INGREDIENTS + NOTES
#1 Breakfast in the Woods 1:42
1 loaf of bakery bread vg cheese of choice, wrapped in basil black berries
#2 Peeta-Bread 3:42
½ cup (125ml) boiling water 1 tbsp sugar ½ cup (125ml) cold water 2 tsp dry active yeast ½ cup (60g) flour, for the yeast mixture
2 ½ cups (300g) flour, plus a lil more for the surface, if needed 1-2 tsp salt 2 tbsp olive oil, plus a few tsp more olive oil for your hands, the mixing bowl, the surface later, and the baking sheet
2 tbsp apple sauce 1 ½ tsp vanilla extract ⅓ cup (80ml) sparkling wine or sparkling water ⅓ cup (80ml) non dairy milk ⅓ cup (80g) melted vegan butter 1 tbsp white wine vinegar ¾ cup (150g) sugar 2 cups (240g) flour 2 tsp baking powder 1 dash of cinnamon 1 dash of cardamom ⅓ tsp salt 1 large handful of berries (would actually recommend blue/black/raspberries over the chopped strawberries! strawberries give you more of a fruit punch flavor) 1 small handful of almond slivers, plus more for the top’* vegan butter for greasing 9 molds
* add 1 sprinkle of almond slivers on top after 10-15 min of baking → 9 muffins
#3.1 Effie’s Chocolate Covered Strawberries 10:20
10 large strawberries* 100g bittersweet chocolate chips ** (3.5oz)
*make sure the berries are DRY before dipping them into the chocolate ** melt chocolate using the microwave, water bath or oven method. Microwave:Place the chocolate in a microwave-safe bowl. Microwave for 30 seconds at a time, removing and stirring between, until the chocolate has melted thoroughly. Oven: Place chocolate in an oven proof bowl. Place inside the oven at 150C for 5 min, or until halfway melted. Carefully remove the bowl and let sit for 5 min, then mix until fully melted.
#3.2 Katniss' Hot Chocolate 11:27
2-3 tbsp chocolate chips pinch of salt 1 cup (240ml) milk of choice optional: ¼ tsp vanilla or pinch of cinnamon serves 1
#4 Cozy Stew for Katniss 12:12
for the seitan: 1 tbsp olive oil 1 tbsp white wine 2 tbsp soy sauce 1 tbsp maple syrup 1⁄4 cup (60ml) vegetable broth 1 cups (130g) vital wheat gluten 1 tbsp oil for frying the seitan
1 tbsp vegan butter 1 large onion 3 cloves garlic 2 tsp brown sugar 1 tbsp soy sauce 1 tbsp tomato purée 1 cup (250ml) red wine 2 cups (500ml) vegetable broth 2 bay leaves 1-2 cups water (250-500ml), added bit by bit, as the stew is simmering 1 handful dried plums, chopped 2-3 medium carrots, chopped tiny pinch of nutmeg, cinnamon black pepper and salt, to taste onion and garlic powder, to taste slurry: 1 tsp cornstarch plus ¼ cup (60ml) water 2-3 tbsp fresh chives, chopped
served with: 4 servings wild rice, flatbreads, apples, plant based cheese
→ serves 3-4
#5 Peeta’s Camouflage Rock Cake 15:09
batter: 2 tbsp apple sauce ¾ cup (180ml) non dairy milk 1 tbsp white wine vinegar ¾ cup (150g) sugar ⅓ cup (80ml) melted vg butter or sunflower seed oil 2 tsp vanilla extract or a few drops vanilla aroma 2 cups flour (240g) 2 tsp baking powder ½ tsp salt
To 1/4 of the batter add a little bit of green food coloring and ¼ tsp turmeric powder
buttercream*: 200g vegan butter, room temp, cubed (1 cup minus 1 1/2 tbsp) 340g - 500g powdered sugar (3 cups - 4 1/4 cups) generous pinch of salt a few drops vanilla aroma
also: black and blue food coloring
*First, whip the butter for 1-2 minutes until fluffy. Then, add the powdered sugar in stages of ½ - ¾ cup. Once you are happy with the consistency, stop adding sugar. Whenever you don’t need the buttercream, place it in the fridge. Whenever you let the cake rest whilst decorating, it needs to chill in the fridge!!

1 Shot of Matcha, consisting of: 1 tsp matcha powder 1 splash of hot water (2-3 tbsp)

for the cold brew: 40 coffee, coarsely ground (½ or 1.4oz) ½ cup (125ml) hot water 2 ½ cups (625ml) cold water
for the matcha cold brew:
2 shots of matcha 2 tsp vanilla syrup ice cubes cold brew, to taste non dairy milk, to taste
→ serves 2
I like to fill about ⅔ cup with cold brew, then ¼ cup milk and then the matcha shot. But play around with different ratios and see what u like best!

1 cup sugar (200 g) 1 cup water (240ml) 2 tsp vanilla extract or 6-10 drops vanilla aroma 1 tsp tonka bean paste or 1 ½ tsp tonka bean sugar

1 onion 100g smoked tofu (3.5oz) 3-4 sundried tomatoes in oil 1-2 tbsp oil from the tomatoes ~120g pasta of choice (4.3 oz) 3-4 handfuls fresh baby spinach 3-4 ladles of pasta water 2 heaping tbsp hummus 1 tsp white wine vinegar salt and pepper to taste → 1-2 servings
2 ‘frozen’ bananas 200g soy yogurt (7oz) 1 tbsp vg vanilla protein powder 1 tbsp cocoa powder 1 tbsp almond butter dash of cinnamon 1 handful of ice also: berries, and rawnola from recipe #1
#4 Spiced Coconut Oatmeal
50g oats (½ cup) pinch of salt 2-3 tbsp shredded coconut 1-2 tsp almond butter 1-2 tsp biscoff spread 125ml water (½ cup) 125ml oat milk (½ cup) → for 1
#5 Strawberry Smoothie
~150g frozen strawberries (~ 1 cup) 1 tbsp vanilla protein powder 1 tbsp almond butter 1 banana pinch of salt ~125ml oat milk (½ cup), more if needed → for 1
#6 Oyster “Chicken” Bites
200g oyster mushrooms (7oz)
for the flour mixture: 90g flour (¾ cup) 3 tbsp corn starch 1 tbsp nutritional yeast 1 ½ tsp sugar ½ tsp vegetable broth powder or salt ¼ tsp onion powder (and, or garlic powder) ¼ tsp black pepper ½ tsp baking powder
for the milk mixture:
180ml vegan cream or milk (¾ cup) 2 tbsp white wine vinegar 1 tbsp sriracha (or do 1 tsp for less spice)
also: up to 60g (1 cup) panko bread crumbs, added to the bowl 1 few tbsp at a time vegetable oil, enough to fill your pot about 5-7 cm (2-3 inch) deep
NOTES: - bring the oil to medium high to start with - test the temp with a wooden spoon, once you can see bubbles forming around it, it’s ready. If you have a thermometer, you’re looking for 160-175C, about 325F - once it reaches this temp, i lower the heat to medium to prevent it from getting too hot you don’t want your oil to be smoking! (180C or higher) - always take a few steps back when deep frying, add the bites carefully! - i only deep fried enough mushrooms for 1 serving, and then saved the remaining ingredients for recipe #8, if you fry all the mushrooms you’ll have around 4 servings, depending on use - optionally, you can pour over this hot syrup right after they come out of the pan (1 tbsp rice syrup, 2 tsp white wine vinegar, 2 tsp soy sauce, 1 tbsp frying oil, 1 tbsp water)
#7 Fun Ginger Mint Drink
1 handful ice cubes 1 squeeze of fresh lemon juice, more to taste 4 thin ginger slices 4 thin cucumber slices 1 little twig of mint about ½ cup ginger ale about ¼ cup sparkling or still water → for 1
#8 Baked Oyster “Chicken” Bites
Same ingredients as recipe #6 but using only 2-3 tbsp oil, lightly brushing it on top of the breaded mushrooms
#9 Random Mushroom Noodles
1 onion 1 small piece of ginger oil for the pan 1 handful of oyster mushrooms ½ can chickpeas 125g mie noodles (4.4oz) 1 small handful of mint 1 tbsp white miso paste 1-2 tbsp warm water 1 tbsp white wine vinegar or lemon juice 1 tsp rice vinegar a few tbsp ready made caesar salad dressing (sub w hummus maybe?) roasted sesame seeds steamed broccoli vegan chili mayo

*make sure the two pasta types roughly cook around the same time, a few min difference is okay!

3 handfuls lettuce, chopped for the dressing: 2 tbsp unsweetened soy yogurt 1-2 tsp olive oil 1 tbsp white wine vinegar ½ tsp mustard pinch of salt dash of black pepper ½ tsp rice or agave syrup

175g (a little over 1 cup) pitted dates (it was 25 deglet noor dates exactly) ⅓ cup (80ml) brown rice syrup (or maple or coconut blossom syrup) 2 ½ tbsp softened vegan butter 1 tsp vanilla or a few drops vanilla aroma 1 - 2 tbsp white miso paste (start with one, see if you need more) 3 - 5 tbsp non dairy milk to adjust consistency (start with three, see if you need more) → serves 4
→ store the caramel in the fridge, sealed, for up to a week! → use it in porridge, smoothies, yogurt bowls, to dip fruit into, it’s so yummy!

*defrost the tofu, either by letting it sit on the counter for a few hours, OR by letting it sit in a pot / bowl filled with hot water for about 5 min **use a non stick pan (for all these recipes) → serve in bowls, wraps, salads or as a snack with a dipping sauce

buttercream frosting:
125g vegan butter, at room temp, cut into chunks (1/2 cup + 1 tbsp or 4,4 oz) a generous pinch of salt 125 - 250g powdered sugar (1 cup - 2 cups)
How to make the frosting: 1. beat the butter until fluffy 2. add the salt and the first ½ cup (50 - 60g) of powdered sugar 3. Mix with electric hand mixer 4. add another ½ cup sugar 4. Blend again continue adding sugar bit by bit, stop once you have a nice frosting consistency
Same instructions for cream cheese frosting: ~ 80g room temp vegan butter (1/3 cup + 1/2 tbsp OR 2.8oz) 1 heaping tbsp vegan sour cream / cream cheese pinch of salt 125 - 250g powdered sugar (1 cup - 2 cups)

1-2 handfuls mushrooms, roughly chopped 2 shallots lil bit of oil 2 tbsp vegan kimchi 2 handful baby spinach 1-2 tsp soy sauce 1 tsp sesame oil 1 tsp white or rice wine vinegar
for the sauce:
1 heaping tsp gochujang 1 tbsp soy sauce 1 tsp olive oil 1 tbsp white wine vinegar 2 tsp agave or maple syrup (forgot to mention!) 1 tsp bbq sauce
1-2 servings cooked rice , quinoa or couscous In a small bowl I combine 60g couscous plus 1 pinch of salt, then I add just enough hot boiling water till the couscous is just covered (about 90ml). Letting the grain absorb the water for 6-10 min.

use a tamper to constantly push down the ingredients towards the blade, as it’s blending. be careful doing so! Use more liquid if necessary, but risk a soupier smoothie bowl this way

#2 Salt & Vinegar Roasted Cabbage 2:35
½ napa cabbage, cut into thick strips 1 tbsp olive oil 1 ¼ tbsp white wine vinegar generous pinch of salt a dash of black pepper optional: other spice mixes of choice, roasted sesame seeds for the finish
→ yields 2 baking sheets of cabbage → roast for 10 - 15 minutes at 180 C , or until golden brown, depending on how crowded your baking sheets are, the cabbage can take up to 20 minutes, keep an eye on it !! For example, if you give the cabbage pieces a lot of space on the sheet they will cook really fast, for only around 10 minutes. Hope i am not confusing anybody haha just keep an eye on your oven
→ serves 1 as a snack, 2 as a side

4 tbsp quick cooking oats a pinch of salt 2 ½ tbsp protein powder (choc, vanilla, caramel flavored) 1 tsp ground flax seeds 1 ½n tbsp unsweetened cocoa powder* 1 medium banana ~ 90g = 3.17oz 3 tbsp peanut butter
3 - 4 tbsp chocolate chips optional: extra sprinkles or chopped nuts for the finish
*if u want a more intense chocolate flavor, add another ½ tbsp cocoa If you want the dough to be sweeter, add 1-2 tsp powdered sugar or coconut sugar. However the melted chocolate gives it a nice level of sweetness, so that may not be necessary.
→ yields 5 - 6 cookies

1 handful frozen korean rice cakes (or however many u want to eat) a drizzle sriracha (or whatever hot sauce you prefer)
for the tahini sauce:

In today’s video I get to try and create vegan versions of traditional holiday treats - hungarian beigli, scandinavian lussekatter, german gingerbread cookies AKA lebkuchen, decadent canadian nainamo bars with a christmas twist AND a portuguese sweet noodle dish called Aletria. This was so fun to make!
80ml (1/3 cup) non dairy milk 1 tbsp powdered sugar for yeast mixture 3 tbsp apple sauce 1 packet dry active yeast (7g = 0,25oz) 270g flour (2 cups + 3 tbsp) (+ a little more for the surface+) 3 tbsp powdered sugar for flour bowl 1/3 tsp salt 100g vegan butter, cold and cut into cubes 1 tsp orange zest 1 tsp vanilla
Brush with: 2 tbsp non dairy milk + 1 tbsp date syrup
*knead until not super sticky anymore, add a little more flour if needed Yields 2 rolls

#2 Monday’s Summer Rolls
I really eyeballed the ingredients here, but per roll you let 1 round rice paper sheet soak in water for 5 seconds. Then add your fillings to the center of the sheet. Once the paper is soft enough to fold, grab the edge that’s closest to you, fold it over the filling, then slightly pull the filling towards you. Fold in the left and right edge of the rice paper. Then roll everything up, away from you. DONE
#3 Tahini Hot Chocolate
2 tsp unsweetened cocoa powder 1 tsp white tahini 1 - 2 tsp rice syrup ½ tsp vanilla (or vanilla sugar in my case) about ¼ cup (60ml) hot water ½ cup (125ml) non dairy milk plus, if you wish another ¼ cup (60ml) to froth up for some added foam → serves 1

#6 Improvised Winter Rolls
½ can (120g = 4.2oz) chickpeas, mashed 1 tbsp olive oil 2 handfuls shredded white cabbage 2-3 tbsp vegan kimchi about ⅓ cup (about 5 tbsp) fried (oyster) mushrooms , chopped 2 tsp soy sauce 1-2 tbsp chopped chives 1 tsp roasted sesame seeds 6-8 rice paper sheets hummus for serving fresh cucumber chunks for serving
#7 Lazy Pumpkin Feta “Flatbreads”
1 sheet store bought pastry dough* (Flammkuchen Style preferred) otherwise try Tarte or Pizza Dough (puff pastry MAY work - not sure but feel free to try) 150g (5.3oz) vegan cream cheese 1l red onion, thinly slices ½ small hokkaido pumpkin, thinly sliced 1-2 handfuls of store bought roasted peeled chestnuts, chopped 200g (7oz) vegan feta cheese a sprinkle of chili flakes a sprinkle of black pepper optional: 100g (3.5oz) smoked tofu, cut into cubes
The baking time will vary depending on your chosen dough, however, it’ll take at least 20 minutes anyway, because the pumpkin needs to cook through first. I was fine baking it for 25 - 30 minutes (even though on the packaging it may say less time) Just keep an eye on the edges of the pie to make sure they don’t turn too dark. If you feel like they are becoming a little dark turn down the oven’s temp a little to 150 / 160 C ?
*the size of an average size baking tray, or a bit smaller than that

#1 The 1975 Chocolate Brownies
150 g dark chocolate (5.3oz) 125g vegan butter (1/3 cup + 1 tbsp) 125 ml plant milk (1/2 cup) 60g apple sauce (1/4 cup) 1 tbsp apple cider vinegar 1 tsp vanilla 30g unsweetened cocoa powder (1/4 cup) 135g light brown sugar (1/2 cup + 2 tbsp) 135 g flour (1 cup + 1 1/2 tbsp) 1 tbsp cornstarch 1 tsp baking powder 1/2 tsp salt 150 g dark chocolate (chopped), to be added in last
*yields enough for one 8x8 inch (20cm) brownie
#2 Sesame Syrup (from my Cookbook)
1 1⁄2 tbsp white tahini 11⁄2 tbsp agave or maple syrup a pinch of salt 1 to 2 tsp non dairy milk
for the sesame latte:
1-2 tsp sesame syrup 1 shot espresso ⅓ - ½ cup (80ml - 125ml) frothed hot plant milk
dough: 5 - 7 ice cubes mixed with ½ cup (125ml) cola or other soda of choice* 300g flour 1 tsp salt 2 tbsp powdered sugar 200g vegan butter, COLD
*You won’t need to add the entire ½ cup of cola, Add it 2 tbsp at a time, until the dough comes together. I used ⅓ cup (80ml) of the icy coke in total. The rest you can use for the filling!
filling:
2-3 cups frozen cherries (300-550g) optional: 1 cup frozen blueberries (150g) ¼ cup (60ml) cola 3 tbsp sugar 1 tsp vanilla ¼ cup cornstarch (30g)
also; more flour for the surface, 1-2 tbsp cola for brushing the top
→ yield 1 8 - 9 inch cake
#4 AM’s Black Treacle Flapjacks
150g (5.3oz) vegan butter 120g (1/2 cup + 2 tbsp) brown sugar 150g (5.3) black treacle 1/3 cup (80ml) NDM 200g (2 cups + 1 tbsp) rolled oats 200g (2 cups + 1 tbsp) small cut Pinch of salt 1 tsp baking powder 1 tsp vanilla

#2 Lazy Cozy Tomato Soup 2:15
200g (7oz) firm tofu 1 tbsp cornstarch pinch of salt added to tofu and starch (did not mention in video) about 1 tbsp veg oil for pan 5-6 tbsp of your favorite store bought tomato sauce ½ cup (125ml) water, more if needed ½ can (120g or ¾ cup) chickpeas, rinsed and drained 2 handfuls fresh baby spinach optional: bread
#3 Red Bean Overnight Oats 3:41
2 tbsp sweetened red bean paste * ½ cup small cut oats (50g) pinch of salt 1 tbsp ground flax seeds ½ cup thick vegan yogurt (120g) ⅓ cup water (80ml) a handful of raspberries, or other fruit (cut into chunks if needed)
*if you don’t want to do the layers you can also just spoon the paste on top of the oats as a topping :)
#4 Spinach & Kimchi Kimbap Sandwiches 5:22
⅔ cup (120g) short rice, uncooked generous pinch of salt for rice water about 1 cup (250ml) water for the rice
2 big handfuls of fresh spinach 1 tbsp olive oil optional: 2 cloves garlic splash of water to help the spinach wilt down pinch of salt for the spinach 2-3 tbsp vegan kimchi optional: 1-2 tbsp vegan cheese (that’s able to melt) 2 sheets of roasted seaweed
3 pieces of bread, toasted ½ can (120g or ⅔ cup) white beans, mashed 1 tbsp vegan cream cheese pinch of salt ½ avocado pickled onions
for the pickled onions: 2-3 red onions, cut into thin slices 1 tsp salt 1 tbsp rice syrup or sugar ½ cup (125ml) vinegar of choice ½ cup (125ml) hot water
Today’s video is basically a What I Eat in a Week - Snack Edition. I challenged myself to test out a different snack each day, snacks inspired by traditional recipes from around the world! I made lazy gluten free samosas and daifuku mochi, made my own version of vegan bounty and alfajores, went to Switzerland, had some delicious snacks there, and then at some point I also made empanadas. It was a super fun and eventful week for sure! Hope you enjoy!

3-4 medium sized potatoes 1 yellow onion 1 small green chili, seeds removed 2 cloves garlic 1 inch (2,5cm) piece of ginger 1 tbsp vegetable oil 1 tsp sabji / chaat / garam masala (or any other spice mix u prefer) 1 tsp agave or sugar 2 tsp white wine vinegar ⅓ cup (60g) frozen peas 1-2 tbsp melted vegan butter (optional but recommended) 1 handful cilantro, roughly chopped salt to taste 4 - 5 round rice paper sheets, around 15cm / 6 inch in diameter veg oil for frying the bites Chutney or other sauce of choice to serve this with, I recommend vg sour cream / cream cheese !

#2 Vegan Bounty
1 ½ tbsp cold vegan butter 1 tbsp cold coconut oil 200g (2 cups) desiccated coconut a generous pinch of salt ¼ tsp cinnamon, optional 2-3 tbsp agave or maple syrup 100ml soy cream (⅓ cup + 1 tbsp) 2 tbsp cornstarch (mixed in last)
Allow this mixture to rest in the fridge while you melt the chocolate!
150g (5.3oz) - 200g (7oz) bittersweet chocolate
→ yields 10 bars
#3 Small Batch Daifuku Mochi
60g glutinous rice flour (1/2 cup) 2 1/2 tbsp sugar Pinch of salt 100ml water (1/3 cup plus 1 1/2 tbsp) 3 - 5 tbsp cornstarch to sprinkle on the baking sheet, the rolling pin, the dough, to cover your hands with
5 - 6 small to medium strawberries 5 - 6 tbsp sweet red bean paste
→ yields 5 - 6 mochi
#4 Vegan Alfajores
for the dough:
1 1/2 tbsp cornstarch 180g (1 1/2 cups) all purpose flour, more for surface 60g powdered sugar (½ cup) 1/3 tsp salt 1 tsp baking powder 100g vegan butter (1/2 cup minus 1 tbsp), half melted 1 tbsp apple sauce Zest of 1/2 lemon
for the filling:
200ml soy cream (¾ cup plus 1 1/2 tbsp) 50g sugar (¼ cup) generous pinch of salt 1 tsp vanilla 1 tbsp vegan butter 1 tbsp cashew butter
→ stir every few minutes as the “caramel” cooks for 25 min over medium low
#5 Black Bean Empanadas
for the dough:
180g (1 1/2 cups) flour, plus more for surface if needed 1 tbsp cornstarch 1/2 tsp salt 1 /2 tsp baking powder 70g cold butter, cut into cubes (2.47oz or 1/3 cup) 60ml COLD water (1/4 cup)
for the filling:
5 baby peppers or 2 regular sized ones 2 tbsp marinated olives, pitted olive oil for the pan 1 tbsp tomato paste spices of choice (i did ¼ tsp each: coriander, cumin, chili flakes, black pepper) a splash of red wine 1 cup black beans (170g) salt to taste
vegan pizza cheese, about 1 tbsp per empanada also: a little flour for the rolling pin / surface

#5 Cozy Vegan Ramen - 2 Ways 6:55

for VERSION 1 add: 1 tbsp miso paste 1 tsp tahini or sesame oil

*Baking Container Sizes :
If choosing to make one Cake - use an oven proof mug or container , able to hold at least 200ml (6,8 fl oz) ! Bake for 25 - 30 min.
In the video I used a 180ml (6 fl oz) ramekin and a small 125ml (4,22 fl oz) oven proof bowl.
The 180ml took 25 min in the oven and the 125ml took 20 min!

roasted seaweed sheets (i used up about 2 packets total, 2-3 small squares per omelet layer) optional: a pinch of kala namak, added right before serving
→ Yields 6-8 omlette layers! I recommend doing 3-4 per roll, so you get 2 rolls total
for the kimchi
a few tbsp vegan kimchi a handful of vegan pizza cheese (USE A NON STICK PAN)
1 serving of cooked rice cucumber, cut into ribbons using a vegetable peeler
2 slices of bread 6 - 8 slices of smoked tofu oil for the pan hummus vegan pesto 1 small pre-cooked beet, cut into slices everything bagel seasoning, or other spice mix of choice
a handful of broccolini pieces about ¼ cup (60ml) of water for steaming (make sure the oil in the pan you used to fry the tofu isn’t hot anymore when adding the water! Otherwise clean the pan first before adding the water)
#3 Crispy Filled Rice Bites ft. my new fav Glass Noodles 5:30
150g short rice (¾ cup) 300ml water (1 ¼ cup) generous pinch of salt (added to the rice pot) → bring up to a boil, then reduce heat to medium low, allow to simmer, covered for 15 min until water is absorbed, then remove from the heat, allow to sit, still covered for at least 5-10 more min → shape rice once it’s cooled down quite a bit
for the salad: a small handful of dried seaweed 100g glass noodles (3.5oz)
dressing: 3 tbsp white wine vinegar (or 2 tbsp rice vinegar) 2 tsp sesame oil 2 tbsp soy sauce 1 tbsp olive oil 2 tbsp agave syrup ½ tsp bagel seasoning (or roasted sesame seeds) small pinch of salt 1 tsp white or red miso paste
1 small carrot, cut into ribbons ⅓ cucumber, cut into ribbons

#4 Spiced Baked Tempeh w Crispy Fried Tofu Sticks 9:07
for the tempeh: 200g - 250g tempeh (7 oz - 8.8 oz) ~ 250g cherry tomatoes (~ 8.8oz) 4-5 cloves garlic peeled 2 inch (5cm) piece of fresh ginger, peeled, cut in half 3 - 4 tbsp olive oil ½ cup (125ml) passata or crushed tomatoes a generous pinch of salt ½ tsp cumin pinch of cinnamon ⅓ tsp chili flakes, more to taste ¼ tsp ground turmeric 1 ½ tbsp agave syrup or sugar → bake covered for 50 min - 1 hour
for the tofu:
1 block tofu, cut into sticks ⅓ cup (80ml) non dairy milk ½ cup (60g) cornstarch combined w 1 generous pinch of salt ½ cup (45g) panko bread crumbs, more if needed
frying oil (sunflower seed for example), enough so the oil covers 2-3 inches / 5-7,5cm of your pan, does that make sense

#2 Sweet & Sour Veggie Noodles
for the veggies: 1 small sweet potato ½ aubergine 1 zucchini 1 bell pepper 1 tbsp oil generous pinch of salt

for the sauce: 3 cloves garlic 30ml soy sauce (2-3 tbsp or 1/8th cup) 1 tbsp ketchup 1 tbsp white wine vinegar 1 tsp sesame oil 3 tbsp water, more if needed 1 tsp cornstarch if needed: additional salt (taste test after combining sauce and noodles)
additional toppings of choice (sesame seeds, tahini dip, spring onion …)
→ serves 2-3
#3 Banana Pancakes
1 medium ripe banana 2/3 cup oats (60g) 1/4 tsp salt 2 tsp chia seeds 1 tbsp cornstarch 1/2 tsp vanilla 1/2 cup plant milk (125ml) 1 1/2 tsp baking powder 1 tsp white wine or apple cider vinegar
1 bell pepper 2 cloves garlic 1 tbsp veg oil for the pan
3 servings cooked rice (i cooked up 180g dried rice for that)
- Finely crush the cornflakes, the smaller, the better they stick to the tofu I have found! - It's best to add the cornflakes in stages to the bag / bowl, one handful at a time, so they won’t get super soggy. So cover 5 - 6 tofu bites, place them onto the baking sheet and then add a fresh new handful of flakes to the bag / bowl. Crush them up again, then add the next batch of tofu bites and so on. - Some cornflakes are going to fall off when placing the bites onto the baking sheet, but that’s okay! - If there is not enough marinade left frying the rice, feel free to make some more! maybe about half?

2-3 medium potatoes, cut into cubes 2 tsp sriracha, or to taste depending on how spicy you want it 2-3 tsp vegetable oil generous pinch of salt hummus sauce: 1 tbsp store bought hummus 2 tsp lemon juice 1 tbsp non dairy milk or water
basil for serving, optionally more hot sauce → serves 1

60g vegan cream cheese at room temp (2.1 oz or 2 heaping tbsp) 40g vegan butter at room temp (1.4 oz or 2 heaping tbsp) ½ tsp vanilla extract or a few drops vanilla aroma 2 tbsp unsweetened cocoa powder 120g powdered sugar (1 cup), added in 2-3 stages
2 pieces of bread 1 avocado ¼ tsp lemon zest a squeeze of lemon juice a drizzle of sriracha pinch of salt pinch of chili flakes and or garlic powder sesame seeds for serving → serves 1
3 corn cakes (or rice cakes) 3 tbsp vegan cream cheese or vegan sour cream 2-3 tbsp applesauce dusting of cinnamon → eyeball amounts depending on preference
#6 Healthy Banana Fudge with Cookie Topping 8:35
2 ripe bananas 150g cashew butter (⅔ cup minus ½ tbsp) 30g unsweetened cocoa powder (3 tbsp) 3 tbsp maple syrup 1 tbsp powdered sugar (or 4 tbsp syrup / powdered sugar total) 1 tsp vanilla extract or a few drops vanilla aroma ¼ tsp salt 2 ½ tbsp softened vegan butter 30ml vegan cream (⅛ cup or a splash), optional if needed 1 - 2 tbsp non dairy milk, to help this mixture blend 4-5 vegan cookies, crushed

#2 Murray’s Risotto
a small handful of dried mushrooms (i used morels) 1 vegetable broth cube 800ml hot water (3 ¼ cups), added 2 ladles at a time 1 medium red onion or 2 small ones ~200g (7oz) cremini mushrooms 2-3 cloves garlic 1-2 tbsp olive oil 1 cup risotto rice (210g) ¾ cup white wine (180ml) 1 tbsp white wine vinegar or lemon juice ¼ cup + 1 tbsp (25g) vegan parmesan cheese (cashew or storebought) 2 tbsp chives, chopped 1 tbsp vegan butter
→ serves 2
#3 Homemade Sandwich Bread
1/2 cup cold water (125ml) 1/2 cup boiling water (125ml) 3 tablespoons (60g) vegan butter 1 ½ tablespoons (25g) granulated sugar 1 packet active dry yeast
3 cups + 2 tbsp (380g) flour, more for surface 1 ½ tbsp vital wheat gluten (sub with flour) 1 1/2 teaspoons salt (i like this level of salt, but feel free to do 1 tsp or 1 ¼ )
put into the cold oven turn heat to 180C then bake 30-35 min until a knife poked into it comes out clean, and it sounds kinda hollow when you knock on it
→ yields 1 loaf (use a 25cm loaf pan, or something around that size)
#4 Vecna’s Layer Cake
FOR THE CREPES:
180g all purpose flour 2 ½ tbsp cocoa powder 2 tbsp corn starch 1 tsp baking powder 1/4 tsp salt 2 ½ tbsp raw sugar 1/2 tsp vanilla 1 1/2 cups non dairy milk (375ml) 2 ½ tbsp water 1 tsp apple cider vinegar 1-2 tsp black food coloring
a lil coconut oil (for greasing the pan every once in a while) depending on how big you make them this yields 8-11 crepes
FOR THE CREAM:
1 ⅓ cup cashews (200g) 300g vegan cream cheese (10,6 oz) 70g powdered sugar (½ cup + ½ tbsp) a pinch of salt 2 tbsp lemon juice 3 tbsp vegan butter (measure cold, then melt) 1 ½ tsp locust bean gum (optional) a splash of non dairy milk a few drops of red food coloring (plant based) a few drops of black food coloring
1 cup + 2 Tbsp flour (145g) 2 tsp baking powder 1 Tbsp cornstarch 3-4 Tbsp sugar ⅛ tsp turmeric a pinch of black salt (optional) ¼ tsp regular salt ⅔ cup non dairy milk (160ml) ¼ cup applesauce (60ml) 2 tsp apple cider vinegar

#2 Aubergine Miso Bowl 3:00

1 cup (150g) pitted, pre-marinated olives 1 handful fresh or frozen parsley or basil 1-2 big handfuls fresh baby spinach ¼ cup (60ml) olive oil a pinch of salt 1 tbsp lemon juice, more to taste 3-4 tbsp water optional: 1 tbsp cashew butter or 2 tbsp raw or roasted cashews → serves 4 → lasts in the fridge for up to 5 days
#4 Sweet Chickpea Scramble 7:37
1-2 tbsp vegan butter ¼ cup (30g) chickpea flour 4 tbsp semolina 2 tbsp non dairy milk, 1 ½ tbsp maple syrup ½ cup hot water (125ml), more if needed optional: pinch of cinnamon and or cardamom serve with: 1 banana or a handful of berries vegan yoghurt additional syrup sesame seeds … → serves 1

½ cup (30g) soy granules ½ tsp vegetable broth powder ⅓ cup (80) hot water 1 serving grain of choice - I did (75g = 2.6oz) rice noodles 1 spring onion 200-300g (10.5oz) soft pre-pressed tofu a bit of vegetable oil for the pan 1-2 tsp spicy paste of choice* a splash of white wine (sub w 2 tsp white wine vinegar) 1 tbsp soy sauce 1-2 tsp maple syrup * If you can’t do spicy food, swap the spicy paste for tomato paste!)

#4 Rhubarb Puree
3 stalks of rhubarb, cut into 1-2 cm thick pieces 5 little sugar packets (I think that’s 1 ½ - 2 tbsp?) about ¼ cup (60ml) water, more if needed pinch of salt

fillings: (or get creative and add your own) 1 medium carrot, shredded 1-2 green onions, chopped ¼ cup (45g) olive chunks about ¼ cup (60g) smoked tofu, cut into chunks a handful of nuts and soy beans, roasted serve w fresh veggies and hummus or take on the go as is
→ yields 12 cakes → serve hummus, sesame seeds, green onion or as is bake for around 30 min 180C
#3 Savory Peanut Toast 4:07
overnight pickle: 1 medium carrot 1 medium zucchini 1 sheet of nori 1 ¼ tsp salt 1 ¼ tbsp agave syrup or sugar ⅓ - ½ cup (80ml-125ml) water ½ cup (125ml) vinegar (preferably white wine vinegar) → yields enough veggies for 3-4 toasts
for serving: 2 pieces of toast some of the overnight pickled veggies peanut butter, crunchy unsweetened sprinkle of sesame seeds
#4 Cherry Chocolate Protein Smoothie 5:22
1 ¼ cup (200g) pitted cherries, frozen ½ cup (125ml) non dairy milk 2 ½ tbsp cocoa powder pinch of salt 1 ½ tbsp almond butter or cashew butter 3 tsp agave or maple syrup 100 - 125 g (3.5 - 4.4 oz) silken tofu → yields 1 big smoothie
#5 Homemade Vegan Cheese (toast) 6:10
for the cheese: 1 cup (250ml) soy cream 1 tbsp nutritional yeast ⅓ cup (70g) white almond OR cashew butter 1 1/4 tsp salt 1 tbsp lemon juice 1 ¼ tsp miso paste ½ tsp garlic powder 2 ½ tsp agar agar powder ¼ cup (60ml) water optional:1-2 drops yellow food coloring or ¼ tsp turmeric
also: 1 10cm springform pan toast, tomatoes, basil and hummus for serving.
#6 Chai Latte Breakfast Parfaits 8:40
for the crumble part: 1 handful of cashews or almonds, roasted for about 8 min (35 - 50g) ½ cup dates (75g) ⅔ cup oats (60g) pinch of salt ½ tsp cinnamon* 2 tbsp ground flax seeds 2-5 tbsp non dairy milk, added 1 tbsp at a time - add enough until you’re happy with the consistency! *(plus optionally chai spices, like a dash of cardamom, ginger etc)
for the chai custard: 1 cup (240ml) non dairy milk 2 chai tea bags ½ cup (125ml) soy cream or coconut milk 1 ½ tbsp cornstarch ¼ cup (60ml) water 1-2 tbsp sugar or liquid sweetener
→ serves 2 → feel free to add some fruit OR swap the custard for yogurt!

for the filling: 1 onion 2 cloves garlic 450g - 500g cremini mushrooms (16 - 17.6 oz), chopped into small cubes 1 tbsp vegan butter ¼ cup white wine (60ml) (sub w 2 tbsp soy sauce or 2 tbsp worcestershire sauce) 200g frozen kale (or spinach), defrosted (or pretty much defrosted) ¼ cup vegan cream (60ml) lots of salt and pepper to taste ! optional but recommended: ½ tsp lemon zest + 1 tbsp lemon juice
→ yields 4 pies → use 4 small to medium pie pans or ramekins (10 - 15 cm, 4 - 6 inch) → serve w vegan gravy, bbq sauce, tahini, hummus, fresh veggies
#3 The Young Ladies’ Lemonade Slushies
½ tsp to 1 tsp lemon zest 45 ml fresh lemon juice (¼ cup minus 1 tbsp , or juice of 1-2 lemons) 2 tbsp agave syrup 8 - 12 ice cubes if needed: a splash of water to help blending 1-2 handfuls fresh berries optional: edible flours for decorating → yields 2-3 glasses
#4 Lemon Wedding Tea Cakes
use a small baking sheet around 29 x 33 cm in size (11 x 13 inch)
for the cake: 150 sugar (¾ cup) 125ml vegetable oil (½ cup) 3 tbsp applesauce zest of 1 lemon 3 tbsp lemon juice 1 tsp vanilla (250ml) non-dairy milk 360g all-purpose or spelt flour (3 cups) 3 tsp baking powder ¾ tsp salt if needed: 2-3 tbsp water if the batter feels a little thick
Would recommend this frosting idea here: 100g cashews, boiled for 30 min (3,5 oz = 2/3 cup) 1 Tbsp vegan butter or coconut oil 60 ml + 1 Tbsp full fat coconut milk (1/4 cup + 1 Tbsp) 2-3 Tbsp maple syrup (or more if you like) 1/2 tsp vanilla pinch of salt → blend up everything until smooth! either tamp down the ingredients as you’re blending in a blender, or scrape down the sides a few times when using a food processor
also: berries and baking decor of choice for serving
#5 Jam Sandwich Cookies
100g vegan butter at room temp! (3.5 oz or ½ cup minus 1 tbsp) 1 tsp vanilla or a few drops vanilla aroma 35g apple sauce (2 heaping tbsp) 75g sugar (⅓ cup plus 1 tbsp) 180g flour (1 ½ cups) generous pinch of salt
PLUS: 1 - 2 tbsp cornstarch for the surface (add enough until the dough is no longer super sticky, but feels easy to work with) a little flour to cover the rolling pin in just before rolling
I used an 8 cm donut cutter ; you can use a glass around the same size and then a smaller round cutout, 2 - 3 cm in size, maybe the top of a glass bottle, or go in with a knife to create the cut outs! Remember, only half the cookies need a cutout 6 heaping tsp gooseberry jam, or any other jam you prefer a little powdered sugar for serving
→ yields around 12 cookies, around 6 large sandwiches
Overall Note: As for milk, I usually go for oat or soy, one a rare day also almond milk. When foamed milk is needed I make sure it’s barista milk I’m using. When testing these, just make sure you go for products you like and enjoy.

→ serve 2 - so divide the blueberry mash, the tea and milk between 2 glasses OR just make 1 at a time :)
#6 Spiced Matcha Latte 7:46
¾ cup non dairy milk (180ml) 1 chai tea bag ½ tsp matcha powder ¼ cup hot water (60ml) optional: 1-2 tsp maple syrup
#7 Cocoa Nib Cold Brew 9:50
30g ground coffee (¼ cup plus 2 tbsp) 1 1/2 tbsp cocoa nibs 100 ml hot water* (⅓ cup plus 2 tbsp) 400ml cold water (= 14 fl oz or 1 ½ cups plus 3 tbsp) *OR: simply go with 2 cups of cold water total, experiment and see what you prefer! for serving: non-dairy milk ice optional sweetener optional dusting of cocoa powder → yields 2 cups cold brew, strain everything after at least 5 hours (up to 18 hours) then the cold brew can be kept in the fridge for a few more days
#8 Lazy Iced Mocha 11:50
⅔ cup cold brew* (160ml) ⅓ cup chocolate oat milk (80ml) ice → or whatever ratio you prefer!
For this cold brew I followed the above recipe minus cocoa nibs, and minus the “hot water” method, so I just did 30g coffee + 500ml cold water.
#1 Crunchy Tofu Wraps w Roasted Pepper Peanut Sauce 0:42
for the sauce: 2 bell peppers*, grilled from the jar 3 tbsp natural peanut butter 1 tbsp soy sauce 3 - 4 tbsp unsweetened non dairy milk spices of choice, to taste (i went for this french herb spice mix, so dried herbs + dried garlic + dried onion + a little bit of salt)
for the tofu: 200g (7oz) firm plain tofu 2 tbsp all purpose flour ¼ tsp salt other spices of choice, to taste 1 tbsp vegetable oil (get the oil nice and hot before adding the tofu!)
also for the wraps: 3 medium tortillas about ¼ iceberg lettuce, shredded a few tsp sunflower seeds fresh basil
→ yields 3 wraps
*ROAST your own peppers! lay 2 bell peppers, seeds removed and cut into strips out on a baking sheet, together with a handful of whole unpeeled garlic cloves. drizzle over 1 tbsp olive oil and add some salt. roast at 190C for 25 minutes or until lightly charred. peel the garlic and add garlic and pepper to a blender, along with all the other ingredients, PLUS 1 tbsp white wine vinegar or lemon juice and 1 tsp sesame or olive oil. The jarred peppers come in vinegar and oil, so that would be missing here :)
#2 Fancy Walnut Pasta for One 2:46
2 cloves of garlic 1 handful of walnuts, pecans, cashews or almonds 1 tbsp vegan butter 1 pinch chili flakes ¼ cup white wine (60ml) 100g (3.5oz) short cut pasta generous pinch of salt for the pasta water ⅓ cup (80ml) pasta water, or more if needed 1-2 tbsp vegan parmesan cheese (homemade or store bought) 1-2 tbsp parsley and or 2 handfuls of fresh baby spinach! salt to taste!
→ serves 1
#3 “Cheesy Bacon” Sandwich 4:11
for the carrots: 1-2 carrots, cut into ribbons ¼ cup white wine vinegar (60ml) ½ tsp salt 1-2 tsp maple syrup ⅓ - ½ cup hot water (80-125ml)
for the double layered bacon: 3-4 rice paper sheets (around 15 cm = 6inch) 1 heaping tbsp smokey vegan bbq sauce ½ tsp mustard 1 tsp olive or other veg oil 1 tsp sriracha, optional 1-2 handfuls vegan pizza cheese
for the sandwiches:
2-4 slices of bread lettuce, tomato, whatever else you got vegan sour cream, hummus, vegan mayo etc
#4 Lentil Sweet Potato Taco Chili 7:03
1 carrot 2 spring onions 1 tbsp olive oil 2 cloves garlic spices of choice, to taste (i did a few dashes of each: chili flakes, cumin, black pepper, paprika, smoke paprika) 2 tbsp tomato purée 1 tbsp soy sauce 1-2 tsp maple syrup or sugar ¾ cup passata, crushed tomatoes (180ml) 2 cups vegetable broth (500ml) 1 handful of cashews 1 small sweet potato (around 7 oz, 200g) if needed: up to 1 cup more water (250ml) salt to taste 1 14 oz (400g) can brown lentils, rinsed and drained tip: partially cover your pot when simmering, then you won’t have to add as much water in the end
#5 Homemade Tapioca 9:22
½ cup tapioca starch (60g), more if needed 3-5 tbsp of water, more if needed pinch of salt 1-2 tbsp desiccated coconut
fillings: 2-3 tbsp vegan yogurt ½ banana, handful of frozen berries

#5 Dirty Chai Cold Brew
25 g ground coffee* (¼ cup + 1 tbsp) 500ml cold water (2 cups) 2 spiced chai tea bags for serving: your fav plant milk + ice (i like ¾ coffee + ½ milk, but ½ ½ is also nice!) → 2-3 servings → after 12 hours of steeping strain the entire thing, use however much you want and then keep the rest of the strained coffee sealed in the fridge for up to a week *i know ppl say it must be coarsely ground coffee, but i honestly LOVED this with using my finely ground haha
#6 Banana Bread Oat Bars
1 3/4 + 1 tsp cup oats (175g) 1/2 tsp salt 1/2 tsp cinnamon 1/2 tsp baking powder 2 tbsp vegan vanilla protein powder (or sub w more oats, hemp seeds/powder) 3 bananas (300g peeled banana chunks) 2 1/2 tbsp sunflower oil 2 tbsp maple syrup 2 1/2 tbsp non dairy milk
1 handful of chopped walnuts and or almonds optional: ¼ cup (50g) vegan dark chocolate for melting (see recipe #8 in this description for how to melt the chocolate)
→ bake bars for 35 min → yields 1 20 x 20 cm brownie pan
#7 Crispy Brussels Sprout (wrap)
135g brussel sprouts (1 1/2 cups) ¾ cup water (180ml) 1 tbsp olive oil ½ tsp chili flakes a generous pinch of salt bagel seasoning (see recipe #1) optional: 2 cloves garlic, 1/2 tsp lemon zest)
2 tortillas 2-3 tbsp spicy hummus (see recipe 4) sriracha to taste → serves 1-2 → after rolling the wrap, i ended up toasting it in a non stick pan without oil, over medium high for about 1 min on each side)
#8 Chocolate Covered Platter
1 banana handful of raspberries small handful of salted pretzels ¼ cup (50g) vegan dark chocolate for melting 1 tsp cocoa nibs 1 tbsp chopped nuts how to melt chocolate in the oven: put the chocolate, broken into bits, into a small oven safe bowl, place into the oven @150C, bake for 4 min; then carefully take out the bowl, leave it to sit on the counter for 5 minutes, then go in with a spoon, mix until fully melted. → serves 1

#2 Overnight Green Smoothie (without bananas) 2:22
2 green apples, cut into slices 3 soft dates 1-2 tbsp lemon juice 1 handful of walnuts or 1 tbsp nut butter of choice optional: a pinch of cinnamon 1-2 cups of greens (i would recommend fresh baby spinach here; in the video i used 2 cups baby arugula - which tastes INTERESTING. Not bad, but INTERESTING, if you're new to green smoothies start off with fresh spinach for sure, add less greens in the beginning and then work your way up to adding more and to experimenting with arugula, kale etc) → serves 1-2
#3 Chickpea Hummus Wraps 4:21
1 small onion 1 celery stalk 1 small red bell pepper or lengthy pepper (what do you call the one i used lol) oil for the pan 1 small handful of black olives 1 tsp sesame seeds 1 tbsp lemon juice 1 tbsp soy sauce 1 tsp agave syrup 1 handful basil leaves (or parsley or any other herb you like or skip) ½ can chickpeas (120g = 4,2oz) 2 heaping tbsp store bought hummus IF the mixture feels a bit dry, add 1-2 tsp non dairy milk!
2 handfuls of greens (arugula, spinach) 2 medium tortillas optional: extra sauces to serve these with (or add that to the filling when wrapping these up) such as extra hummus, salsa, sriracha, vegan mayo, vegan yogurt sauce (1 heaping tbsp vegan yogurt + 1 tsp white wine vinegar + a pinch of salt)
#4 Peanut & Chocolate Nut Clusters - Mina’s Version 6:41
¼ cup smooth peanut butter (60g), preferably deep roast ¼ cup + 1 tbsp brown rice syrup* (60ml + 1 tbsp) 1 tsp vanilla ½ tsp salt 1 ¾ cup roasted, unsalted peanuts (260g) ½ cup puffed quinoa (18g) 100g or 3.5 oz of dark chocolate → yields just so many clusters, use a 20 x 20cm baking dish here! (8 x 8 inches)
For breakfast, serve some of these w vegan yogurt + banana + iced almond latte highly recommend!!
*so comparing my two batches, one using rice syrup the other agave, for some reason the rice syrup one turned out way more crunchy - probably because it is less liquid-y than agave? So i think i would recommend the rice one more

50g (1,76 oz ) glass noodles 1-2 handfuls fresh baby spinach 50g vegan kimchi (1,76 oz or ⅓ cup) 1 tbsp kimchi liquid 1 tbsp rice syrup 2 tsp soy sauce 1 ½ tbsp white wine vinegar or balsamic vinegar 1 tsp sunflower oil 1 tsp sesame seeds ¼ cup + 1 tbsp water (75ml) mixed with 1 ½ tsp cornstarch if you want more spice and flavour: add ½ tsp of gochujang (or more to taste! - or sub w sriracha!)
→ serves 1 (this tastes really nice with the vegan “chicken” from recipe #6
#2 Lazy Quick Chili 2:04

For this video, I challenged myself to recreate 1 breakfast from a different country, every day for one week straight. Recreating them to be vegan that is! So these might not always be 100% authentic all of the time (also because I improvised here and there), but super tasty ! 3 tbsp white tahini 2 ¼ tbsp unsweetened cocoa, more if needed 2 tbsp liquid sweetener (date, rice, maple syrup) 1 pinch of salt a few drops vanilla aroma (or ½ tsp vanilla extract)
1-2 tbsp cocoa powder or shredded coconut to roll your bites in, if desired
→ freeze for 10 minutes for a thick chocolate frosting / dip → freeze for at least 20 min for chocolate balls (around 30 min is best I’d say, but that depends on your freezer! 1 hour max) → store in the fridge! → yields 5 balls, serves 1 - 2
#2 Stove Top Cherry Crisp
for the topping: 1 1/2 tbsp cashew/almond butter 1 ½ tbsp vegan butter 3 tbsp coconut sugar 1 teaspoon vanilla ¼ tsp salt a handful of almonds, chopped ⅔ small cut oats (60g) 1 tbsp ground flax seeds
for the filling: 2 cups frozen cherries (300g) 1 tsp cornstarch 2 tbsp water
→ bring to a boil, then let simmer together for 10-15 min over medium heat → serve with some fruit, vegan yogurt, coconut ice cream … → serves 4 as a sauce (keeps in the fridge for 4 ish days)
#5 Beetroot Lava Cakes
1 1/2 cups spelt flour (180g) ½ cup ground almonds (55g) ½ cup coconut sugar (115g) 3 tbsp unsweetened cocoa powder 1 tsp espresso/coffee powder 1 tsp baking powder ⅓ tsp salt ⅓ cup sunflower seed oil (80ml) 100g dark chocolate, cut into chunks (3.5oz) 1 beet, pre cooked (bought it pre-cooked already) 1 ½ cups non dairy milk (375ml)
→ also oil for greasing the pans and/or muffin liners → this is a bit more effort, but, for a cleaner look I ended up first oiling the muffin molds and then laying them out with 2 (about 12 cm long) strips of parchment paper, adding them in a cross pattern to be able to lift them out easily after baking → serve them RIGHT AWAY if you want the melty lava cake experience, otherwise the centre will be still fudgy, but perhaps not liquid anymore → yields 11-12 cakes
Chocolate Melting: Either use the microwave (microwave the chocolate for 30 sec, stir the chocolate, repeat until melted) OR place the bowl inside the preheating oven for about 5 min or until about half the chocolate has been melted. Then take out the bowl carefully. Leave it on your countertop and let it sit for a few extra min, then stir until melted fully. Or use a waterbath? I always end up getting water in my chocolate then tho.
#6 Rice Paper Apple Strudel Bites
for the filling: 1 apple 2 tbsp lemon juice a dash of cinnamon a dash of cardamom a pinch of nutmeg if needed: a few tsp water
also: 5 rice paper sheets (15 cm or 5.9 inch) room temp water, enough to fill a big deep dish plate lil bit of sunflower seed oil for frying
for the sauce: 1 tbsp cashew butter ¼ tsp cinnamon a pinch of salt 1 tsp liquid sweetener 2-3 tbsp non dairy milk

350g-400g hokkaido pumpkin (½ smaller pumpkin or 12.3oz - 14.1 oz) 1 tbsp veg oil 1 onion a pinch of red pepper flakes ⅔ zucchini 2-3 cloves garlic 2 cups veggie broth 400g vegan gnocchi (14.1oz) 1 heaping tbsp hummus 2 cups veggie broth (500ml) lots of spices: couple dashes each: cumin, sweet paprika, smoked paprika, pepper, dried herbs … whatever else you want to add juice of 1 lemon a few tbsp frozen or fresh parsley, chopped optional: 2 tsp miso paste taste really good here as well sprinkle of sesame seeds for serving
→ 2-3 servings
#2 One Pot Korean Inspired Veggie Stew
210g long grain rice (1 cup)*
⅓ zucchini 150g pumpkin or carrot or (sweet) potato (5.3oz) 200g mushrooms (70z) 2-3 spring onions 2-3 cloves garlic 1 tbsp oil 2 cups veggie broth (500ml) 3 tbsp vegan kimchi 1-2 sheets of roasted seaweed 80 g semi firm tofu 1 heaping tbsp vegan fermented soybean paste (miso paste also works) 1 tsp gochujang or to taste! 1 tbsp rice vinegar 1-2 tsp agave syrup salt and spices of choice to taste sprinkle of sesame seeds → serves 3
*how I cooked the rice:
Add 1 cup of rice (210g) + 2 cups water (500ml) to a medium sized pot. Place a ventilated lid on top. Bring it up to a boil. Then reduce the heat to medium low, letting it simmer for 15-20 minutes. The water should be all evaporated by then. Take the pot off the heat. The rice can steam through for another 5 minutes or so, keeping the lid on.
#3 Cauliflower Pasta Bake
1 head of cauliflower, small to medium sized ~ 500g, cut into florets 2 1⁄2 cups veggie broth (625ml) 1 onion, chopped 2 cloves garlic, minced 1 tbsp olive oil 1 tbsp tomato purée 1 tsp agave 1⁄4 cup water (60ml) 1 cup non dairy milk (250ml) 2 1⁄2 tbsp nutritional yeast juice of 1⁄2 lemon 1 ¼ tsp salt 300-350 g small cut pasta of choice (10,58oz-12.3oz) 1⁄4 cup bread crumbs (25g)
→ serves 4
#3.5 Quick Pickled Red Onions
4 red onions, cut into rings 3 tsp maple, agave syrup or sugar 1 ¼ tsp salt ¼ cup apple cider vinegar (60ml) ½ cup white wine vinegar (125ml) 1 cup hot or room temp water (250ml) → use a heat proof glass jar that’s able to hold more than 2 cups of water (over 500ml)
#4 Crispy Potato Bowl w Tofu Tahini Dip
220g potatoes 2-3 cloves garlic 1 tbsp oil
for the sauce: 150g semi firm tofu* (5.3oz) juice of ½ lemon 1 tbsp white tahini optional: 1 tbsp nutritional yeast 1 tsp agave syrup salt, spices to taste for serving: lamb’s lettuce a few tbsp pickled onions

1 whole wheat tortilla 3-4 tbsp vegan vanilla yogurt 1 tbsp peanut butter or almond butter finish w a sprinkle of brown sugar and /or cinnamon
→ serves 1 #3 Minty Pineapple Shake
6-8 canned pineapple rings (from a 432g / 15,23oz can) ½ cup of pineapple juice from the can (125ml) about 20 fresh mint leaves the juice from 1-2 limes about 8 ice cubes
→ serves 1-2
#4 Orange Avo Combo
1 orange 1 avocado a small handful of sesame seeds perhaps a squeeze of lemon juice over everything!
→ serves 1-2
#5 Banana Chocolate Mug Cake
1 small-medium banana, fresh or frozen 2 tbsp flour 2 ½ tbsp unsweetened cocoa powder 1 tsp baking powder ¼ tsp cinnamon 2 heaping tbsp almond butter 2-3 tsp sugar 3-4 tbsp non dairy milk (start with 3, see if you need more) a handful of vegan chocolate chips 1 tsp oil for the mug (makes it easier to eat the cake later)
→ serves 1 or for 2 to share
#6 Fancy Red Beet Toast
2-4 pieces of bread 1 clove of garlic to rub the toasted bread with (optional)
1 cooked beet, cut into super thin slices vegan cream cheese a squeeze of lemon juice for each bread a light drizzle of olive oil (optional) over each bread salt, pepper to taste a sprinkle of toasted sesame or pumpkin seeds a handful of kress, herbs of choice arugula ...
→ serves 1-2
#7 Vegan Mozzarella Sticks
3 tbsp corn starch 50g tapioca starch (⅓ cup) ⅓ tsp salt ¼ tsp garlic powder 1 tbsp vegan butter 125ml non dairy milk (½ cup) 1 tbsp white wine vinegar 1-2 handfuls vegan pizza cheese (optional, but recommended)
80-120g bread crumbs* (½ - ¾ cup) a pinch of salt + if desired other spices of choice for the breadcrumbs 80ml non dairy milk, for dipping the breaded bites in (⅓ cup)
ketchup, marinara sauce, bbq sauce etc. for serving
*start with ½ cup, see if you need more as you go
→ yields 7-10 sticks, depending on their size → deep fry for 1-3 minutes until golden brown
#8 Hazelnut & Peach Iced Tea
3-5 peach tea bags 1-2 earl grey tea bags 1 litre of water, boiling (4 cups) 1 1/2 cups of ice (12 ice cubes), more if desired
1-2 handfuls of hazelnuts, peeled and roasted 2 canned peaches, cut into cubes optionally: ½ cup (125ml) of the peach juice optionally: 2 tbsp liquid sweetener of choice
→ I’d recommend to let the peach tea for 10 minutes total, but to remove the black tea after 3-5 min to prevent it tasting too bitter → I’d then let the nuts + peaches + liquids sit until fully cooled down → then remove the peaches and nuts, but keep them for a future bowl of porridge → serve strained tea with ice
