The Texas State Fair is the largest fair in America, with over 2.3 million folks lining up to hear cowboy Big Tex, win stuffed animals in the bottle toss, and taste deep-fried delicacies. It's on the Midway where we met Chef Cassy: a restaurant owner, foster mother to children with special needs, and the inventive mind behind deep-fried collard greens, one of the State Fair of Texas' most memorable Southern food creations.
At age 40, Chef Cassy's daughter inspired her to attend culinary school, a reminder that no one is too old to pursue their dreams. After losing her daughter, she opened Chef Cassy's Kitchen alongside her pitmaster husband. She does more than serve Southern comfort food here... Chef Cassy lovingly feeds the spirit of her daughter every day.
