Spicy Apple Preserves (makes 4 pints - maybe a little more) INGREDIENTS 8 Crispin (aka Mutsu) Apples, peeled, cored, and sliced 8 TBSPs Sugar (I cut back on a lot of the sugar - the original recipe called for 1/2 cup for each apple, but I didn't want that much sugar). For each pint of apples, I used 1/2 tspn ground cinnamon 1/8 tspn nutmeg 1/8 tspn ground cloves 1/3 tspn lemon juice INSTRUCTIONS 1. Put the prepared apples in a deep pot and sprinkle all the sugar on top. 2. Cover and let sit overnight 3. The next morning, bring the apples and sugar to a simmer and let them cook for 15 minutes, stirring every 5 minutes. 4. Spoon the apples into the pint jars 5. To each jar add the appropriate amount of cinnamon, nutmeg, and cloves. 6. Add 1/3 tspn of lemon juice to each jar. 7. Add any remaining juice to the jars, filling to 1/2 inch. If you didn't have enough juice, you can top the jars off with a little apple juice or cider. 8. Use a non-metallic utensil to remove any air captured in the jars. 9. Wipe the rims clean and place the lids and caps, finger-tight. 10. Place in a boiling water bath for 15 minutes. 11. Remove and allow to seal. Pickled Okra Recipe INGREDIENTS 2- 2 1/2 pounds fresh okra (2-3 inch pods are best). Trim but do not remove the caps. 7 garlic cloves, peeled (or equivalent minced garlic) 2 Lemons (7 1/4-inch thick slices of lemon, 1 slice per pint) 1 qt plus 1 1/2 cups white vinegar (5% acidity) and 1 1/4 cup water 3 1/2 TBSP non-iodized salt 2 TBSP sugar
INSTRUCTIONS 1. Wash and sterilize 7 jars. Sterilize lid liners by boiling. 2. Place vinegar, water, salt, and sugar in a saucepan and bring to a boil to dissolve the salt and sugar, reduce heat and keep warm. 3. While the liquid is heating in step one, prepare the okra and the spices. Rinse the okra. 4. Place all pickling spices in a small bowl and stir to combine. 5. Lay out a clean towel on counter. Empty the water from the jars. Place the hot, sterilized jars on a towel on your counter. 6. Place a lemon slice at the bottom of each jar and add a TBSP of the mixed pickling spice. Place a peeled garlic clove or equivalent amount of minced garlic on top of the spices. 7. Pack the okra in the jars, alternating stem-up/stem-down wherever possible. The top of the okra should come between 3/4 to 1" from the rim. 8. Pour the hot vinegar mixture over the jars, up to ½ inch from the rim of the jars. Run a thin non-metallic utensil between the okra and the jars to dislodge the air bubbles. If the pickling liquid level lowers while doing this, just top off with more of the pickling liquid. 9. Wipe the jar rims with a clean damp towel. Place sterilized lids on jars. Screw the lids on finger-tight 10. Perform boiling water process for 15 minutes.
