Hiiiii!! It’s been a while! My apologies for the unexpected long break. It’s been a busy summer full of traveling and family time (both of our families finally met Levi!).
I hope it’s ok that I post old footage because I’ve filmed a lot and I’d still like to share it all starting now. This vlog is about Levi’s first birthday, which was on March 9th, 2023. We decided to skip on the big birthday party (mostly because neither of our families are in Hong Kong) and have a chill day just us 3.

December was an intense month. On one hand I was mourning the unexpected loss of my Nana and on the other I was celebrating my son's first Christmas. Some of the month I spent in Canada (I didn't film), but most was spent in Hong Kong where I tried to keep things light and joyous. Recipes
Crispy Stuffed Lotus Roots
-large lotus root, peeled, washed & sliced
-12 ounces pork (or you can use chicken, turkey, fish, or vegan meat)
-2 spring onion, chopped
-1 tsp shaoxing wine
-1 tsp soy sauce
-1/2 tsp sugar
-1 tsp corn starch (plus more to sprinkle)
-pinch of salt & white pepper

Instructions
-peel, wash, and slice (~1cm thick) the lotus root
-place lotus root in a bowl with cold water to remove some of the starch
-place minced meat in a bowl, add the shoaling wine, soy sauce, sugar, corn starch, salt & white pepper and stir until the mixture becomes sticky, then add in the green onion and mix
-dry, then sprinkle some corn starch on the lotus root
-add the minced meat mixture to one side of the lotus root then cover with another lotus root so it looks like a sandwich
-shallow fry in cooking oil until golden brown (~4 min), then flip and repeat
-place on a paper towel to absorb some of the oil

Chinese Pumpkin Rice
-2 cups of long-grain white rice (we used Jasmine)
-8 large dried shiitake mushrooms, soaked in 1.5 cups of hot water for at least 4 hours (keep the water)
-250ml of chicken broth
-350g boneless, skinless chicken thighs
-400g pumpkin, cut into cubes (not too small or they will disintegrate)
-optional: shallots, thinly sliced

Marinade for Chicken
-1 tbsp light soy sauce
-1/2 tbsp dark soy sauce
-1/2 tsp sugar
-1 tbsp Shaoxing wine
-1 tsp of fresh grate ginger
-5 garlic cloves, minced
-1 tbsp oyster sauce
-1/2 tbsp salt
-pinch of white pepper

Instructions:
-Marinate the chicken
-Rinse the rice and place in rice cooker
-add 250 ml chicken broth
-add ~1 cup dried mushroom water (until you get to 2 cups of liquid inside of the rice cooker)
-over medium heat, fry the chicken (with the marinate, garlic, & ginger) in a bit of cooking oil until it is 70% cooked
-add it to the rice cooker
-add the mushrooms and pumpkin and cook on the ‘casserole’ setting (~1 hour)
-gently fluff the rice and taste (you can add more seasonings here if needed)
-keep rice on the “stay warm” mode
-option: fry some shallots until crispy to place on top

Join me as I navigate postpartum, the Chinese confinement way with my pui yuet (Confinement Nanny), Carol. These practices are all about taking time to rest and recover a women's body after pregnancy, labour, and childbirth so that the mother has her health and strength to take care of the baby/family in the longterm. In this video we'll explore what "sitting the month" is and how it's modernized, the health benefits, and what life was like living with a Confinement Nanny.

*a little disclaimer.. this is what I chose to do personally, I’m not saying it’s the best way to do things or that you should do it too. Similarly to pregnancy and childbirth, there are many ways to do postpartum possibly connected to science, or culture or tradition with many different services and practices to partake in globally. Oatmeal Cookie Recipe
Ingredients:
-1 cup of oats (quick cooking)
-1 ripe banana, mashed
-2 tbsp of nut butter
(or apple sauce, or coconut oil)
-2 tbsp maple syrup (not shown)
-pinch of salt
-pinch of cinnamon
-splash vanilla extra (optional)
-toppings (chocolate chips or
raisins are really good)

Bake at 180C or 350F for 12-15min
*let them cool for 10 min before eating

Turkey Recipe: tasty.co/recipe/how-to-roast-a-thanksgiving-turkey

Turkey Soup Recipe
Ingredients
Broth:
Leftover turkey bones
Cold Water (about 1 inch above turkey)
1 carrot, roughly chopped
1 Celery, roughly chopped
2 Leafs
3 sprigs of Parsley
1 tsp dried Thyme
Salt, Cracked Black Pepper

Method: Bring everything to a boil them lower heat and simmer for a minimum of 4 hours (I did 6. my Grandma does overnight)
Strain the broth.

Soup:
1.5 cups of carrot, peeled and chopped (not the ones cooked in broth the flavour is gone)
1.5 cups of celery, peeled and chopped (not the ones cooked in broth the flavour is gone)
1 tbsp butter
2 garlic cloves, minced
1 tsp dried sage
3 tbsp chopped parsley leaves
1 bouillon cube (if needed)
1 tbsp fish sauce
1/4 lemon (if needed, it brightens the flavour)
Leftover turkey meat
noodles (optional)

Method:
Add the butter to a frying pan over medium heat and when the butter is melted sauté the celery and carrot for 10 minutes. Add the garlic and sauté for another minute.
Add the celery/carrot/garlic to your broth. Put in the sage, parsley leaves, bouillon cube (if needed), and the fish sauce. Taste. Add lemon if needed. Play with the flavour until the broth is to your liking.
Add the leftover turkey.
Add the noodles (cook to the time on the package, I like them a soft not al dente for soup)

Here is episode 3! I think half of you know what's about to happen (since I opened up a little mid last year) and the other half are thinking my happy ending (or beginning I guess?) starts here. If there's one thing this past few years has taught me, both with infertility and the pandemic, is that no matter how much we want and wish and plan and try...some things are just out of our control, or maybe it's just not the right time yet. But we can't give up! So our journey continues!!
Side note: If you're going through IVF try your hardest not to test at home (even though it sucks because you want to just be happy and celebrate at home like most 'normal pregnancies' you see) because you can get a false positive test or false negative test for several reasons. Just be aware of that!

It's that time again! I've procrastinated long enough and it's now time to get organized and dress seasonally appropriate. I miss faux leather already :( .
