Serves 5 people
Ingredients: - 1 tbsp of olive oil - 1 red onion (diced) - 200g mushrooms (sliced) - 1 red pepper (sliced) - 500g chicken breast (diced) - 1 tbsp of cajun seasoning - Salt to taste - 500g pasta - 500ml chicken stock - 100g light cream cheese - Chopped chives to garnish
Method: 1. First, heat the olive oil in a large non-stick pan. Add the red onion, mushrooms, and pepper strips and cook for a few minutes until softened. Remove from the pan and set aside.
2. Add a little more olive oil to the pan if necessary and then add your chicken pieces. Fry until completely cooked through and no longer pink, then add the veg back in along with the Cajun seasoning and salt to taste. Stir well to combine. 3. Next add the pasta and chicken stock, cover the pan, and leave to simmer for 15 minutes.
4. Stir through the cream cheese to make a thick, creamy sauce. Serve immediately with chopped chives to garnish or portion up for your lunches later in the week. Smashed it.

These bagel french toast bites tasted DELISH and made a perfect sweet snack, PLUS they contain an amazing 34g protein!!
All you need is: 1x bagel 1x egg 20g white gold whey protein 50ml almond milk 15g Myprotein hazelnut protein spread A sprinkle of icing sugar
Method: Slice your bagel in half and spread your hazelnut spread over one half then place your other half of the bagel on top. Cut into small bite size chunks and pop to the side. Grab a bowl and mix together your egg, protein powder and milk. Coat the bagel bites in the egg protein mixture. Spray a pan with fry light and fry for 5 minutes or until golden brown. Remove from the pan then sprinkle over some icing sugar and enjoy!!
