I agree that the Last Word can benefit from a little tweak, but for me, the true magic lies in adding a couple of dashes of cherry bitters. We don't talk about it enough, but bitters do more than just add layers of flavor or enhance a particular note—they can also help dry out sweeter drinks. Homemade Kola Syrup Recipe
Ingredients - 300 ml Water - 1 g Kola nut - 0.5 g Cinnamon - 0.5 g Nutmeg - 0.4 g Coriander seeds - 0.4 g Ancho Chili flakes - 0.3 g Vanilla - 0.3 g Melilot (AKA Sweet Clover) - 1 g Lime zest - 0.5 g Lemon zest - 1.5 g Orange zest - 1.5 g Citric acid - 0.5 g Malic acid - 230 g Plain white sugar - 100 g Raw cane sugar - 1 Tbsp Coloring caramel* (Here's Dary video link youtube.com/watch?v=T7OvogWyMDo&t=660s)
Method 1. Grind the Spices : Using a mortar and pestle, grind the kola nut, cinnamon, nutmeg, coriander seeds, ancho chili flakes, vanilla, and melilot until they form a fine powder. 2. Prepare the Sous-Vide Bag : In a sous-vide bag, add the water, plain white sugar, raw cane sugar, citric acid, malic acid, lime zest, lemon zest, orange zest, ground spice mixture, and coloring caramel. 3. Seal and Cook : Seal the bag and cook sous-vide for 1.5 hours in a water bath heated with a thermo circulator set to 80°C. 4. Cool the Syrup : After cooking, plunge the sous-vide bag into an ice water bath until it cools down completely. 5. Strain the Syrup : Fine strain the mixture through a couple of layers of cheesecloth and bottle up the syrup. 6. Optional : For a clearer syrup, run the filtration a couple of times through the same filter, leaving the sediments in the filter each time. Enjoy your homemade kola syrup!
*How To Make Coloring Caramel (Very important to wear temperature resistant gloves because this gets very hot) Cover a saucepan bottom with a little bit of water, about 1.5 oz. Add 2 cups of sugar and cook a medium heat until it reaches 310 Fahrenheit . Don't stir too much otherwise some crystals will form. As soon as you reach the temperature, remove from heat and place the sauce pan in a larger cast iron placed on a counter heat protector. The cold temperature of the metal will help to cool down the caramel. Leave a large and long spoon in the sauce pan, long enough so it sticks out of it. Than add one cup of room temp water and immediately place a lid over the saucepan. The vapor will escape from the side because you left the spoon and thats what we want but be careful because this is hot steam. Than, once it has stopped steaming, you can stir until the caramel and water are integrated. If it's too tough, place the saucepan back over low heat and stir until it's completely mixed.
Cola Foam Recipe
Ingredients 300 ml Filtered water 60 ml Kola syrup 2 g Methyl Cellulose 0.5 g Xanthan Gum
Method Blend the Ingredients: In a blender, add the filtered water, kola syrup, methyl cellulose, and xanthan gum. Blend at high speed for 10-15 seconds until fully combined. Prepare the Cream Whipper: Pour the mixture into a 500 ml ISI cream whipper. Charge with NO2: Charge the cream whipper with a NO2 cartridge and shake it for 30 seconds. Chill the Foam: Place the cream whipper in the fridge for one hour before using.

Add the pineapple and sage, then muddle to extract the juice from the pineapple. Add the other ingredients. Fill the shaker with ice and shake 10 to 15 seconds. Fine strain in a double rocks glass filled up with ice. Garnish with a single sage leaf.

10g mint leaves 75g sugar 2g lime zest (optional) 300ml rum 5.5g citric acid 2.5g malic acid 150g filtered water
Instructions:
Prep the Mint:
Weigh 10g of mint leaves before washing them to get an accurate measurement. Infuse the Mint:
Place the mint leaves in a sealable container with 75g of sugar and 2g of lime zest (if using). Close the lid and shake for a few seconds. Let it infuse at room temperature for 2 hours, shaking occasionally. Do not infuse longer to avoid unpleasant flavors.
Add Rum:
After 2 hours, add 300ml of rum to the container. Stir briefly to start dissolving the sugar, then remove the mint leaves without removing any sugar.
Make the Acid Solution:
In another container, mix 5.5g of citric acid, 2.5g of malic acid, and 150g of filtered water. Combine this acid solution with the sweetened mint rum. Stir until everything is dissolved. If there's any undissolved sugar, rinse the container with a few spoons of the cocktail and pour it back into the mix.
Finish and Store:
Fine strain the mixture to remove any remaining solids. Bottle the mixture and store it in the fridge. It will keep for a long time if stored properly.
Notes: If you prefer using fresh lime or super juice, substitute the acid solution with 150ml of fresh lime juice.
Serving: To make a Mojito, pour 100ml of the mixture into a highball glass. Fill the glass with ice and top with 2oz of sparkling water. Cheers!

Mix all ingredients except for the coconut milk in one container. In another container, add the coconut milk and pour the cocktail mixture over it. After conducting some research, I believe these bottles date back to the 1930s based on their shape and alcohol by volume (ABV). Only one of the bottles still had a decent label, so I cleaned them and opened the one that had completely lost its label. My quest to recreate the original Brooklyn cocktail is not over, but this was the closest I've ever come. Since the Brooklyn cocktail was first created in 1910, I need to continue my search for an original bottle of Picon, which I believe had an even higher ABV than the one I obtained. If you happen to find one, please let me know; I would be immensely grateful! ;)
The dirt on the bottle made me wonder if it had been stored in good conditions, but the fact that the level of the liquid inside was barely affected by the angel's share gave me a good feeling. The cork smelled incredibly good – a mix of sweet spices, caramel, and a hint of coffee. Compared to the Picon sold nowadays, which has a much lower ABV, this bottle is drier and slightly more bitter. The orange flavor has dissipated, making room for strong caramel and toffee notes.
I enjoyed it in the Brooklyn cocktail as it develops a beautiful dry sweetness and bitterness, but the familiar orange flavor I'm used to was almost gone. Next time, I plan to add a small dash of orange bitters to compensate.
Overall, I would give this bottle a rating of 4/5 I loved it!
