Another roastery founded as the pandemic began and despite the obvious challenges this brought Dak have managed to make a lasting impression already on the specialty coffee scene. Louis and Veronique’s coffees and design are elegant, singular and on point. The El Mirador washed Colombian has a gentle clean sweetness, a touch of jasmine and a lovely pop of lemongrass in the finish, overall it’s a delicate coffee that sits between sweet, fruity or floral, depending on the way you brew it or even your mood. Goriffee, (meaning gorilla + coffee) was created from a visit to Rwanda by founder Erik Simsik in 2013. It was there that he discovered that coffee can be a really special drink. It wasn’t long after that Goriffee started giving the people of Slovakia and beyond delicious specialty coffee. I wasn’t quite prepared for the experience I was going to get with the Geminga. It’s a natural Colombian coffee and straight away you’re hit with an almost candy-like tropical sweetness, wild yes but not too funky. Some roasters can arrive on the scene and make an immediate impact and Hola is one such company. Founded by Pablo Caballero and Nolo Botana in 2016 with a clear vision and are already one of the hottest new roasters in Spain. Gathaiti is one of those Kenyan coffees that linger in your mind long after you’ve finished it. It has a lovely combination of berries and hints of cocoa which create an almost ice cream sensation in your mouth and the bergamot in the finish help give this coffee a character all of its own.
