Asheville and huge parts of western North Carolina have been decimated by hurricane helene. Our entire water system has taken on significant damage, and current estimates are saying it will be weeks until it is restored.
During this time, The Times Bar and most other hospitality businesses will have to remain closed, which is a devastating blow to our local economy heading into the busiest months of our year.
The future for our business and many others right now remains uncertain, and we are hoping to gain back some of that certainty by raising enough funds to cover all of our employees lost wages until we can open again.
All funds donated will be distributed directly to our staff, to cover food, water, rent, and all other essential expenses in the upcoming weeks. ALL SURPLUS FUNDS WILL BE DONATED TO ORGANIZATIONS DEDICATED TO HELPING OUR LOCAL FOOD AND BEVERAGE COMMUNITY ♥️♥️

The OG of Cocktails
...at least if you ask me. Whiskey-Sugar-Bitters or like some people say "Spirit, Sugar, Bitters AND water". I always found that funny. I understand that 200 years ago you might have had to specify water as an ingredient in a cocktail, but nowadays, when ice is readily available, you don't mention "water" as part of a Margarita, right? Or any other cocktail you shake, stir or blend with ice. Cause we are talking about dilution when we say "water". But it is correct, you most certainly can make an Old Fashioned with any spirit. Technically, it is a style of cocktail. Either way, what I really would like to know, how do you make yours? Different bitters? Demerara sugar? Muddle a cube? Wisconsin style? (Please don't haha..Unless you're IN Wisconsin!)

A lot of bartenders do not bring their own tools to work, and that's fine. As long as you don't blame someone else for not finding the wine key when you're slammed and need to pop a bottle... UNIQUE COCKTAIL ALERT 📣
This is a cocktail from @thetimesbaravl, where I bartend. But now, you'll be able to make it in the comfort of your own home! Best way for me to describe it is as a savory Mai Tai-ish kinda drink. The sesame orgeat really sticks out and pairs so well with the Nori infused rum. But it still has that fruity feel from a Tiki Cocktail. I hope you try this!
Shoutout to @domdellaria for creating this excellent drink!
1 oz (30ml) Sesame Orgeat (see recipe below)
3/4 oz (22.5ml) Mango Juice
3/4 oz (22.5ml) Lime Juice
3/4 oz (22.5ml) Nori infused white rum
3/4 oz (22.5ml) @plantation.rum (DARK)
Give this a quick shake and serve over pebble ice. Garnish with mint, dehydrated mango and some @angosturahouse bitters!
SESAME ORGEAT
7 oz (volume) toasted sesame seeds/quart of 1:1 simple, blend & strain
NORI INFUSED RUM
1/4 sheet of Nori/750 ml @havanaclub white rum .
Sous vide @140 degrees (Fahrenheit) for 75 minutes
The RCG-SMASH
This is a fantastic little summer cocktail I created a few years back, while working at @parkhyattny. It is super straightforward, easy to make, and perfect when you want to switch up the classic Whiskey Smash. And oh so delicious!
4-5 Raspberries
1/2 oz (15ml) Cinnamon Syrup (see recipe below)
1/2 oz (15ml) Ginger Syrup (see video or post!)
3/4 oz (22.5ml) Fresh Lemon Juice
1 1/2 - 2 oz (45-60ml) Rye Whiskey
Quick shake, serve over crushed ice. Garnish with mint and raspberry.
Cinnamon Syrup
Make a simple syrup (1:1 sugar and water heated to dissolve)
Throw a couple of cinnamon sticks in the syrup and let it infuse for a couple of hours or a day (depending on how much simple you make and how many sticks you have)
This really is no science. Just let it infuse until it tastes like cinnamon!

This is another very common scenario in a bar (or a restaurant for that matter), and this video is here to explain why you shouldn't ask for something special. Unless you're very specific and can tell us exactly what you want of course. If we have the ingredients, no problemo!

THE PENDENNIS COCKTAIL
This is a classic cocktail, but maybe not so well known. It's citrusy, fruitforward and slightly herbaceous. Super tasty if you ask me! Named after a social club in Louisville, Kentucky, and I believe it's still there.
2-3 dashes Peychaud's Bitters
1/2 oz (15ml) Simple Syrup
1/2 oz (15ml) Apricot Liqueur (@giffardusa)
3/4 oz (45ml) Lime Juice
1 1/2 oz (45ml) Gin
Shake the hell out of this and serve with a kumquat...if you have one. Apparently that was the original garnish 🙂
This is a summer banger that everyone should try! Add some fresh fruit in there and muddle for an extra layer of flavor.
Or a chili for some heat!
1 whole lime cut into pieces and muddled
1-2oz - 3/4oz Simple Syrup
2oz Cachaça
Give this a quick shake with some pebble ice if you have it, otherwise regular ice is just fine too!

If you're a bartender you've most likely gotten the question: What is Fernet?
In this video I give you an introduction on AMARO. We'll also be making 2 cocktails with Fernet (and a bonus shot!) A lot of people fear or dislike Fernet, and I can understand that. It is an acquired taste! Herbal, medicinal, a little minty and strong. Not for everyone..By itself that is! But I do highly recommend you to try the Midnight Stinger to ease into it, think a more herbal "Whiskey Sour" kinda drink! Or the classic Toronto for a more stiff, "Old Fashioned" sort of drink.
Toronto
1/4 oz (7.5ml) Simple Syrup
3/4 oz (22.5ml) Fernet
2 oz (60ml) Rye Whiskey
Stir and serve over ice. Orange twist
Midnight Stinger
3/4 oz (22.5ml) Simple Syrup
3/4 oz (22.5ml) Lemon Juice
1 oz (30ml) Fernet
1 oz (30ml) Bourbon

This is a superb Old Fashioned variation if you ask me. Maybe a smidge more elaborate than an OF, but in that realm of cocktails, if you know what I mean :)
Base Camp
2 dashes orange bitters
1/4 oz (7.5ml) Allspice Dram
1/4 oz (7.5ml) Creme de Cacao
1/4 oz (7.5ml) Islay Scotch (I used Bowmore, but any peaty Scotch will work)
1 1/2 oz (45ml) Bourbon
Stir and serve over ice. Garnish with a lemon twist. Cheers!

Two, very easy to make vodka cocktails! The Classic French Martini (with my little twist on it of course!) and another cocktail I created myself. Nothing complicated at all, just something I make at the bar sometimes. I will also teach you a thing or two about IKEA and Swedish meatballs.
French Martini
1/4 oz (7.5ml) Simple Syrup
1/2 oz (15ml) Chambord
1/2 oz (15ml) Pineapple Juice
1/2 oz (15ml) Lemon Juice
1 1/2 oz (45ml) Vodka (preferably Swedish...)
Shake all of this up and serve in a fancy glass of your choice! Garnish with a water ballon. Just kidding, a couple of blackberries will do.

Stir and serve over ice. Garnish with a love sprinkled orange wedge.

Winter Tiki
1/4 oz (7.5ml) Ginger syrup
1/2 oz (15ml) Orgeat
3/4 oz (22.5ml) Lemon juice
3/4 oz (22.5ml) Sweet Vermouth
3/4 oz (22.5ml) Green Chartreuse
Build straight into highball glass and give it a quick stir (swizzle) with pebble or crushed ice. Garnish with a mint sprig, candied ginger and an angostura float!

Orgeat Syrup Recipe
1 cup white sugar
1 cup unsweetened Almond milk
A few drops (to taste) almond extract
A few drops (to taste) orange blossom water
Heat sugar and almond milk in a pot until fully dissolved (don't boil it), let cool off and add almond extract and orange blossom water. Stir and store in refrigerator for up to 3 weeks. You can freeze it too.
