Carrot Cake Recipe: (I cut this in half)
4 eggs
1 cup brown sugar
1/2 cup apple sauce
1 cup white sugar
3/4 cup olive oil
splash of vanilla

2 cups flour
2 tsp. baking powder
2 tsp baking soda
pinch of salt
1 tbs cinnamon
2-3 cups shredded carrots
bake at 350 degrees F for 35 minutes

Cream Cheese Frosting:
1/3 cup butter
8 ounces cream cheese
3 cups confectioners sugar
