TERIYAKI SAUCE INGREDIENTS:
1/4 cup soy sauce
1 tsp dark soy sauce
1/4 cup maple syrup
2 tbsp apple cider vinegar
1 tsp toasted sesame oil
1 tsp garlic powder
1 tsp ginger powder
1 tsp potato starch
1-2 tsp water

TERIYAKI SAUCE DIRECTIONS:
1. Heat up a small sauce pan on medium heat. Add all of the teriyaki sauce ingredients minus the potato starch and water. Whisk to combine and let it cook for a few minutes
2. Make a slurry by combining the potato starch and water together. Then, stir it into the saucepan
3. Let the sauce come to a boil, then turn the heat off

WONTON STYLE NACHOS INGREDIENTS:
400g dumpling wrappers
drizzle of avocado oil
pepper to taste
175g extra firm tofu
1 tbsp chili oil (youtu.be/IkBWsfsEVkM)
2 tsp soy sauce
2 tsp dark soy sauce
1 cup plantbased cheese (violife in this episode)
1/4 red onion
1/4 red bell pepper
3 sticks green onions
1 tbsp white sesame seeds
drizzle of spicy mayo (plantbased mayo + sriracha)

WONTON STYLE NACHOS DIRECTIONS:
1. Preheat the oven to 375F
2. Cut the dumpling wrappers into quarters and place into a mixing bowl. Drizzle in some avocado oil and mix to coat. Then, spread onto a baking tray and season with some pepper to taste. Bake in the oven for 15-18min
3. Pat dry the extra firm tofu with a paper towel and place into a bowl. Crumble the tofu with a fork
4. Heat up a nonstick pan to medium heat. Add the chili oil followed by the tofu. Sauté for 3-4min. Add the soy sauce and dark soy sauce. Sauté for a few more minutes. Then, set aside
5. When the chips are crispy, take them out of the oven and sprinkle over the crumbled tofu, plantbased cheese, thinly sliced red onion, red bell pepper, and the chopped green parts of the green onions
6. Broil the nachos on low for 3-4min (be sure to keep an eye on them so that they don't burn)
7. Sprinkle over some white sesame seeds. Drizzle over some spicy mayo and the teriyaki sauce to serve
