In this Vlog we go behind the scenes as I cook for my staff Christmas party. This is a simple broccoli dish that was scrummy incorporating a momo-style dressing.

ROUGH RECIPE
Broccoli (2 kg)
DRESSING
Tomato (5)
Garlic Ginger paste (equal parts garlic and ginger blended with samll amount of oil) (2tbsp)
Dried red chillies (5)
Neutral oil (5 tbsp)
Black mustard seeds (1tbsp)
Curry leaves (handful)
Sichuan peppercorns (handful)
Good quality Vinegar (1-2 tsp)
Sugar
Salt
Nigella seeds (1 tbsp)
PANGRATTATO
Fresh Curry leaves (handful)
Neutral Oil (5 tbsp)
Panko breadcrumbs
Salt
1. Boil tomatoes and chilli peppers in water for 15 minutes
2. When cool peel tomatoes and add to blender
3. Add the cooked red chillies (you can start with 3 and add more if it is not too spicy)
4. Add Ginger Garlic paste.
5. Blitz.
6. In a frying pan add oil.
7. When hot add curry leaves, mustard seeds and sichuan peppercorns.
8. When they start popping turn down heat and let the spices infuse for 10 minutes on low.
9. Allow oil to cool then pour through a filter to throw awa the aromatics.
10. Add enough oil to the tomatoes to make a dressing consistency.
11. Season with vinegar, sugar and salt until there is a good balance.
12. Add Nigella seeds.
13. Wash and cut the broccoli.
14. Season with oil and toss in some oil.
15. Lay broccoli in one layer on baking tray and put in a hot oven (200c/300F) for 15 minutes.
16. Allow broccoli to cool to room temperature.
17. Mix with momo dressing so all broccoli is coated nicely.
18. Make a curry leaf infused oil by adding oil to a frying pan and frying curry leaves for 10 minutes.
19. Filter oil and save the crispy curry leaves.
20. Use the oil to fry panko breadcrumbs until golden (if you are making a lot of breadcrumbs, then use just enough oil for each round of frying rather than using it all for the first fry)
21. Season breadcrumbs with salt and mix in the fried curry leaves.
Serve broccoli and sprinkle a generous amount of the curry leaf pangrattato on top.
