RECIPES
PRE-BREAKFAST - Ginger & Lemon Shot:
1 large thumb-sized piece fresh ginger, juiced
Juice of 1/2 lemon
Mix the two ingredients together and down like a shot!

BREAKFAST - Homemade baked beans, onion, tomato & mushroom scramble, 1/2 sliced avocado:

Slice 1 onion, chop 1 tomato and 5 button mushrooms. Place in a frying pan with olive oil and sauté until soft. Season with salt and pepper.

LUNCH - Crispy, Crushed Potato Salad with Avo-naise Dressing: (Inspiration here: bit.ly/1N3ioUG)
Place 4 small-medium potatoes in a pan of hot water and boil for 20 minutes until soft. Drain the water, place the potatoes on a lined baking tray and using the bottom of the pan, smash them flat. Drizzle with olive oil and season with salt and pepper then place in the oven on 180 degrees celsius for 20 minutes or until crispy. Serve on a bed of shredded lettuce. To make the Avo-naise, blend 1 avocado, 2 cloves garlic, juice of 1/2 lemon, olive oil, salt and pepper in a food processor until smooth. Add the dressing to the potatoes and garnish with fresh, chopped parsley.

JUICE - Carrot, Apple & Pear:
Place 2 carrots, 1 green apple, 1 red apple and 2 pears through a juicer.

SNACK - Rosemary and Lemon Olives:
Place a large handful of jarred olives in a dish, squeeze over the juice of 1/2 lemon and season with dried rosemary and black pepper.

DINNER - Vegetable Stir Fry and Chinese 5 Spice Rice (Serves 2):
Slice 1 white onion and fry in a pan with 1 tsp coconut oil. Mince 2 cloves garlic and add to the pan. Finely chop or grate 1 thumb-sized piece fresh ginger and one whole red chilli and add to the pan with the onions and garlic. Slice 2 green peppers, 2 carrots and a large handful of button mushrooms and add to the pan. Stir fry for around 15 minutes on a medium heat before adding in 2 large handfuls of bean sprouts, a tin of baby corn and a splash of Tamari. For the rice, finely chop 1 white onion, fry in a pan with olive oil until soft and then add 1 tbsp Chinese 5 Spice. Make sure the onions are coated in the seasoning before adding in 1 mug drained brown rice and 1 mug vegetable stock. Boil until the rice is cooked and the liquid has gone. Toast a small handful of sesame seeds and cashew nuts under the grill, serve the rice and stir fry and garnish with the toasted seeds and nuts.

DESSERT - Sharing Cookie with Vanillia Nice-cream (Serves 2):
To make the cookie, blend 1 mug oats into a flour using a food processor. Add in 2 tbsp raw cacao powder, 2 tbsp cacao nibs, 1 tsp almond butter, a pinch of pink Himalayan salt, 1 tbsp coconut oil and 4 tbsp honey (or agave nectar). Blend and add in 1 tbsp water so the mixture sticks. Line an oven dish with a little coconut oil and press the cookie mix into it, place it in the oven on 180 degrees celsius and bake for 15 minutes until warm. For the vanilla nice-cream, blend 1 frozen chopped banana per person in a food processor and add in 1 tbsp vanilla extract. Serve on top of the cookie and sprinkle on another 2 tbsp cacao nibs.
