The holidays don't have to sneak up on you — not if your freezer is already stocked with pie dough. In this video I'm showing you my cream cheese pie dough, why it's more forgiving than a standard all-butter crust, and four different ways to freeze it depending on how much prep work you want to do now versus later. Raw pucks, rolled flat between parchment, fitted and docked in the pan, or fully par-baked and ready to fill — every option gets you closer to a finished pie with less work on the day you actually need it. And then we're going to fill one of those shells with a Marlborough pie — a traditional English apple custard pie from the 1800s that most people have never heard of and absolutely everyone should try.
