Cranberry Orange Muffins:
2 cups flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup cranberries
1 egg
3/4 cup orange juice
1/4 cup melted coconut oil
1 teaspoon grated orange zest
Preheat oven to 400 degrees. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Stir in cranberries. In a small bowl, beat egg, orange juice, coconut oil, and orange zest. Add wet mixture to dry ingredients. Stir to combine until just moistened. Spoon mixture into muffin pans with liners. Bake for 15-20 minutes or until lightly browned.
