WHAT DOES AN ENGLISH FOOTBALL SUMMER TASTE LIKE? 🏴 ⚽🍦
When you think of an English summer, you think of Wimbledon - strawberries and cream.
But for millions of us, an English summer means something else this year …
Football.
The World Cup.
The hope.
The heartbreak.
The memories.
And that got me thinking what does that taste like? So I made….
🏴Clotted Cream Raspberry Ripple Ice Cream🏴
Red and white.
Just like the shirt.
Just like the flag.
Filled with Ripples this England team could send through the world.

INGREDIENTS
For the Ice Cream Base:
• 350ml whole milk
• 250ml double cream
• 250g clotted cream
• 5 egg yolks
• 110g caster sugar
• 1 vanilla pod (or 1 tsp vanilla paste)
• 1 tbsp golden syrup
• Pinch of sea salt
• 20g skimmed milk powder (optional)
For the Raspberry Ripple:
• 300g raspberries
• 70–80g caster sugar
• 1 tsp lemon juice

METHOD
Raspberry Ripple:
1. Add raspberries, sugar and lemon juice to a saucepan.
2. Cook gently for 8–10 minutes until syrupy.
3. Push through a sieve to remove the seeds.
4. Chill completely before using.
Chef Tip:
You want the raspberry bright and sharp, not jammy.

Ice Cream Base:
1. Heat the milk, cream and vanilla until steaming.
2. Whisk egg yolks and sugar together.
3. Slowly add the hot dairy while whisking.
4. Return to the pan and cook gently until it coats the back of a spoon (around 82–84°C).
5. Remove from heat.
6. Whisk in clotted cream, golden syrup, salt and milk powder.
7. Chill overnight.
Chef Tip:
Patience is an ingredient. The best ice cream isn’t rushed.

Churn:
1. Churn in an ice cream machine until soft-serve consistency.
No machine?
Get it into a freezer-safe container and stir every 45 minutes for 3–4 hours.

Ripple:
1. Layer ice cream and raspberry sauce into a container.
2. Gently swirl with a knife.
Remember:
Ribbons like winners.
Not pink ice cream.
Freeze for 4 hours before serving.
