CHOCOLATE HAZELNUT SLABLOVA RECIPE: INGREDIENTS FOR PAVLOVA: 8 large egg whites, room temperature 1 3/4 cups + 2 Tbsp sugar 2 tsp vanilla extract 2 tsp white vinegar 2 tsp cornstarch
FOR THE FILLING: Yo's Chocolate Hazelnut Buttercream from Layer Up! (or your favorite chocolate hazelnut buttercream/frosting recipe!) Chocolate Hazelnut Spread
INSTRUCTIONS: 1. Preheat the oven to 425F. Line a 15x10-inch baking sheet with parchment paper, making sure the paper rises 2cm over the sides of the pan. 2. For the meringue base, start off by wiping down a large bowl with vinegar (this removes any residual fat that can deflate your meringue). Either using a hand mixer or a stand mixer fitted with a whisk attachment, beat the egg whites on medium-high speed for about 1 minute, or until soft peaks form. Gradually add the sugar 1 Tbsp at a time, beating constantly for 5 minutes. The meringue will become thick and glossy. 3. Turn the speed down the low, and add the vanilla extract, vinegar, and cornstarch. Increase the speed to medium and beat for a minute, or until fully combined. 4. Use a rubber spatula to to spread the meringue out evenly into the prepared pan, and place in the preheated oven and immediately lower the temperature to 400F. Bake for about 35 minutes, or until the meringue is pale beige in color and crusty on top. Remove from the oven and set aside in the pan until completely cool. The meringue will deflate slightly as it cools! 5. Once the meringue is complete cool, place a clean kitchen towel on top of the meringue and gently flip it onto a dry work surface. The crisp top of the meringue should be facing down. Lift the pan off and carefully peel away the parchment paper. 6. Use a rubber spatula to spread your filling(s) of choice across the meringue. 7. Starting from the longest side close to you, use the kitchen towel to help roll the meringue up and over, gently pulling away the kitchen towel as you roll. 8. Gently slide the meringue on a long platter, seam side facing down. If the meringue loses its shape, don't worry! You can use your hands to gently pull it back together into a log-shape. 9. Pipe more chocolate hazelnut buttercream on the top of the pavlova, and decorate however you'd like! We used Ferrero Rocher chocolates, chopped hazelnuts, and chocolate creme wafer cookies. CINNAMON ROLL COOKIES INGREDIENTS:
INGREDIENTS FOR THE FILLING: 1/2 cup sugar 2 Tbsp ground cinnamon
INGREDIENTS FOR THE DOUGH: 3 cups all purpose flour 2 tsp baking powder 1 tsp ground cinnamon 1/2 tsp salt 1 cup unsalted butter, room temperature 1 cup brown sugar 2 eggs, room temperature 1 tsp vanilla extract
INGREDIENTS FOR THE ICING: 1 cup powdered sugar 1/4 cup warm water 1/2 tsp meringue powder
INSTRUCTIONS: Combine the sugar and cinnamon for the filling, set aside. Whisk together the flour, baking powder, 1 tsp cinnamon, and salt together in a bowl. Set aside. In a large bowl, cream the butter and brown sugar in a bowl with a mixer until smooth. Add the eggs and vanilla and mix until incorporated. With the mixer on low speed, add the dry ingredients, blending just to incorporate. Be careful not to overmix! Trace a 16 x 9" rectangle on a sheet of parchment paper. Pat the dough into the rectangle using your hands, then sprinkle half o the cinnamon-sugar mixture over the dough. Beginning on the long side and using the paper to help you, roll the dough into a log. Dust the outside of the log with remaining cinnamon-sugar mixture. Wrap log in plastic and chill for at least 3 hours. Preheat the oven to 350F, and line two baking sheets with parchment paper. SLice the chilled odugh into 1/4" thick slices and arrange on prepared baking sheets, spacing 1" apart. Bake 10-12 minutes, or until golden brown. Let cookies cool on the pan for 5 minutes, then transfer to a rack. For the icing, combine the ingredients in a bowl and drizzle over cooled cookies. Let stand at room temperature until icing dries.Its Corn! It was hard to pick a recipe from her amazing new book Crumbs & Doilies, but come on, it's the Holidays, so of course we go with a Ferraro Rocher themed cupcake. It was DELICIOUS!!! Below is the recipe!
FERRERO ROCHER CUPCAKES
INGREDIENTS: HAZELNUT BUTTERCREAM 285 gr unsalted butter, softened 1/4 tsp sea salt 450 gr icing sugar, sifted 4 Tbsp Hazelnut Butter 1 1/2 Tbsp milk
HAZELNUT SPONGE 115 gr self-raising flour 10 gr cocoa powder a pinch of sea salt 1/4 tsp baking soda 115 gr caster sugar (or granulated sugar) 10 gr soft light brown sugar 125 gr unsalted butter, softened 2 eggs 1 1/2 Tbsp milk 25 gr Hazelnut Butter
TO FINISH 200 gr dark chocolate (50% cocoa solids), melted 1/2 tsp cocoa butter, melted 100 gr hazelnut nibs or chopped roasted hazelnuts
INSTRUCTIONS: FOR THE HAZELNUT BUTTERCREAM: 1. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and salt together on high speed for at least 5 minutes until the butter has turned a very pale yellow and the texture and smooth and whippy. 2. Add half of the icing sugar and bring together on a slow speed to avoid plumes of sugar jumping out of the bowl, then beat vigorously for a few minutes before repeating with the remaining icing sugar. Beat until you have a pale, almost white, fluffy mixture. 3. Beat in the hazelnut butter, then the milk, a little at a time. Depending on the softness of your butter and the temperature of your kitchen, you might not need to add all of the milk, or you may even need a bit more. You're looking for a smooth, whippy buttercream that has a spreadable consistency and holds its shape. 4. Once your Hazelnut Buttercream is finished, cover and set aside.
FOR THE HAZELNUT SPONGE: 5. Preheat your oven to 375F (190C) and line a 12-hole cupcake tin with paper cases. 6. Sift the flour, cocoa, salt, baking soda and sugars into the bowl of a stand mixer fitted with the paddle attachment, or a large bowl. Add the butter and eggs, and beat on a medium-high speed for 30 seconds until well combined. Add the milk and hazelnut butter and beat for 30 seconds, stopping to scrape the sides and bottom halfway through, until you a have a smooth batter. 7. Distribute the batter evenly among the paper cases until they are three-quarters full. Bake for 18-20 minutes until the tops spring back when gently pressed. Leave to cool.
FOR THE FILLING: 8. In a bowl, whip the cream, sugar and hazelnut butter with a balloon whisk until medium-soft peaks are forming, then put the mixture into a piping bag.
TO FINISH: 9. Using an apple corer, remove the centre of each cupcake, then fill the holes with the cream filling. Take care not to overfill. 10. Put your buttercream into a piping bag fitted with a large round nozzle and squeeze a neat blob of buttercream on top of each cupcake. 11. Put the iced cupcakes in the fridge for 15 minutes while your melt the chocolate for the topping in a bain-marie or in the microwave in short bursts. Add the melted cocoa butter and stir to combine, then leave to cool for 5 minutes. 12. Dip the chilled iced cupcake tops into the chocolate, allowing the excess to dribble back into the bowl. GINGER SNAPS! (aka: Sugared Ginger Cookies) Ingredients 2 cups All Purpose Flour 2 tsp Baking Soda 2 tsp Ground Ginger ½ tsp Salt ¾ cup Unsalted Butter, Room Temperature 2 cups, Granulated Sugar (divided) ¼ cup Molasses 1 Egg, Room Temperature 1 tsp Vanilla Extract
Instructions Combine flour with baking soda, ground ginger and salt in a small bowl and set aside. Using a stand mixer fitted with the paddle attachment, beat the butter with 1 cup of sugar and the molasses on medium speed until smooth, about 2 minutes. Scrape down the sides of the bowl, then add the egg and vanilla until almost combined. On medium-low speed, add the flour mixture and continue to mix until the dough just comes together. Be careful not to overmix. Chill the dough for about an hour, or until the dough can easily be rolled into balls. While the dough is chilling, preheat the oven to 350F and line two baking sheets with parchment paper or a silicone baking mat. Pour the remaining 1 cup of sugar into a shallow dish or plate. Scoop 1 Tbsp portions of dough and roll into smooth balls. Add to the sugar and completely coat each ball. Arrange the balls onto the prepared baking sheets, 2 inches apart. You can either leave the dough balls as is, or gently press down with the bottom of a small plate or cake pan to form a disc. Bake for 12-14 minutes, rotating the pans halfway through. You will know the cookies are done when the edges have set but the centers are still soft. Let the cookies cool on the baking sheets for 5 minutes, then transfer to a rack and let them cool completely for 20 more minutes. You can store these cookies in an airtight container for up to a week!

I invited my good friend Ellis @TheCakingGirl to recreate the cake from the book with me. In this cake, there is a layer for the entire family. Chocolate, vanilla, carrot, banana, vanilla spice, red velvet... There is something for everyone! We stack the layers with my Italian meringue buttercream and decorate with an easy ganache drip and sprinkles! I couldn't believe how fast these movie night snacks were gone once we finished shooting! The recipe is similar to rice krispie squares, but you switch the cereal with popcorn and the snacks of your choice, and mix them all in a glorious pot of butter and marshmallows. Takes less than 10 minutes to make, so easy and simple! You can customize it for yourself or your guests, adding their favorite flavors into the mixture. Seriously, you won't believe how close this cake tastes like a cinnamon bun. Our team at How To Cake It devoured this entire cake, and your friends and family will too! It has my cinnamon cake layers - a recipe I never used before on the channel! Filled with cream cheese frosting (only 4 ingredients, try it!) and Cinnamon Toast Crunch cereal for extra flavor. To decorate I made a simple version of cinnamon rolls, and piled them to the top of the cake! Simple and Easy!

This week's cake may be my favorite for real! Brûléed bananas, vanilla Italian meringue buttercream, caramelized condensed milk, topped with white chocolate whipped cream. A very simple, elegant semi-naked decoration with some banana chips as added visual flavor. Oh, and of course graham crusted banana cake layers! Delicious!

Summer is ending, so I had to say goodbye with one of my most summery cakes - The Key Lime Pie Cake!
