Breakfast Scramble:
INGREDIENTS (serves 4):
2 tbsp oil (for the griddle)
3 cups frozen diced red skin potatoes
1/2 lb breakfast sausage (or bacon or chorizo)
1 small white onion, diced
6 large eggs
1/4 cup shredded cheese, your favorite
4 oz diced green chilies (canned)
4 large flour tortillas (optional, for burritos)
Hot sauce, for serving (optional)
INSTRUCTIONS:
Heat oil on the griddle over medium-high heat. Spread the potatoes out in a single layer so they arent touching. Let cook undisturbed a few minutes before flipping.
Add the sausage to another area of the griddle. Cook a few minutes, then flip and break it up into crumbles.
Mix in the diced onion (feel free to toss some in with the potatoes too). Cook until softened and sausage is browned.
Push the sausage and onions into a ring to make a well in the middle. Turn off the burner or move to a cooler spot — residual heat will finish the eggs without burning them. Add a little oil if needed.
Crack the eggs into the well. Let them set up slightly, then scramble together with the sausage and onions.
Sprinkle in the cheese and mix until melted. Stir in the green chilies for a kick.
Wrap it all in a tortilla burrito-style with potatoes on the side, or mix everything together and eat as a bowl. Top with hot sauce to taste.
Quesadilla:
1 chicken breast diced
2 slices of bacon diced
Sliced onion
Sliced mushroom
10 inch tortillas
Shredded Mexican cheese
Honey mustard

Heat griddle to 375 F (191 C) and spread a thin layer of oil.
Place chicken breast and bacon on the griddle. Sometimes I use rotisserie chicken if Im feeling lazy.
Place all the veggies on the griddle and begin to sautee them with the meat.
After about 10 minutes, when your meat and veggies are all cooked, add some more oil and place down your tortillas.
Fill each tortilla with cheese, then add the meat and veggies to one of them.
Drizzle it with some honey mustard, then place the other tortilla on top to make your quesadilla.
It should only take a few minutes for the quesadilla to get brown.
Cut your quesadilla in quarters, add some sour crea, salsa, and a margarita!
