![Vegan Mac and Cheese with Acorn Squash
Holy this stuff is amazing. Were making a healthy yet absolutely delicious plant based version of Cheese Pasta or Mac and Cheese with a bit of inspiration from Corrines Nanny on the Bachelor.. (Dont watch but gf does..) 😪 We use some awesome ingredients including Acorn Squash, and keep it super cheap as per usual. Looking at about $2.75 per serving here. Im loving these vegan and vegetarian recipes.
Recipe:
1 Acorn Squash (Quartered)
3 tbsp of Olive Oil
1 tsp of Salt
1 Medium Onion (chopped)
1/2 cup of Almond Milk [or Coconut]
1 tsp of Garlic Powder
3 tbsp of Nutritional Yeats
2 tbsp of Miso Paste
2 cups of Pasta
Instructions
1. Preheat oven to 400 degrees, and drizzle 2 tbsp of Olive Oil over Acorn Squash on a cast iron or baking sheet, and bake for 35 minutes till soft. Can flip onto sides to add color. Remove Acorn Squash from oven and carefully peel skin off when soft. Chop into smaller pieces (Cast iron lets you save on washing additional pan) [Alternatively, you can skip this step, peel the raw squash and fry it with onions till soft].
2. In a large pot preheat a pot of salted water. In a large pan on medium-high heat, add remaining oil, and fry onions till they start to brown. Add Squash and continue to cook down till soft. Add a bit of water if it starts to stick. Add garlic powder, almond milk, nutritional yeast, and Miso paste.
3. Cook pasta in pot of water till al dente, drain pasta but leave about 1/2 cup of salted starchy water in pot, and add to the sauce. Mix till some of the water evaporates, garnish with fresh herbs, and youre ready to serve.
