Pineapple Pizza without Pizza Stone Budding Chef Eric 2024-08-20 | Dough500g (4 cups) flour300ml warm water (1 ¼ cup)2 tsp yeast2 tsp sugar1 tsp salt1 ½ tbsp oilTomato Sauce¼ of an onion (diced finely)2 cloves garlic (crushed)2 tomatoes (grated)SaltOreganoToppings7 slices chicken brawn¼ of a pineapple 300g mozzarella cheeseInstructionsIn a large bowl, add the flour. Put the sugar and salt on one side and yeast on the other side. Mix together all the ingredientsAdd in the warm water and oil and bring the dough together. Once it forms a ball. Dump it out onto the surface and knead for 15 min until smooth ; the dough should bounce back when you press on it . Avoid adding excess flour when kneading.Coat the dough in oil and place into a bowl. COver with clingfilm and let rise for 1 hour 20min.Punch down the dough and divide into 4 piecesForm into balls. Cover with cling film and let rise for 40 min and place a chapati pan into the oven at 200℃ and also allow to heat up for 40 minFor the tomato sauce ; In a small saucepan saute onions and garlic in a little oil until fragrant. Add in the grated tomato,a pinch of salt and some water. Cover and let cook on low heat for 15 min. Then take off the heat, add a sprinkle of oregano and let coolFor the toppings : peel the pineapple, remove the core and dice into small pieces. Also cut the brawn into squares and slice/grate the cheese. Place all your toppings into the freezer (it will make your work 10 times easier)Stretch out one dough ball into a wide circle (you can use a rolling pin) The shape doesn't matter. Dimple the dough with your fingers and place onto a sheet of parchment paper.Top with the tomato sauce, cheese ,brawn and pineapple.
