This was done using a Wii remote + Nunchuck, Windows 10, GlovePIE, and a custom script. It's not reliable enough for me to recommend using this control set over any of the built-in options, but you can try it, or maybe improve my code.
I had Nunchuck Z-button mapped to "Beat", A to Grab Wheel, B to Tap Wheel.
The script even makes the wiimote vibrate when you press A, B, or Z for nice feedback.
I left it so you have to hold the wheel to spin it because it felt more satisfying on Wiimote.
