BBQ Sandwiches with Millet Patties
INGREDIENTS
For the patties…
2 medium sweet potatoes
2 c. millet
1 tbsp ground flax seeds
1 tbsp chickpea flour
½ red onion, diced
1 red bell pepper
1 tbsp cumin
1 tbsp garlic powder
2 tsp onion powder
2 cans black beans, drained and rinsed
½ bunch of cilantro, chopped
For everything else…
Buns
Avocado slices
Sliced red onion
BBQ sauce
Cashew cream sauce
Arugula
Tomato slices
Pineapple rings
METHOD
1. Bake your sweet potatoes at 425 degrees F for about an hour, or until soft and fork tender. (This can be done the day before to prep. Or you can peel and boil them.)
2. Preheat or leave your oven at 425 degrees F and prepare two baking trays with parchment paper.
3. Cook the millet according to the package and set aside.
4. In a large bowl, combine the cooked millet and peeled, cooked sweet potatoes along with the rest of the patty ingredients. Stir until well combined.
5. Using your hands, form patties and squeeze them into shape. Place them on the trays and bake for 30 minutes or until they easily lift from the paper, then flip the patties and bake for another 10. You want them to stay together well and be nice and crispy.
6. Serve the patties on buns or bread with avocado slices, sliced red onion, BBQ sauce, cashew cream sauce, arugula, tomato slices, and pineapple rings. Lots of options for toppings here!
