I took home one of our college physics demos to show my wife!

EXPLANATION:
When photons from the laser strike special molecules in the paint, electrons in those molecules are promoted to higher energy levels.
As the electrons tumble back down to their original energy level, they emit photons.
The electrons do not jump down instantaneously and there are many intermediary levels to land at on the way down.
For this reason it takes about 5 minutes for all electrons to return to their original energy level and the "writing" to fade.
