'll do more of these. Skrewball has become THE brand for peanut butter whiskey, but did you know you can easily make your own? AND you can customize this to your tastes... don't like peanut butter? Me either. Try Sunflower butter! Or pistachio, or nutella!
For my homemade liqueur lovers, keep in mind that this one has a little more kick to it than you may be used to with Irish Cream, Amaretto, Kahlua, etc. This is a fat washed whiskey, with just a little bit of sweetness. It might be a really great gateway into whiskey if you're a novice, and will satisfy that craving for my fellow whiskey lovers!! 🥃🥰

What’s the Deal with Fireball? A Brief History 🕰️
Fireball Cinnamon Whisky (yes, they spell it the Canadian way!) burst onto the scene in the 1980s as part of Seagram’s product line, but it wasn’t until Sazerac Company acquired the brand in 1989 that it became the global phenomenon we know today. Popularized in the 2000s through clever marketing campaigns and its appeal to younger drinkers, Fireball became a go-to for shots, party cocktails, and even baking recipes.
However, Fireball hasn’t been without controversy. In 2014, it faced backlash over its inclusion of propylene glycol, a common food additive that’s also used in antifreeze. While the ingredient was deemed safe by the FDA, it raised eyebrows and led many to seek out homemade alternatives. That’s where this DIY cinnamon whiskey recipe comes in—a cleaner, customizable version without any added preservatives or artificial flavors. But if you're worried about a bottle you already have, Fireball no longer includes PG in any of their recipes (as of 2018).

Bourbon adds a layer of flavor that a typical beef bourguignon is lacking. It's even more warming and luxurious, elevating humble ingredients to decadent bliss.
This beef bourguignon recipe serves 6 people. Easy to scale up or down, and freezes well for months. This easy recipe has amazing flavor, and is perfect for a cozy dinner party. Inspired in equal parts by Julia Child's Beouf Bourguignon and Ina Garten's Beef Stew, this recipe uses easy techniques, and ingredients you can find in most grocery stores.
It's a thick and luxurious stew that pairs perfectly with crusty sourdough, blankets, and the chill of cold weather. This is the perfect winter warmer!
INGREDIENTS FOR BOURBON BEEF STEW
3 tbs Olive Oil, divided
8 oz Diced Pancetta
8 oz Sliced White Mushrooms
14 oz Frozen Pearl Onions (thawed, patted dry)
3 lb Cubed Beef*
1 cup Flour
1 cup Bourbon or Rye, divided
3 cups dry red wine (ex: Cab, Merlot)
1 Medium yellow onion, cut into chunks
6-8 Cloves Garlic, minced or pressed (no Jarlic!)
4oz Tomato Paste
2 cups beef stock
1 pound carrots, peeled and cut into 1in lengths
2 -3 sprigs Fresh Thyme
1 cup flour
Salt and pepper
Season beef with salt & pepper, dredge in flour. *I use a chuck roast, cut into 1in cubes.
In a large dutch oven over high heat, cook pancetta until it’s browned on all sides. (4-5 min) Remove from pan and set aside.
While rendered grease is still hot, add pearl onions and brown (3-4 min), then remove from pan and set aside. Add a tablespoon of the olive oil, mushrooms, a pinch of salt and a couple turns of cracked black pepper. Sweat mushrooms until they’ve reduced in size by half (5-7 min), stirring occasionally. Remove and set aside with pancetta and onions.
Add remaining oil and brown beef in batches. Set aside. When all beef is browned, deglaze the pan with 3/4 cup of the bourbon, scraping up all the browned bits and letting liquid reduce (2min). Add thyme, onion, garlic, carrots and saute for 2-3 minutes. Stir in tomato paste, red wine, beef stock/ Bring to a simmer, occasionally stirring. Add back pancetta, beef, pearl onions & mushrooms, then put in oven to simmer for 1.5 hrs hours. Can also be done on stove top for 2 hours. Once the cooking time is up, stir in the remaining ¼ c bourbon, and add additional salt & pepper to taste. Consistency should be thick and luxurious.

If you are going to a hardware store, head to the plumbing section and look for brass couplings. 3/4 inch for wine bottles and most liquor bottles. 1 inches for larger liquors bottles (for example, my Blanton’s Bottle needed the 1 inch coupling.
Make sure you fill the vessel at least 2/3 to 3/4 of the way full with your citronella oil. This will insure that the fuel travels up the wick and burns right off the bat.

What type of tequila is best in a margarita? It depends! I personally enjoy reposado tequilas because they tend to taste closer to my first love, bourbon. Reposado means that the tequila has been rested, often in wood barrels. But don't let my preference sway you- if you enjoy a blanco (or silver) tequila, use that! It's all about experimenting and finding the things you enjoy the most!
The Margarita's origins are a subject of some debate, but there are several popular theories. One widely accepted story traces the Margarita back to Mexico in the 1930s or 1940s. One legend suggests that it was created by a Mexican bartender named Carlos "Danny" Herrera. As the story goes, Herrera concocted the drink for a patron who was allergic to most spirits but not to tequila. He mixed tequila, lime juice, and triple sec, serving it in a salt-rimmed glass, thus giving birth to the Margarita.

Today we are learning how to make homemade Rumchata, Horchata's boozy big sister!
Rumchata is a drink traditionally made from rice, water, and almonds. The recipe we are making today is from my good friend Vino, over at @CoachVinoLLC . When I saw Vino's version, I knew it was going to be worth trying! So today, we are making Vino's Rumchata, and then we are making two variations on this rumchata: one horchata with brown rice, and another horchata with coconut cream for a dairy free version. The dairy free rumchata is a good option if you do not have heavy cream or milk.

There are a lot of ways to accomplish homemade chocolate liqueur, and all result in a delicious decadent treat. The chocolate liqueur we are making today is a copy cat of the beloved, and now discontinued GODIVA chocolate liqueur. I was devastated to learn that Godiva stopped making this chocolate liqueur, so a homemade version is the only way!
Note that what we are making today is NOT Creme De Cacao. The difference between chocolate liqueur and Creme de Cacao is sort of a grey area. Creme de Cacao is not a regulated term, which means there are no hard and fast rules around the process of making it, and the resulting liquid. In general, Creme de Cacao is a distilled spirit that is infused with cacao nibs, filtered, and then has a sweetener added. Making liqueurs this way requires time and patience. The recipe we are making today is ready to drink as soon as you make it, and does not require any resting time. It will improve with a day of rest, but is ready to drink (and delicious) immediately.
Homemade Chocolate Liqueur - Fast Easy Recipe
DARK CHOCOLATE LIQUEUR
1 C Water
1 1/4 Cup Sugar
3/4 Unsweetened Ground Cocoa
1 tsp vanilla
1/2 tsp espresso powder
1/8 tsp salt
2 cups Brandy or spirit of choice
MILK CHOCOLATE OPTION
14oz Sweetened Condensed Milk
1 Cup Cream or Milk
Technique:
bring water, sugar, cocoa, vanilla, espresso powder, and salt to a boil, stirring to avoid clumping. Let boil for a minute, then remove from heat and let cool completely.
Once syrup is cooled, add to a lidded container with 2 cups of brandy, seal then shake to combine.
To make MILK CHOCOLATE LIQUEUR
Make the syrup the same as above. When it comes to blending, add 14oz sweetened condensed milk to a blender with 1 1/4 cup brandy to a blender. Blend for 10 seconds, then add 1 cup cream, and 1 cup of the syrup. Blend again till just combined. Transfer to a lidded container, and keep in the fridge for up to two months.
Separation is normal! Simply give this a good shake before pouring. Cheers!

Amaretto is an Italian liqueur that tastes like almonds. Not all amaretto is actually made with almonds though! In particular, Disaronno is actually made with apricot pits but still tastes just like almonds. Also, Disaronno has a bit of spice that is not almond, or any other nut! To get close to that flavor we are adding just a hint of cinnamon.
There are two different kinds of cinnamon, and we want the kind with some heat to it: Cassia cinnamon. Also, make sure to listen to the part where I share my super secret ingredient if you want a true copycat disaronno flavor. Spoiler Alert: it's whiskey.
Ingredients for Easy Homemade Amaretto | DISARONNO
1 cup (200grams) White Granulated Sugar
.5 cup (100grams) Light Brown Sugar
1 cup (.24liter) water
2-3 cinnamon sticks
2 cups (.5liter) vodka
1 tsp (5ml) Vanilla extract
1 tbs (15ml) Almond Extract

This recipes gives you DIY coffee liqueur fast and easy- no waiting for anything to steep or soak. It also uses REAL coffee. You can make Coffee Liqueur with any spirit you choose- Vodka, Rum and Bourbon are all in my line-up. But keep in mind that the spirit will affect the flavor of the coffee liqueur.
Kahlua is very VERY easy to make. The brand "Kahlua" uses white rum. Many people use vodka in Kahlua, and I personally love Bourbon in Kahlua. If you want something that's more along the lines of Mr. Black, I suggest using Vodka as your base spirit, and espresso for your coffee syrup.

Malibu Barbie is a no-brainer. The twist here is that we're not literally using Malibu. If you know me, you know why. We're using the good stuff- Shipwreck Coconut Rum (trust me here, it makes Malibu look like child's play). Peaches and Cream Barbie is a decadent bourbon milkshake that will bring all the Kens to the yard. This easy as could be Barbie cocktails is a simple blend of peaches, ice cream and bourbon. I also added in some peach syrup and apricot liqueur, but this is just as good without. Peaches & Cream Barbie was my Barbie when I was a kid, so it's no surprise that of the Barbie Cocktails, this is my favorite.

All you need are three ingredients and a blender. This iced coffee recipe makes a smooth delicious treat, and is endlessly customizable depending on what type of milk & sweetener you use! I imagine you can make it with brewed coffee instead of instant coffee, but it's almost 120 degrees Fahrenheit here, and I refuse to turn on any appliance that will add heat to my home. LOL!
For this version, we're using my Toasted Macadamia Nut Syrup and coconut milk. Because a coconut macadamia frozen coffee recipe is one of the best things I can think of.
Frozen coffee and iced coffee may seem like the same thing, but they are not. This also is not a coffee milkshake- it's thicker than iced coffee, smoother than a Frappuccino and cost pennies compared to what you might find a starbucks.
I came across this from a post I saw on IG by @eatsbyramya. She says this cold coffee was a treat in her household growing up, and is often found in India. And made just like this with Instant coffee, milk and sweetener. love it!!
1 tsp instant coffee
1 cup coconut milk
1 cup ice
2 oz Macadamia Syrup
Throw everything in a blender or nurtibullet and in under 30 seconds, the hellscape that is Phoenix right now doesn't seem so bad.
Couple things to note- Foldgers sells single serving packs. Amazing and easy! Coconut milk often looks lumpy out of the can- don't worry, the blender will attack those solids. You can order Macadamia Syrup from my website (link in bio).

Now back to cocktails, and Ube. So what is Ube? Ube is a purple tuber, closely related to yam and tarro. Ube is actually the tagalong word for "tuber", and you'll see Ube used in Filipino pastry quite often. What does Ube taste like? Heaven. But if that's too broad, it specifically has a nutty vanilla quality with earthy undertones. Also, trying this bottle is a really good opportunity to scratch the surface of the differences between distilled spirits. What is whiskey made of? Grains... but then again, so are some vodkas. So what makes each spirit different from each other? In the case of whiskey, it has a lot to do with the aging process. That long exposure to wood imparts flavor and texture and turns what would otherwise be a neutral grain distilled spirit into the brown nectar we all know and love.

Is making Irish Cream less expensive than buying it:
It depends on where you live! Where I live, a bottle of Bailey's is roughly $18-$20. Jameson is $20-$22. if you double this recipe and use the entire bottle of Jameson, you get TWO bottles of Irish Cream out of it. (Yay, math!) Or, don't double the recipe and be left with half a bottle of Jameson to enjoy on it's own (Yay, whiskey!) The rest of these ingredients are very inexpensive, and many people already have them in the fridge/pantry. Also, you don't HAVE to use Jameson- if you're making this purely for the cost savings, use the least expensive whiskey available to you.
How long will homemade irish cream last:
Up to two months in the refrigerator (and yes it needs to be refrigerated).
Can you make this without alcohol:
I'm sure you can, I just have not tried it personally. I think experimenting with some of the non-alcoholic whisky offerings would be fun, and lend the right amount of spice and texture to this!
Why bother making your own?

For those of you who are not drinking, but still love a spirit forward cocktail, "mocktails" can be tough. But for so many reasons, I am SO behind you on this. I think cocktails are social and celebratory, and if the absence of a cocktail makes someone feel isolated, I want to immediately change that so everyone feels welcome. So we're going to see if we can make mocktails better, or at least closer to those prohibition era sippers so many of us love.
This video is about two different whiskeys for mocktails: Spiritless Kentucky 74, and Ritual Whiskey Alternative. I'd LOVE to hear if you guys have recommendations for other brands, as these were not at all what I expected (or hoped for).

The champagne cocktail line up includes: the classic champagne cocktail, Death in the Afternoon, a "blue" French 75, two versions of an Air Mail cocktail, a Frankenstein concoction of bourbon and champagne, and then finally, a bonus disaster of Black Velvet.
These champagne cocktail recipes were supposed to be fun alternatives, and it turned into a dare of disgusting proportions. I was going to scrap the entire episode, but there is some poetry to the idea that 2022 has been an unmitigated disaster, just like most of these cocktails. So, my friends, sit back, grab a bottle of champagne, and ONLY a bottle of champagne (no need to ruin it) and laugh with me as we ring in 2023.

Yeahhhhh... soooooooo, we recorded this AFTER filming another video of 5 champagne cocktails. Needless to say, after about 3 bottles, we get a little loose on this one. I apologize in advance!
We're trying many different sparkling wines, in addition to actual Champagne (because it's only actually champagne if it's from the Champagne region of France). The lineup includes, Cava from Spain, Prosecco from Italy, Asti from Italy, a Rose from New Zealand, another Rose from Napa, then two Champagnes, Moet and Veuve, both from France.
There were some surprises in this bunch, and we had a TON of fun doing it. So lets say goodbye to the hellacious year that was 2022, and hello to 2023 in bubbly style!

Verte Chaud is a hot chocolate cocktail that hits all the right spots. The minty herbal quality of Green Chartreuse blends beautifully with the rich hot chocolate. But if you want to REALLY impress your guests, try setting this cocktail on fire! There are lots of options to play with flavor in this boozy dessert recipe- amaretto, drambuie, rum, sambucca, the possibilities go on and on! But for me, bourbon just tastes perfect with maple syrup.

The principles are the same, no matter what cocktail recipe you are using. The thing you need to think about is proper dilution, shelf life, and if there are any carbonated elements in your cocktail. We went with a Manhattan because it's high proof (longer shelf life), has no carbonated elements, and it's just damn delicious.

1- Traditional Pumpkin Spice Syrup
2- Keto Friendly Pumpkin Spice Syrup (aka- sugar free pumpkin spice syrup)
3- Maple Pumpkin Spice Syrup (no refined sugars)
Spoiler Alert- the Maple Version is BY FAR my favorite. It's a pumpkin spice syrup without refined sugar, and tastes positively decadent. I would use this pumpkin spice syrup in coffee, cocktails, over breakfast, desert, lick it off a... well, pretty much anything. Highly recommend.
INGREDIENTS:
Pumpkin Spice (store bought is fine, but my homemade pumpkin spice recipe is below**)
Pumpkin Puree
Vanilla Extract
Water
Brown Sugar OR Maple Syrup OR Keto Sugar with a spoonful of Molasses
TOOLS:
Sauce Pan
Fine Mesh Strainer or Cheesecloth
Mason Jar or Bottle for storage
TECHNIQUE
Combine 1/2cup each of water and sugar with 1/4 cup pumpkin puree, 1/2 tsp vanilla extract, and 1 tbs of pumpkin spice. Bring to a boil while stirring, making sure the pumpkin puree is completely incorporated into the liquid. Once boiling, reduce heat and let simmer for a minute or two before removing from heat completely to cool. Strain through cheesecloth or fine mesh strainer, then use or store.
RATIO:
1:1:1/2 Sugar:Water:Pumpkin. Adjust other spices accordingly
**Homemade Pumpkin Spice Blend (the dry stuff)

2tbs Ground Nutmeg
2tbs Ground Ginger

BLUE: Empress Gin. This butterfly pea flower infused gin is naturally a beautiful blue color, and the perfect pairing for this patriotic cocktail! Often you’ll see Blue Curaçao used for something like this, and I’m here to put an end to that nonsense. Down with Blue Curaçao!

I've got the answers, and if you're a pintrest warrior, you might not like them! We're taking a hard look at instagram vs reality with a project only Gallagher could love.
I was inspired to try this because I saw a one minute video posted on Instagram by Food Network. Seemed simple enough- hollow out a watermelon and use it to dispense all your summer libations. Lies... LIES, I TELL YOU. Sure, you CAN hollow out a watermelon, add a spigot, and be the envy of every other, um, well... no one? I don't know who would envy this. But I'm here to tell you that it's going to take a helluva lot longer than a minute. It took us over an hour just to shoot this video, and I'm someone with more tools and determination that most (and sense, while we're at it).

Mimosas are simple and lend themselves to being creative with flavor combinations. Two traits I look for in any entertaining endeavor. Some tips to keep in mind:
- When choosing champagne (or sparkling wine) for a mimosa, keep the sweetness factor in mind. If you like super sweet drinks, go for the Prosecco. If you want to dial down on the sweetness (and sugar content) a touch, go for Cava. Personally, I like a brut Cava for my mimosa bar, then people can dial in their own sweetness with the amount of juices that they add.

For the record, I can't get enough of Drambuie. Drambuie cocktails are hard to come by, and I'm making it my mission to use it as much as possible. Who doesn't love a Scotch based Honey Liqueur?
If you're looking for a gateway into Amaro, this cocktails is it. In general, I think the Amaro Nonino is. a fantastic addition to any home bar. It's wonderful to sip on it's own, and makes for a more sweet than bitter, and sort of nutty touch to a cocktail.
Be sure to use a high quality Sweet Vermouth for this bourbon cocktail! You're gonna taste it, and vermouth that's gone bad will really ruin your day. I personally really like the Carpano Antica, but use whatever suits your taste! A tawny port might be a fun swap here too.
1.5 oz Bourbon (Noble Oak)
.75oz Drambuie
.75oz Sweet Vermouth (Carpano Antica)
.75oz Amaro Nonio
2 dashes Chocolate Bitters

Recipe
This is not the same soda bread that people use as a doorstop or bludgeoning weapon, I promise. It's rich, flavorful, the perfect blend of crunch and crumble on the crust with a soft inside.
4 Cups All Purpose Flour
1/3 Cup Sugar
1 Tsp Baking Soda
1 Tsp Kosher Salt
6 Tbs Butter (cold, and then diced)
1 1/2 Cup Buttercream
1/4 Cup Heavy Cream
1 Egg
1/2 Cup Raisins
1/3 Cup (or more) Irish Whiskey
Preheat oven to 375.
Whisk together dry ingredients. Using your hands, blend in cold diced butter. Set aside. In a separate bowl, whisk together egg, buttercream & heavy cream. Then, form a well (or as I like to call it, volcano crater) in the dry ingredients and pour in the wet ingredients.
Get messy- it's half the fun. Once you have a loose dough forming, move to a work surface and fold in the whiskey soaked raisins. NOTE- don't discard the whiskey you drain off from the raisins- that shit is DELICIOUS and needs to be sipped. Trust me on this one. Raisin Jameson is going to be a thing. You heard it here first.
Don't overwork the dough- it should be slightly sticky, and formed into a round mound. Score the top with a giant deep "X" so that the dough cooks all the way through. Place in a cast iron skillet (or on a parchment lined baking sheet) and back at 375 for 45-55 min. Remove to a baking rack to cool.
While bread is cooling, whip together Whiskey Butter (Ingredients below). Enjoy!
Whiskey Honey Butter1 stick salted butter (softened)3tbs honey1tbs Irish Whiskey
Whip all ingredients together and chill.

Ahhh, l'amor. For a valentine's day cocktail this year, I'm taking things I love: Bourbon, Chocolate, and Oranges ... and combining them into a rich, bittersweet drink that will make you fall in love with love. Riffing on a classic, the Boulevardier, this easy valentine's day cocktail really is more complex tasting than you'd suspect. The addition of the Campari lends a beautiful citrus forward bitterness to counter the sweetness of the chocolate, and of course, that's where we get the lovely pink cocktail color.
The star of this show is the custom ice stamp... I wanted it to be the dark chocolate candied oranges (we'll get to that), but the ice stamp stole my heart. And finally, the oranges.... oh, the oranges. If you're a movie nerd like me, oranges mean two things. Someone is about to die, and you've watched the Godfather so many times that you might need an intervention. In this case, it means a super easy, decadent Valentine's treat that just also happens to be the perfect garnish for this chocolate orange cocktail.

Also, I love Martha Stewart- no really, I do. The woman is a legend, and I genuinely hope I can meet her some day. Partially to genuflect, partially to pick her brain on brand building, and partially to ask why in god's name she adds broken up bits of biscotti to the creamy filling of Tiramisu. I'm just not over it (clearly), and this video is my own path to catharsis and healing after the trauma of watching Martha bastardize a family favorite. Or maybe it was just an excuse to make three Tiramisu in three days. Don't judge me... the recipients of aforementioned Tiramisu had no complaints.
Adding Mr Black Coffee Liqueur is something new to the old family recipe. Mr Black is the perfect marriage of coffee and liquor. This traditional Italian dessert uses both, so using Mr. Black instead of coffee is a no brainer. I cannot recommend this enough. Unfortunately, Khalua or Tia Maria is not a good substitute for Mr. Black. Mr Black tastes like black coffee or espresso... so in it's absence, I recommend simply using good coffee.

The Sazerac tendencies of this cocktail are in flavor and name, and not at all in spec. This is absent absinthe, and has no trace of cognac. What it does have is the delectable Montenegro amaro, and Luxardo Apricot Liqueur.
Fee Brothers Almond Bitters are the star of this show... and they're hard to come by. If you need to sub out, try walnut bitters.
OLD SAZERAC
2oz Rye Whiskey
1oz Drambuie
.50 oz Montenegro
.25 oz Apricot Liqueur
(optional) barspoon luxardo cherry syrup
Stir down over ice, serve up in a coupe, or over a large rock. Garnish with a luxardo cherry.
