In Deltarune, there are a few obvious suspects for the Roaring Knight. Carol is pretty high up there, but the Roaring Knight turns shows off the baseball bat before the fight, strongly indicating that it's Dess, which is what my logical brain tells me they are. However I really want it to be Papyrus, since he wears an Earthbound "Starman" costume in Undertale, the bat can be an Earthbound reference on it's own, not to mention the Roaring Knight's Special Attack containing stars from PK Starstorm in Earthbound. Which if you recall, we never get to see the fabled Papyrus special attack in Undertale.
