Recipes:
Roasted veggie & risoni pasta
- Preheat oven to 200 degrees c.
- Chop 1 sweet potato into chunks, slice 1 red onion and cut in half 1 bag of brussels spouts.
- Add veggies to a baking tray, spray with oil, and add salt to season.
- Roast veggies in the oven for 20-30 mins.
- Boil 2 cups of water with salt in sauce pan.
- Once water has reached the boil, reduce the heat to simmer and add 1 cup of of risoni (orzo) pasta.
- Let the risoni pasta cook for 20 mins, stir occasionally so it doesn't stick.
- For the dressing, add ¼ cup extra-virgin olive oil, 1 tablespoon plus 1 teaspoon rice vine vinegar, 1 tablespoon maple syrup, ¼ teaspoon dried basil, ¼ teaspoon dried oregano, 1tsp crushed garlic,
salt and pepper to taste.
Once the pasta and veggies have finished cooking, add to a bowl and mix in the dressing.
One pan chicken fajitas
- Preheat oven to 200 degrees c
- Chop 1 red, 1 yellow & 1 green capsicum into strips
- Slice 1 red onion
- Combine capsicums & onion into a bowl with a drizzle of olive oil & 1/3 of the fajita spice mix
- Chop 600g of chicken breast into bit sizes pieces
- Add into a bowl with a drizzle of olive oil & 1/3 of the fajita spice mix
- Line a baking tray and add the capsicums, onion, and chicken. Before putting the tray in the oven, sprinkle the remainder of the fajita spice mix over everything.
- Cook for 20 mins
- Once cooked, add coriander to the mix
- Microwave tortillas and serve!
