Procedure: 1. Attach the cake cubes in the gingerbread pieces. Using the pink royal icing, and a #12 tip, cover the sides 3/4 of the way up from the bottom with pink bubbles and 1/4 with white royal icing. 2. Insert 3 dowels into the larger cake, and place the smaller cake on top of the dowels. Cover the tops of the cakes with sprinkles. 3. Switching to working on the cake board, cut out squares of fondant and create the game pathway. Using the gum drops, create Gum drop Mountains. Using the lollipops, create lollipop forest. Using the candy canes and peppermint pieces, create Peppermint Forest. Use the licorice pieces to create Licorice Lagoon. Use the peanut candies to create peanut acres.Use the blue and white snowflake candies etc to create Ice Cream Sea area. Use the royal icing to adhere the pieces to the board. To cover the areas without the candies, use the green royal icing fitted with a 233 tip. 4. Decorate the cupcake cookie for the door and attach to the front of the castle. Insert the lollipop into the top of the castle. 5. Slice and serve cake when desired. Cake is best kept in a sealed container in the fridge.

Procedure: 1. Roll out white fondant for the eyes and mix with tylose to help harden them faster. Add blue and black for the iris and pupil. Shape the legs (216g) and the arms (91g) with lime green fondant (mixed with tylose). 2. Prepare cakes according to the recipe, and color the batter according to the drop amounts listed above. 3. Once cakes have cooled completely, place the darkest one on a cake board, attaching with a swipe of buttercream. Cover that layer with a thin layer of vanilla buttercream. Place the 9” cake on next, cover with buttercream, then the next darkest 8” cake. Finish the stack of cakes, with the lightest green one. 4. To begin carving the cake, start at the top, and gradually shape the cake to be at it’s widest at the 9” cake level, tapered under the 9” level, and then rising up to be smallest at the top. Reserve some of the cake scraps to make cake pop mixture for the vocal sac. Attach the vocal sac to the front of the cake. Cover the cake entirely in vanilla buttercream. 5. Place a ring of fondant around the top of the cake, above the vocal sac. 6. Roll out fondant, ⅛” in thickness and drape over the cake. 7. Smooth the fondant into place with your hands and a fondant smoother. 8. Attach the arms, legs and eyes using skewers or spaghetti noodle. 9. If you haven't heard, April is a pregnant giraffe who's keepers have been livestreaming her pregnancy for the last number of weeks. To celebrate the birth of her baby, Jenn decided to create a cake in April's honor! April agreed to have the baby today, April 1, if Jenn would make her a cake.
Giraffe Cake Procedure: 1. In the bottom of a greased 6" cake pan, place 1 cup of vanilla cake batter. Cut the chocolate cake into chunks and place into the vanilla cake batter. Cover the chocolate cake pieces with vanilla cake batter. Bake the cake in a preheated oven at 350F for 35-40 minutes. Repeat for 5-6 layers of cake. 2. Once cake layers are are cooled completely, level and then stack the cakes, filling the layers with white buttercream. Cover the cake in shades of brown buttercream, starting with the chocolate at the bottom, tan in the middle, and the lightest at the top. 3. Mix brown fondant with tylose and shape the ossicones ("horns" on top of the head) and insert a dowel into the flat end. On the top end, use a straight blade or fondant tool to score marks. Using black food coloring powder tint the scored end of the ossicones. Insert the ossicones into the top of the cake. 4. Cut the ears out of brown fondant and line the inside of the dark brown, with tan brown. Shape the ears (curve them) and allow them to dry. Place them besides the ossicones. 5. Cut out shapes from brown fondant and attach to the back of the cake, and add the pattern from behind the ossicones, down, and around the side of the cake. 6. Roll black fondant out into 3" long round pieces. Slice the end about a half inch in and curve it slightly upwards. Place onto the cake with a brush of water. 7. Pipe a tail around the giraffe, using the tan buttercream, and place pieces of brown fondant onto the buttercream. 8. Slice and serve cake when desired. Makeup Cake Procedure: 1. Prepare and cut cake pieces and vanilla buttercream. 2. Stack layers of cake with buttercream filling between each one. Using a sharp knife, slightly angle the top layer so that there is a gradual slope towards the top of the "bag". Continue carving the sides of the cake in a way that "v's" towards the center of the side. Leave a slight protruding triangle at the bottom of the side, where the bag would fold if it was paper. 3.Roll out a piece of black fondant, thickened with tylose, 8.5"x8". Cut out 1" strips of white fondant, and stripe the black fondant, leaving 1" gabs between the white stripes. Allow to harden slightly. Carefully transfer the piece of fondant to a flat square cake board. Stand the cake board up against the cake, and press the piece of fondant onto the cake. Repeat for the second side. Join the seams at the sides with a small brush of water. 4. Shape the handles with black fondant and cut out text for front of the bag. Attach the letters with water and press the handles into the buttercream at the top of the bag once they have hardened. 5. Create the tissue paper that spills over the top of the bag by rolling out fondant thinly and cutting into squares. Pinch the square in the middle to "billow" the tissue. Place onto the top of the cake. 6. Create the eye shadows with black fondant bases and bright colorful fondant rounds cut out and placed inside the black. To create the brushes, roll out tubes of black fondant, and similar sized amounts of brown fondant. Score and texturize the brown fondant to look like bristles. To create the lipstick, roll out a black tube of fondant and a corresponding bright color with an angled tip. The nail polish can be created with a black tube top, with a larger angled base. Easter Cake Ingredients: 10" round pink vanilla cake Vanilla buttercream White and Pink chocolate (candy melts)
Easter Cake Procedure: 1. Cover pink vanilla cake in vanilla buttercream. 2. Melt white chocolate in the microwave on 50% power for 60 second intervals until chocolate is smooth and no lumps remain. 3. Spread chocolate out thinly onto a large piece of parchment paper. Roll the parchment paper up into a log and place into the fridge until the chocolate has solidified completely. 4. Once the chocolate has hardened, break the pieces apart and attach to the side of the cake. 5. Melt the pink chocolate, and brush it onto the white chocolate pieces with a pastry brush, or similar tool. 6. Attach small flowers if desired. 7. In the center, insert 4 support dowels around the center area (where the egg will sit) and place a cake board over top of the dowels. Cover the cake board with icing.
Sugar Egg (per half) Ingredients: 4-5 cups extra fine (berry) sugar 2-3 tablespoons water Pink gel paste White and green royal icing Easter candy/small toys
Sugar Egg Procedure: 1. Stir the gel paste into the water and make sure there are no clumps of color. 2. Combine sugar and water in the bowl of a stand mixer, and whisk until the sugar is a consistent shade of pink. 3. Press into a silicone or plastic egg mold, pressing firmly so there are no cracks. Place a flat plate on top of the egg, and flip the plate over, so the egg is resting right side up. Place egg half into the oven, and put the oven on warm (170F). Leave the oven door propped open slightly. Repeat procedure for second half. 4. Let egg halves dry in the warm oven for 3-4 hours, or until there is a hard enough shell that you can pick the egg up without breaking it. Once this can be done, carefully remove each half one at a time, and "clean" out the inside with a small spoon or sharp knife. Be careful not to remove too much of the inside or the shell will be too thin and crack. On one of the halves, remove a small "window" at the front of the egg. At the bottom of each half, remove a small divot in the bottom for a dowel to be inserted for stability once on the cake. 5. Place egg halves back into the oven, and continue for another 2-3 hours, or until the entire egg is very hard. Remove from the oven and allow to cool. 6. Once the egg is cool, fill it with candies, small Easter eggs, or pastel toys to create a scene inside the egg. Use royal icing to attach everything. 7. Pipe a line of royal icing along the edge of one of the halves, and place the second half on top of the royal icing. This will glue the egg together. All to harden. Pipe royal icing details however you would like to on the egg. Allow the piping to harden completely before placing on the cake. 8. Place a 4"-5" dowel vertically into the cake, through the cake board that is already there. Contact between the icing and the egg might cause the egg to deteriorate so I placed a small round of parchment paper between the contact points of the icing and egg. Place the egg on top of the cake, lining up the support dowel and the whole in the egg.
Nest Ingredients: Yellow Isomalt
Nest Procedure: 1. To make the nest, heat the isomalt according to the directions. Using a spinning sugar tool, or homemade whisk for sugar spinning like I do, throw the isomalt back and forth above a raised surface until you have enough thin strands of isomalt to make up the nest. 2. To shape the nest, you carefully gather the isomalt strands and wrap around the egg on the cake.
Lighting the Egg: Due to the fact that we shot this cake and egg tutorial under studio lights, it was hard to see inside the egg so I rigged up a light for the display cake! I cut out a hole from the top, and put a LED light in it and ran the wires down where the egg halves attach. I cut a hole in the cake and hid the battery there, covering the wires with buttercream and the nest along the way. This time, it's the UNICORN (with no noses) cake trend! I don't understand the lack of facial features besides eyes, but hey, who am I to argue with the internet. This unicorn cake encompasses everything fun about unicorns- rainbow, glitter and a little magic. Perfect for a birthday party!
How to Make a Rainbow Unicorn Cake Recipe Ingredients: -6 layers 8" round cake, colored red, orange, yellow, blue, green, purple -6 layers 6" round cake, colored red, orange, yellow, blue, green, purple -Buttercream colored red, orange, yellow, blue, green, purple and white -Yellow gum paste -Rolkem Super Gold powder -Fondant red, orange, yellow, blue, green, purple, black and white -Isomalt nibs red, orange, yellow, blue, green, purple
Procedure: 1.Level, stack and cover each size of cakes in white buttercream, to create 2 stacks of cakes. Place 8" cake stack on a large cake drum, and the 6" cake stack on a 6" cake board. 2.Place each color of buttercream into piping bags fitted with 104 tips. With the largest size of tip against the cake, start at the bottom and zig zag up the cake, about an inch in width. Repeat with all 6 colors, until the cake has been completely covered. Place into the fridge while working on the next steps. 3. Roll out two equal portions of yellow gumpaste into long cones and twist both together to form a horn. Insert a dowel into the end of the horn and set aside to dry. 4. Draw or print out a wing template, and using a fondant extruder fitted with the small round disc opening, trace the wing with yellow gum paste. Flip the image, and trace again for the matching wing on the other side. Allow gum paste to harden completely. 5.Melt isomalt nibs in the microwave or oven. Pour each color into a separate sections of the wings. Allow isomalt to cool and harden completley before moving. Once cool, attach skewers to the wings with clear isomalt. 6.Mix a small amount of rolkem dust with a few drops of vodka, and paint the yellow gum paste sections of the wings with a fine paint brush and the unicorn horn. Allow to dry before touching. 7. Cut out eyes, mane and ears for the unicorn and apply to the 6" cake with a small dab of water. 8. Stack 6" cake on top of the 8" cake. Insert the isomalt wings onto the sides of the cake. Insert the horn on the top of the cake. 9.Cake is best consumed within 2-3 days and should be kept in the fridge.

Geometric Cake Ingredients: -3 layer 8" round cake, white buttercream covered -3 layer 6" round cake, white buttercream covered -Blue, black and white fondant -Diamond cutter
Optical Illusion Cake Procedure: 1.Prepare cakes and cover in buttercream. 2.Roll out blue fondant, and cover the top of each cake with a corresponding round of fondant. 3.Roll out blue, white, and black fondant using a fondant roller, with thickness guides in place. This will ensure that the fondant is even thickness throughout the application process. Using a diamond cutter, cut out 15-20 diamonds at a time from each color. 4. Starting at the base of the cake, apply a blue fondant diamond horizontal to the cake, using water to attach if necessary. On the left side of the blue diamond, apply a black diamond vertically, and a white diamond vertically on the right side of the blue diamond. Ensure that the black and white diamonds meet in a vertical, straight line. Continue building illusion cubes over the two cake layers. Completing a cube at the top of the smaller tier adds an additional element of illusion! Beauty and the Beast Cake/ Stained Glass Cake with floating isomalt rose Ingredients: -4 layer 8" round cake, white fondant covered -Piping gel (red, yellow, blue, black, green, ivory, light brown, dark brown, pink) -Red, green, clear isomalt nibs -Belle, Beast, Rose templates -Black gum paste
Procedure: 1. Cover Belle template with a piece of parchment paper and trace outline with black piping gel. Place gel picture into the freezer for 10 minutes. Once chilled, remove from the freezer and line up on the cake, gently press the image onto the side of the cake, making sure to press each line onto the cake. Tidy up any lines that need it with a paint brush, and pipe over any sections that need it. Color in the picture with piping gel. 2. Repeat for the Beast drawing. 3. To cover the rest of the cake, pipe black lines on the cake, and fill in spaces with yellow piping gel. On the top, color in the shape of a rose. 4. Place a piece of parchment paper over top of the rose picture. Place black gum paste into a fondant extruder, with the second smallest round tip, and squeeze out the gum paste. Use the thin line of gum paste to trace the outline of the rose. Use water if needed to attack pieces. 5. Melt red isomalt in the microwave according to directions. Carefully pour melted red isomalt into the petal area of the rose. Pour green isomalt into the stem area. Allow to cool completely before trying to move. To make loose rose petals, pour red isomalt in the shape of a tear drop and allow to cool. 6. Using clear isomalt, carefully attach rose to the inside of a hurricane vase. 7. Cover cake board in white fondant and repeat process used for covering the cake, this time using shades of blue to cover the board. Place petals into the center of the cake board, an turn vase upside down to create the illusion of the rose floating. 8. Place cake on top of vase when ready to serve. Shopkins Cake Procedure: 1.Cut out rounds from prepared cake, 3 ¼”, 2 ¾”, 2x 2 ½”, 2 ¼”. Stack rounds, starting with a 2 ½” at the base, up to the largest in the middle, and then to the smallest on top, with buttercream filling in between the layers. Cover stacked cakes in buttercream. 2.Wrap a blue strip of fondant around the base of the cupcake, for the wrapper. Using a ball and veining tool, mark the cupcake with wrapper creases. Roll out pink worms of fondant, and wrap around the top of the cake in a spiral, moving upwards towards the top. 3.Remove a small section of cake from the top, enough to fit the doll into the space. Press the clean doll down into the cake. 4.Roll out a piece of round fondant, approximately 8” round. Remove a small circle from the center, and cut a slice from the edge to the circle. Transfer that piece of fondant to the doll, placing the waist in the opening. Smooth fondant to accentuate the spiraled fondant underneath. Heat in the microwave in 30 second intervals until gelatin crystals have dissolved. 2.In a large bowl, combine 2 cups of icing sugar, gelatin mixture, flavouring and gel paste. Stir to combine. Add additional ½ cups of icing sugar until mixture is no longer sticky. It should feel like fondant. 3.Shape into a heart and insert a dowel into the bottom. Set aside to dry 24-48 hours. 4.Write message on heart with an edible writer once heart is dry.

Procedure: 1.Preheat oven to 350F. Prepare 2, 6” cake pans with non-stick spray and parchment paper. 2.Prepare pink and purple 6” round cakes and allow to cool completely. Slice into wedges and remove a heart shape from each wedge. 3.Place one cup of vanilla cake batter in the bottom of each pans. Place heart wedges into the pans to form at least one ring of cake in each pan. Fill the outer edge and center with cake batter. Ensure that the colored cake pieces are entirely covered with cake batter. Place pans into the oven to bake for 55-60 minutes. Once baked, place cake on a cooling rack for 5 minutes before removing cake from the pan. 4.Allow the cakes to cool completely before leveling. Attach one cake layer to a cake board with a swipe of buttercream. Spread a thin layer of pink buttercream between the two layers and stack the second layer on top of the first. Once the two layers are stacked, cover the entire cake in pink buttercream. 5.Arrange the conversation hearts in twos of matching color and arrange around the bottom of the cake. When once around the cake is complete, start the next row by offsetting the hearts between the ones below. Procedure 1. Cover cake in vanilla buttercream. 2. Using a fettuccine pasta maker, cutout strips of grass/fettuccine with the orange fondant. Attach the pieces to the lower portion of the cake. 3. Roll out ivory fondant into a 9" round scalloped circle. Using a tiny square cutter, remove small squares from each scallop to mimic lace. Transfer the piece of fondant to the cake, so that the grass portion shows through underneath. 4. Cut out small flowers in the orange fondant and attach to the ivory portion of the dress with water. 5. Roll out a rectangular piece of red fondant and cover the doll's torso area with it. Attach the fondant piece together at the back of the doll. 6. Remove a small amount of cake from the center. Place the doll into the hole in the cake. 7. Roll out small scalloped circle of ivory fondant. Remove mini square sections as done in the larger circle. Cut a small oval shaped opening from the center of it, and cut a slit from the oval, to the edge of the fondant circle. Wrap this piece of fondant around the waist of the doll. 8. Using a 1/2" rectangular piece of red fondant, wrap the fondant around the doll's waist to complete the sash. 9. Melt isomalt nibs according to package directions (30 second intervals) and pour over a round/cylinder object that is covered with a silicone mat. These will be the waves. Allow them to cool completely before removing them from the silicone mat. 10. Cover a 12" cake board in buttercream covered with graham cracker crumbs, and blue buttercream. Place isomalt waves into the blue buttercream. 11. Paw Patrol Birthday Cake Procedure: 1. Preheat oven to 350F. Prepare 2, 6” cake pans with non-stick spray and parchment paper. 2. Prepare 2 black 6” round cakes and allow to cool completely. Slice into wedges and remove a circle from each wedge. Choose any size of circle for the Dalmatian spots inside the cake. 3. Place one cup of vanilla cake batter in the bottom of each pans. Place circle wedges into the pans to form at least one ring of black cake in each pan. Fill the outer edge and center with cake batter. Ensure that the black cake pieces are entirely covered with cake batter. Place pans into the oven to bake for 55-60 minutes. Once baked, place cake on a cooling rack for 5 minutes before removing cake from the pan. 4. Allow the cakes to cool completely before leveling. Attach one cake layer to a cake board with a swipe of buttercream. Spread a thin layer of buttercream between the two layers and stack the second layer on top of the first. Once the two layers are stacked, cover the entire cake in white buttercream. Place cake in the fridge until you’re ready for the decorating step. 5. To make the fireman hat, press rice krispie treats into a bowl or dome cake pan until you create a half sphere. Slice a small vertical amount off of the sphere. Cover the dome with red fondant. Using an 8” round cake board with two trimmed sides so that 2 sides are straight, cover it in red fondant. Attach the dome to the cake board with a small amount of icing. Roll out and cut a long 1” ribbon of yellow fondant, and wrap it around where the dome meets the board. From white fondant, cut out a badge and press in a paw print using a cutter(s). Once cut spray or paint it with silver edible paint. Roll out a cylinder of black fondant for the flashlight. Attach a small round white circle to one end as the “glass” end. Place the flashlight on the side of the hat, and place the badge at the front of the hat, where the slice was removed. Set the hat aside while working on the face. 6. Cut the elements of the face out of white fondant (link to the template I used on my blog). Roll out the black fondant into a thin round rope and use it for the eyebrows, and mouth. Roll out a chunk of black fondant and shape into the nose. Roll out white, blue and black circles for the eyes. Attach all of the fondant pieces to the white face template using water. 7. Remove cake from the fridge, and place the face onto the cake, lining up the top of the face, with the top of the cake. Roll out additional black fondant circles for dalmatian spots and press onto the buttercream around the cake. To make the ears, roll out large ovals of white fondant and add black spots to them. Accordion fold one end of the oval and press onto the top of the cake, on either side of the face. Remove any excess fondant from the top of the cake so that the hat doesn’t sit too high. 8. Place hat on top and serve cake when ready. Cake is best consumed within 2-3 days and should be kept in a sealed container in the fridge.

Question Block Cake Procedure: 1. Attach 1, 1.5" cake to a cake board with buttercream. Cover the layer in a thin layer of blue buttercream, and place the first 3/4" cake on top. 2. Divide layer into 3 sections and remove the center section. 3. Fill the removed section in with tan cake pop mixture. Carve out 2, 1/4" channels in the tan cake pop mixture and shape the gaps to be rectangle. Fill in the rectangle voids with black cake pop mixture. 4. Repeat creation of tan rectangle cake pop mixture and removal of 2 rectangle voids beside the cake. Turn the tan rectangle piece upside down, and place on top of the other tan piece (which is on the cake), lining up the eyes (black strips). Fill either side of the tan pieces with blue cake. 5. Form another rectangle piece to fit on top of the tan piece, with red cake pop mixture. From the middle of the red rectangle, remove a half circle strip of cake pop mixture. Fill that in with white cake pop mixture. 6. Form a rounded rectangle out of red cake pop again and remove a half circle strip from the bottom of the arch (flat section). Turn arch over so removed section is facing down. Using a small circle cutter, remove 2 strips of red cake pop from the top of the arch. Fill all 3 removed areas with white cake pop filling and line the entire piece up with the other half circle of white cake pop. Fill either side of the red pieces with blue cake. 7. Place remaining 1.5" cake layer on top, securing with buttercream. Ensure sides are straight and freeze to set before icing the cube. 8. Cover the cake in yellow buttercream, keeping the sides straight and flat. Smooth icing with a hot spatula. 9. Roll out yellow and white fondant. From the white fondant, cut out 4 question marks. From the yellow fondant, cut out 16 3/4" circles. Attach the circles and question marks with water (if needed) to the buttercream. 10. Slice and serve cake when desired. Cake should be kept in a sealed container in the fridge and consumed within 2-3 days.
Ingredients and Materials: • 4x 8" square Red Velvet Cakes • Cream Cheese buttercream • Royal blue, sky blue and white fondant • Small gift that will fit in a jar
Procedure: 1. Attach one cake to cake board with a dab of buttercream. Cut a circle the size of the jar's diameter in the center of 3 of the cakes. Stack cakes and layer with buttercream. Place jar inside of the hole. Cover jar with half a slice of the removed circle of cake. Cover entire cake in cream cheese buttercream. 2. Place 4th cake layer on a cardboard cake board and cover completely in cream cheese buttercream. 3. Cover both the sides of the cakes in sky blue fondant. Also cover the top of the smaller cake with blue fondant. 4. Roll out royal blue fondant and slice with a ribbon cutter using the wavy blades. Place fondant ribbon strips onto the sides of the bottom cake, securing with a small amount of water. Place fondant strips on to the sides and top of the lid of the cake. 5. Roll out additional royal blue ribbon, cut into 5" strips. Fold strips so the ends meet and trim the ends to a point. Turn ribbon on it's side and allow to dry. 6. Cut squares of fondant and pinch to form tissue paper like pieces. Place pieces along the edge of the cake, covering the seam. 7. Insert dowels to support cake. Place lid on top and fill in any gaps with additional "tissue paper". 8. Cut snowflakes from white fondant and place on the sides and top of the cake. 9. Assemble bow using a small amount of blue buttercream in the center of the lid and inserting the pointed piece of the bow. You'll likely use 10-12 pieces. 10. Slice and serve cake when desired. Grinch Christmas Tree Cake Ingredients and Materials: • 4 x 6" round vanilla cakes colored lime green • Green buttercream (20 drops green, 5 yellow, 5 brown) • Styrofoam cones • Green, red, white, silver round candies
Procedure: 1. Attach one 6" round cake to cake board with a dab of buttercream. Cut the second cake using a 5.25" cutter, the third with a 4.5" cutter, and the forth with a 3.75" cutter. Stack cakes and layer with buttercream. 2. Trim a small amount off of the top edge of each layer so that the cake layers slope gradually to the top. Place stacked cake in the freezer. 3. Cut the Styrofoam cone into 3 pieces. Trim off a section of each bottom and angle them to droop. Secure with toothpicks or crazy glue. Wrap cone in plastic wrap. 4. Remove cake from the freezer and place the drooping cone on top of the cake. Secure cone to the cake with a large skewer, pressing it all the way down into the cake board below. 5. Cover the cake entirely in a thin layer of green buttercream. 6. Place remaining buttercream into a piping bag fitted with a leaf tip (#366) and cover the entire cake in leaves. 7. Place candies on the cake where desired. 8. To add elements to the cake board, add present chocolates and a "Whoville" sign made from gum paste. Attach the sign to a peppermint stick. Use a ball of fondant to attach the sign to the cake board. 9. Slice and serve cake when desired. Cake should be kept in a sealed container in the fridge and consumed within 2-3 days.

Elf Cake Procedure: 1. Stack chocolate cakes with a layer of buttercream in between each layer, and cover the entire cake in the peppermint buttercream. Place the cake in the fridge while preparing the fondant pieces. 2. Stack the 3 ice cream cones together, using buttercream to secure. Roll out green fondant and cut out leaves for the tree. Attach the leaves to the tree with buttercream. Add chocolate covered sun flower seeds, silver dragees and a star for the top of the tree. 3. To make the presents, shape fondant of desired color into a cube. Press a heart sprinkle into the top for a bow. Using a sharp fondant tool, etch in the areas where the bow would wrap around the present. 4. For the unwrapped (open) presents, shape a piece of white fondant into a cube shape. Roll out a thin piece of fondant and tear the smooth edges off of the piece of fondant. Wrap piece around the cube. 5. To make the candy canes, pinwheels and draping elements, roll out pieces of white and red fondant into long narrow logs. Press the two colors together, and continue to roll, twisting while rolling. Cut pieces off and shape into candy canes and pinwheels. 6. Roll out an 8" round piece of brown fondant and emboss it with a wood grain embossing mat. Place on the cake, towards the back of the top. 7. Roll out a 4" round piece of red fondant and press a snowflake cutter lightly into the fondant. Place on the cake, towards the back of the top. 8. Take the fondant elements and place them on top of the cake. Drape the red and white ropes around the cake and place a pinwheel where the lines peak/meet. 9. How to Make Candy Canes -makes between 12-18 candy canes Ingredients and Materials: • 1 1/2 cups (300g) granulated sugar • 1/2 cup (12mL) clear corn syrup • 2 tablespoons (30mL) water • 1/2 teaspoon (2.5mL) cream of tartar • White Americolor Coloring • Peppermint candy oil
Procedure: 1. Preheat oven to 200F. Line two baking trays with silicone mats. Lightly oil a bench scraper and scissors. 2. In a small saucepan, combine sugar, water and corn syrup. Stir until water is dissolved, then insert a candy thermometer. Heat mixture until 265F. 3. At 265F, add cream of tartar and stir to combine. Continue to heat to "hard crack" stage, or 300F. 4. Remove candy syrup from heat and stir in peppermint oil. Pour half of the candy onto one of the silicone lined baking trays. Add a few drops of red coloring to the poured liquid. Leave for a minute while working on the candy remaining in the pot. 5. Add a few drops of white coloring to the candy in the pot, and stir to combine. Pour this onto the second tray, and place into the warm oven to stay warm while working with the red batch. 6. Using the scraper, mix and blend color into the candy mixture. Pull the candy briefly. Roll into a log the length of the pan, and cut it into 4 equal pieces. Place into the oven to stay warm while working on the white. 7. Remove the white candy from the oven, and start to pull it. The longer it is pulled, the whiter the candy will become. Roll the candy out into a long log the length of the pan and cut into 4 pieces. 8. Wearing a pair of knitted gloves covered with a pair of latex gloves, take one piece of red and one piece of white, and twist them together, pressing the colors together while twisting. Procedure: 1. On a large piece of parchment paper, place 2 bread loaf pans upside down, each with small pieces of parchment on top of them. Melt isomalt as per recipe instructions. Using a fork or a cut wire whisk, dip whisk into hot isomalt, and fling it across the top of the bread pans. Long string like pieces will form. Repeat this step until you have enough isomalt hair to cover poppy's head. Set aside in a safe spot to allow for it to be cooled completely. 2. Fill the 8" round cakes with icing, and stack the 3 cake layers together. Place into the fridge to freeze. Once frozen, apply the 3 shades of blue buttercream to the outside of the cake, starting with the lightest color on the bottom. Smooth with a cake spatula. 3. Layer the dome cakes together, using pink buttercream in the middle. Cover the entire sphere in buttercream and smooth with a cake spatula. 4. Insert dowels into the round cake, directly underneath where the dome cake will go. Place the dome cake on top of the dowels. Secure with an additional dowel through the top, and down to the cake board. 5. Cut or break pieces of isomalt hair into 6-8" long pieces and place on the head, covering the back, top and sides. 5. Roll out pink fondant and cut strips for bangs. Etch with fondant tools to add texture. Attach to the front of the head. 6. Roll out green, blue and lime green fondant. Cut a long ribbon/band for the headband. Cut 3 flowers out and leaves. Place the headband around the forehead and attach at the back. Cut and mold the remaining features for the nose, ears, eyes and mouth. Attach to cake with water and/or toothpicks for support. 7. Dab the cheeks with luster dust, and spot with white coloring for freckles. 8. With the help of a hot glue gun, attach the dowel into the plastic popcorn container and allow to solidify before attaching the cardboard. 5. Stick popcorn pieces to cardboard with melted white chocolate (or glue). Allow to harden before inserting into the cake. Ensure that there is at least 3"-4" of dowelling without popcorn attached to it so that it can be inserted fully into the cake. 7. Insert dowel into the cake for the anti-gravity effect! The plastic popcorn container should be supported via the dowel and cardboard. 8. Cover top of cake with additional popcorn, attaching it to the side of the cake as it is "falling". 9. Place onto large cake board, and if desired, add an additional container of spilled popcorn beside the cake. 10. Once cooled slightly, remove candy from the pan and score the slab of candy with a sharp knife in one direction, then score it in the opposite directions to form small rectangles. 4. Allow scored slab of candy to cool completely before breaking or cutting along the score lines. 5. Wrap candy in clear cellophane for serving.

Procedure: 1. Bake vanilla cake batter colored purple in the egg cake pan. Allow to cool completely before levelling and icing. 2. Cover middle of egg with buttercream and press halves together. Place into the freezer to solidify completely (or until icing is solid). 3. Once frozen, cut top off of the egg in a jagged design (or follow lines from cake pan). Carve a recessed area on the top of the larger portion of egg, leaving a 1/4" thickness of cake along the jagged edges and going to a depth of about 1/2". 4. Cover that area with purple buttercream, and the rest of the cake (both portions) in white buttercream. 5. Splatter paint the egg with thinned candy melts and a paint brush. I used coconut oil to thin the chocolate. 6. Roll 141 grams of rice krispie treats into a ball and cover in purple fondant, leaving a "skirt" around the bottom for the neck. Using a small pair of scissors, make tiny snips in the fondant to give the appearance of fur/feathers. 7. Roll out white, blue and black fondant thinly and using the oval cutters, cut out the sections of the eye. White with the largest, then blue then black. Finish with a tiny piece of white for the highlight in the eye. Attach to the head of the hatchimal with water. 8. To make the beak, roll out a small piece of blue fondant and carefully shape into a beak using the fondant tools and your fingers. Attach to the head of the hatchimal with a toothpick and water. 9. To make the draggles spiny back, roll out a piece of blue fondant into a thin cylinder. Gently pinch away at the fondant to form spikes. Attach to the cake with water and toothpicks as needed. 10. Place Hatchimal head inside the recessed area of the cake. Place cake pieces onto a prepared cake board. 11. Sprinkle gelatin on top of the water and stir to combine. Allow to bloom. 3. Cream cream cheese in bowl of a stand mixer fitted with the paddle attachment. 4. Melt white chocolate in the microwave on 50% power in 60 second bursts until melted. Pour into cream cheese and combine until smooth. 5. Heat lemon juice in the microwave for 30 seconds, and add to the gelatin. Stir until gelatin has dissolved. Pour juice into the chocolate mixture and mix until combined. 6. Mix in whipping cream carefully and pour into cake pan. Gently tap the cake pan on the counter to remove any air bubbles. Place into the freezer to freeze completely. 7. Once frozen, the texture spray can be applied. Shake the cake well before spraying and spray with even layers of light application. Continue spraying until desired thickness of velvet is reached. 8. To add elements to the cake, place dragees, sprinkles etc on top. 9. Serve when desired. • 1⁄8 ounce unflavored gelatin (1/2 an envelope) • 2 tablespoons cold water • 1⁄2 cup shortening • 2 1⁄2 cups powdered sugar • 1 teaspoon vanilla extract
Cream Filling:. 1. Dissolve unflavored gelatin in cold water. Plave into the microwave and bring to a boil (about 30 seconds). Set aside and allow to cool. 4. Cream together shortening, powdered sugar, and vanilla. 5. Add cooled gelatin and beat for 10 minutes.
********************** Caramel Pinwheels 1. To make caramel pinwheels, roll out a caramel piece at least 5" wide. Add a layer of vanilla cream filling to the top of the caramel, covering all of the caramel. 2. Roll the caramel up and wrap firmly in parchment paper. Place in the fridge to harden to make cutting easier. The caramel pinwheels slice better when firm.

Lava Cake Procedure: 1. Preheat oven to 400F. Grease pans liberally with butter. 2. In a microwave safe bowl, heat butter and white chocolate for 1 minute. Stir until smooth and combined. 3. In the bowl of a stand mixer, fitted with the whisk attachment, whip eggs until frothy on medium speed. Add sugar and continue to whip on high speed for one minute. Turn mixer to low and add white chocolate mix, vanilla and salt. Mix until combined. Add flour and mix again. 4. Divide batter into three separate bowls. Add one drop of blue to one bowl, a few drops of pink to the second and a few drops of yellow to the third. (Go easy on the amount of blue paste added as too much will turn the rainbow lava flow into a brown mess.) Stir gel pastes into the batter until no white streaks remain. 5. Pour one scoop of each colour of batter into one pan or fill the pan 2/3 full. Bake in the preheated oven for 9-11 minutes. I recommend doing one cake first to practice baking time. Over baking will eliminate any lava. Also, make note that this should be served immediately after baking. 6. Once time has elapsed, remove from oven and let sit for 1-2 minutes. Place a dessert plate over top of the dessert and flip the whole thing over so that the plate is the right way up and the lava cake is flipped over. Remove the pan,
top cake with ice cream or whipping cream, sprinkles and the isomalt sugar explosion (see instructions below)
Procedure: 1. Preheat oven to 350F. 2. In a small saucepan, place one third of the isomalt crystals and 2 tablespoons of water. Stir to coat crystals. Heat on high until reaching 280F on a candy thermometer. At this temperature, colouring can be added. Add a drop of one color per batch. Mixture will bubble furiously, and the temperature will lower. Continue to allow it to boil until reaching 320F. Remove from heat immediately as the isomalt will continue to heat. Pour into an oven proof bowl (I use small glass ones) and place into the warm oven. The heat from the oven will keep the isomalt warm/liquid until the other colors are finished. If the isomalt firms up, simply turn the heat up. 3. Repeat for the second colors. 4. Working quickly, remove isomalt bowls from the oven, and on a silicone mat, splatter the sugar in an explosion like shape. If the isomalt firms up, return it to the oven. 5. Allow sugar pieces to harden before moving. The liquid is extremely hot, so be careful while working with it.

Procedure: 1. Roll out gingerbread dough and cut out house pieces: 4@ 4 1/2" x 5 1/4", 2@ 8" x 5, angled down to 3" at bottom. Remove "door" with a coffin cutter, remove windows with a square cutter. Create chimney with coffin cutter pieces. 2. Bake cookies in preheated oven for 8-12 minutes at 350F. Allow to cool completely (and harden if time permits). 3. Melt yellow hard candies in a preheated oven for 6-8 minutes. Once hardened and cooled, attach to the back of the windows using white chocolate. Once chocolate has hardened, turn the cookie back over and use thin strips of licorice to frame the window. 4. Using candy corn and melted white chocolate, cover the 2 halves of the roof with candy corn shingles. 5. Assemble the bottom part of the house by attaching the back and side with melted sugar. Attach the front and opposite side. Assemble the chimney. Use the melted sugar to glue the roof on the house. 6. Cover the chimney in black chocolate, then press into the sanding sugar. Do the same with the door. On the front of the door attach a chocolate skull and a door knob. 7 Dip the chimney in the sugar and attach to the roof. 8. Use black chocolate to attach black skulls to the eaves trough of the cake. 9. Pipe black spider webs with chocolate and cover in sanding sugar. Pipe 2 crosses with the chocolate as well. 10. Keep cake in fridge until you are ready to serve. It is best consumed within 2-3 days. 11. Let house harden.
Haunted House Candy Corn Cake:

Procedure: 1. Stack cakes starting with yellow at the bottom, and cover in yellow buttercream. Place orange layer on top next, cover with orange buttercream and finish with white cake on the top. 2. Carve the edges of the cake round, making a cliff or rock shape. Reserve two of the corners and place on top for graves. 3. Cover entire cake with grey buttercream. Dab on white and black buttercreams all over the cake and smooth with a cake spatula. 4. On the top of the cake, place a small square of cookie crumbs and add pumpkins and bones. Insert the chocolate crosses into the grave humps. 5. Place tea lights on top of the cake where the house will go and place the house on top of the lights so that the windows glow. Pupil and Iris Ingredients: • 1 package Blue jello • 2 packs gelatin • 1 cup boiling water • 1/2 cup cold • black gel paste
Procedure: 1. In a small bowl, mix the Jello and gelatin together. Add 1 cup boiling water and stir until gelatin is dissolved. Add 1/2 cup of cold water and continue to stir. 2. Remove 1/2 cup blue jello and add black gel paste for the pupil. Pour black Jello into greased small sphere molds, put into freezer 10 mins to solidify. 3. In the bottom of a ball cake pan or round sphere pan, pour 3 tablespoons of blue jello and let partially solidify. 4. Add pupil and 2 more tablespoons of blue jello. Place into the fridge until solidified.
Procedure: 1. Prepare sclera by blooming gelatin in 1/2 cup milk, and heating the rest of the milk for 3 minutes in the microwave. Combine the milk and gelatin, stir until gelatin has dissolved. Add the sugar. 2. Allow to cool to room temperature, gently pour on top of pupil/iris. Fill to the top of the pan. 3. Repeat recipe for second half of eyeball. 4. Prepare blood slime (recipe below) 5. Core out the center of the half of the eyeball without the pupil/iris. Fill hole with blood slime. Add a few tablespoons of extra milk/gelatin mixture and let solidify (this is to prevent the red from bleeding into the white). 6. To join the two halves, pour additional extra milk/gelatin mixture on top and then place pupil half on top, pushing out any extra. Put in the fridge to solidify. 7. Once solid, paint on red veins with red gel paste. 8. Remove eyeball from bottom cake pan right before serving. Jello eyeball is best consumed withing 2-3 days.

Procedure: 1. Stack the 10" cakes first, on a 12" cake board, using the black buttercream to fill the layers. Finish stacking with the two 9" cakes. 2. Taper the bottom (which is the top 9" cakes) so that the 9" and 10" cakes meet smoothly. Don't make your base (which is the top) smaller than 8" round. Cover the whole cake in black buttercream. 3. To flip the cake over, place an 8" cake board on top of the cake. Place one hand on top, one underneath the cake and flip it over. Remove the base 12" cake board (now on the top) by sliding a sharp knife or spatula between it and the cake. 4. Cut out a hole in the middle of the cake large enough to fit the plastic bowl. Place 4 dowels underneath where the bowl will fit, and place a small 4" cake board on top of the dowels. Cover the inside of the hole and the top of the cake in black buttercream. Use a hot spatula to smooth the cauldron. Place the bowl into the whole. 5. Using a large round tip (Ateco 809) pipe a round rim to the cauldron. On either side of the cake, use the same tip to pipe handles onto the pot. 6. Cover the top of the cake in the multi coloured gum balls and candies. 7. On the top of a 12" round black cake board, lay out the pretzel rods and orange candies in a ring. Secure in place with black buttercream. Place extra pretzel rods into the middle for extra support of the cake. Transfer the cake to the top of the "fire" and make sure that it is stable. 8. Set the mist maker up, fill the bowl with water, and place the fogger into the water. When ready to display, turn the fogger on, but not before! Water on the gum balls can cause the gum balls to lose their color. 9. Keep cake in fridge until you are ready to serve. Pumpkin Spice Syrup Recipe Ingredients: -1 and 1/2 cups water -3/4 cup light or dark brown sugar -1 cup granulated sugar -2 teaspoons ground cinnamon -1/2 teaspoon ground ginger -1/2 teaspoon ground cloves -1/2 teaspoon ground nutmeg -1/4 cup pumpkin puree -1 tablespoon vanilla extract
Directions: 1. In a medium saucepan, add water and both sugars. Simmer on medium-low heat until the sugar dissolves, about 4 minutes. 2. Turn the heat down to low and whisk in cinnamon, ginger, cloves, nutmeg, and pumpkin puree. Simmer for 8 minutes, stirring occasionally. Do not allow the mixture to come to a boil. 3. Remove from the heat and strain through a mesh strainer lined and/or cheese cloth. 4. Allow the syrup to cool to room-temperature before stirring in the vanilla extract. Store in a mason jar or airtight container.

How to Make a Fantastic Beasts and Where to Find Them Cake (Harry Potter Cake) Ingredients -Two 9x13 cakes (youtu.be/bbDAJZhpvbo) -Chocolate buttercream (youtu.be/948maLMHQy0) -Fondant- brown (light, medium, dark) -Brown color dust -Gold luster dust
Procedure 1. Slice one cake in half and attache to a cake board. Cover this cake, and the full 9X13 cake in chocolate buttercream. Place into the freezer until the cake is frozen to the board. 2. Roll out fondant in a rectangle. Place a frozen cake upside down directly on top of the rolled fondant. Carefully trim any excess from around the cake. Roll out strips of fondant to match the edges of the cake. Repeat for both pieces of cakes. 3. Flip bottom cake over. Roll out dark fondant and cut 1/2" strips to go around the edge on top of the cake. Cut 4 circles out of the fondant, and using the top of a number 5 tip, press circles into for grommets. Attach pieces to the cake with water. 4. Switch to working on the upper part of the cake. cut 1" strips the length of the edges and cover the corners with circles with grommets pressed in. Using a stitching tool, stitch a line about 1/4" up from the bottom. About a 1/4" above the stitch line, press grommets into the fondant. 5.Make latches, locks and handle with fondant. Combine the gold luster dust, a small amount of brown color and a small amount of vodka and mix together. Brush it onto the pieces with a paint brush. Cut out handle attachments, and shape handle. Shape hands and claws for the monster. 6. Attach dried pieces to the cake with a small amount of water. 7. Place hands above the handle in between the two cake layers. Place top of the suitcase on the cake. Add additional brown color dust as desired for distressing the cake. 8. Serve when desired. Cake is best kept in a sealed container in the fridge and consumed within 2-3 days.

Procedure: 1. Preheat oven to 350F. Line cupcake pan with cupcake liners. 2. Cover bottom of each cupcake with about a tablespoon of black cake batter. Repeat addition of cake batter colours until the well is 2/3 full. Place cupcakes into the preheated oven for 20-22 minutes. 3. Allow cupcakes to cool completely before frosting. 4. Stripe the inside of a piping bag fitted with a 1M tip with the various colors of gel paste. Add the buttercream and pipe a classic swirl on top of the cupcake. 5. Using white colouring and a paint brush, splatter paint the top of the cupcake with white coloring. 6. Decorate with rock candy, cola balls, dragees, and edible glitters as desired, 7. Procedure: 1. Preheat oven to 350F. Grease two 8" cake pans and two 6" cake pans. 2. Cover bottom of each cake pan with one cup of cake batter, spread thinly. 3. Cut coloured cakes into wedges. Using a 1.25" circle cutter, cut the wedge into circles. Place the thinner circle in one pan, and press it into the batter near the center of the pan, and the thicker circle in the other pan, towards the outer edge. Repeat cutting wedges, and cutting circles out and placing into the batter until two rings of bubbles is complete. 4. Cover the coloured cake with additional cake batter until all pieces are covered. 5. Bake the cakes in the preheated oven for 60-70 minutes, or until the edges are golden brown and the cake is completely cooked in the center. Allow to cool completely. 6. Once cakes have cooled completely, level and stack cakes. Use the hot pink buttercream to fill between the layers, and cover cakes in light pink. 7. Place three wood dowels into the larger cake and cut flush to the top of the cake. Stack with smaller cake on top of the support dowels, slightly hanging the cake over the edge of the larger one below. Insert one to two additional dowels through both layers. 8. Starting on the bottom layer, cover the entire cake in gum balls! 9. Cover half of the top layer with gum balls. 10. To the top of the cake, place the edible bubbles, homemade bubble gum, sprinkles, and additional gum balls of both sizes. Work the gum balls up the front of the cake and place sprinkles in between the gum balls. 11. Fill an 8" round fish bowl with large gum balls and place the cake on top for display. 12. Slice and serve when desired. Procedure: 1. Prepare cakes according to recipe. Allow to cool completely and level cakes before stacking. 2. Stack cakes and cover in vanilla buttercream. Apply splotches of blue and pink buttercream randomly around the cake. Using a flat spatula, or flat edge, smudge coloured buttercream onto and into the vanilla buttercream. 3. Cut out 2 halves of a bat from fondant mixed with tylose or gum paste, and line with cake dowels for support. Allow to dry for at least 24 hours. Insert into the sides of the cake. 4. Print out a Harley Quinn skull image, and cut it out of black fondant. Cut the left ponytail with blue fondant, and the right with red fondant. Cut out the spade from black, and the clubs from red. Cut out additional hearts from black fondant. 5. Place fondant skull on the side of the cake, arranging the pieces into place. Add hearts around the cake. 6. Add rock candy, lollipops, gum balls, cotton candy etc to the top of the cake. 7. Keep cake in fridge until you are ready to serve . Break or cut mixture up into small pieces and grind with a spice or coffee grinder. 4. Store in a sealed container for later use.

Combine gelatin, luster dust, gel paste, airbrush color and water in a small bowl. Stir until mixture is combined. 2. Spread mixture onto a piece of acetate and allow to dry overnight or until the mixture is completely dry. 3. Break or cut mixture up into small pieces and grind with a spice or coffee grinder. 4. Store in a sealed container for later use.
